1 small bunch fresh thyme

SALMON WITH CHERMOULA SAUCE AND COUSCOUS

Salmon with Chermoula Sauce and Couscous image

What better way to use up cilantro and parsley in the fridge, than making a spiced and flavorful herbaceous sauce! This Moroccan sauce gets paired with earthy spices like cumin and coriander, making it an easy go-to coating and marinade for many proteins. In this recipe, it's pulsed in a food processor and gets spooned over salmon filets. This chermoula also calls for adding juice of lemon and the zest, but you can try it with preserved lemons for a nice relish.

Time 30m

Yield 4 servings

Number Of Ingredients 12

1/2 cup packed fresh cilantro
1/4 cup packed fresh parsley leaves, plus 2 tablespoons chopped
2 cloves garlic
2 teaspoons ground cumin
2 teaspoons ground coriander
Finely grated zest and juice of 1 lemon, plus wedges for serving
6 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1/2 small zucchini, finely chopped
2 teaspoons spicy harissa sauce (such as Mina)
1 cup couscous
4 5-ounce salmon fillets (about 1 inch thick)

Steps:

  • Make the chermoula: Combine the cilantro, 1/4 cup parsley leaves, the garlic, 1 teaspoon cumin, 1 teaspoon coriander and the lemon zest and juice in a food processor. Pulse until finely chopped. While the machine is running, slowly drizzle in 1/4 cup olive oil and process until smooth. Season with salt and pepper.
  • Meanwhile, heat a saucepan over medium-high heat. Add 1 tablespoon olive oil and the zucchini and cook, stirring, until crisp-tender, 1 minute. Add the harissa, 1 1/4 cups water and a big pinch of salt and bring to a boil. Stir in the couscous, then cover, remove from the heat and wait 5 minutes; fluff with a fork. Stir in the 2 tablespoons chopped parsley; season with salt.
  • Season the salmon with the remaining 1 teaspoon each cumin and coriander and a few pinches each of salt and pepper. Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the salmon and cook until browned, 3 to 4 minutes per side. Divide among plates and top with the chermoula. Serve with the couscous and lemon wedges.

Provided by Food Network

Yield 4 servings

Number Of Ingredients 16

5 cups olive oil
2 heads ginger, smashed
1 head garlic, smashed
1 bunch scallions, slivered
4 6-ounce pieces salmon
2 cups Japanese rice, steamed
3/4 cup mirin
2 scallions, slivered
1/2 cup dried cherries
1/2 cup dried blueberries
1 sheet nori, crumbled
1/2 cup lemon juice
1/2 cup fish stock
1/4 cup ice wine (from British Columbia)
3/4 cup grapeseed oil
1/2 cup air-dried corn

Steps:

  • In a saucepan, bring the olive oil up to 160 degrees. Add the smashed ginger, garlic and scallions. Take the mixture off the heat and allow it to infuse for 2 hours. Strain.
  • Steam the rice and then season with the mirin. Once cooled, mix in the slivered scallions, dried in a saucepan. Bring the olive oil up to 160 degrees. Add the smashed ginger, garlic and scallions. Take the berries and seaweed.
  • To make the sauce, bring the lemon juice, fish stock and ice wine to a boil. Remove from heat and blend in the grapeseed oil. Season with salt and pepper.
  • To poach the fish, bring the poaching oil up to about 160 degrees in a deep saucepan. Season the salmon with salt and pepper and gently immerse the entire piece of fish in the oil. Allow to poach gently for about 5 minutes or until rare-medium.
  • To Plate: While the fish is cooking, place rice salad on plate and drizzle with lemon sauce. Put poached fish on rice salad when it's done being poached.

Salmon Fillets Poached in Olive Oil image

Olive-oil poached salmon are served over lemony pea stew with pistachios, and a celery-root puree.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes     Salmon Recipes

Number Of Ingredients 9

6 cups olive oil, preferably extra-virgin
1 sprig fresh thyme
1 garlic clove
4 center-cut salmon fillets (3 ounces and 1 1/2 inches thick each), skinned
Coarse salt and freshly ground white pepper
Pea Stew with Pistachios and Lemon Confit
Fleur de sel (or other coarse salt)
Coarsely chopped shelled unsalted pistachios, for garnish
Lemon Confit for Pea Stew (optional)

Steps:

  • Heat oil in an 8-quart heavy-bottomed pot over low heat until it registers 140 degrees on a deep-fry thermometer. Add thyme and garlic to oil.
  • Season fillets with salt and pepper. Carefully add to oil; cook 5 minutes. (Adjust heat as necessary to keep oil temperature at 140 degrees.) Flip; cook 5 minutes (for rare) or 7 minutes (for medium-rare). Transfer to paper towels; pat dry.
  • Divide pea stew among bowls; place 1 fillet in center of each. Season with fleur de sel (or other coarse salt). Garnish with nuts, and with lemon confit if desired.

OLIVE OIL-POACHED SALMON

Olive Oil-Poached Salmon image

Provided by Julia Moskin

Categories     dinner, main course

Time 40m

Yield 4 servings

Number Of Ingredients 9

10 sprigs fresh thyme
1 large sprig fresh rosemary
2 cloves garlic, peeled and lightly crushed
About 3 cups olive oil, more to cover fish
2 pounds salmon fillet, cut into 4 pieces, at room temperature
2 lemons, one cut into wedges for garnish
Salt
black pepper to taste
Minced parsley, chives or another fresh herb, for garnish

Steps:

  • Combine thyme, rosemary, garlic and oil in a pot just wide enough to hold fish in a single layer without touching. (When fish is added, oil should cover it, so it is better to use more oil than not enough.) Peel 1 lemon, using a vegetable peeler to remove yellow part only, in strips. Add peel to oil. Season fish on both sides with salt and pepper.
  • Fit skillet with a deep-frying thermometer and heat oil to 180 degrees over medium-low heat. Reduce heat and monitor temperature, adjusting until temperature is a stable 180, with small bubbles occasionally rising to surface.
  • When temperature is stable, add fish. Oil temperature will drop, so raise heat slightly (never above medium-low) just until it reaches 180 again; then reduce.
  • Cook fish 13 to 15 minutes, until top is completely opaque and flakes easily with a fork. Remove to a plate lined with paper towels, let drain. Place on serving platter, sprinkle with herbs, and serve immediately with lemon wedges.

  • Prepare the salmon for poaching. Place the salmon in a baking dish that's approximately 9 x 13 x 2 inches -- one that will hold the fish in one layer. Pour in the oil, just to cover the fish. This may be a bit more or less than 2 cups. Sprinkle with salt and pepper and add a few sprigs of fresh herbs.
  • Poach the salmon. Place the pan in the preheated 225°F oven and poach just until it's cooked through, about 16 minutes.
  • Garnish and adjust the seasonings. Use a slotted spatula to remove the salmon from the oil and place it on a serving platter. Garnish with fresh lemon slices and herbs, and sprinkle with a bit more salt and pepper. Serve warm or cold.
