3 garlic cloves
1 (6 ounce) can pitted black olives
1 tablespoon flat leaf parsley, coarsely chopped
1 cup mayonnaise
1/4 teaspoon fresh lemon juice (optional)
1/2 teaspoon salt
1/4 cup extra virgin olive oil

Steps:

  • Place the garlic cloves into the bowl of a food processor and pulse until finely chopped.
  • Add the olives and parsley and pulse again until the mix is almost a puree.
  • Add the mayonnaise, lemon juice(if using) and salt and pulse until just combined.
  • With the processor running, add the olive oil in a stream.
  • Pour into a bowl and chill until ready to use.
  • Great served with sandwiches, over toast, flatbread, pita chips, etc.

TEN-LAYER CHICAGO DOG DIP

Grab a plate, scoop and then dip. All the usual suspects on a Chicago dog are found in this crowd-pleasing layered dip. If you can't find sport peppers in your area, try pepperoncinis instead. Make the day before and refrigerate to save time on game day.

10 all-beef hot dogs (about 1 pound)
1 tablespoon vegetable oil
1 large white onion, chopped
1 clove garlic, chopped
3 hot dog buns
1 cup mayonnaise
1 tablespoon poppy seeds
1 English cucumber, cut into small pieces
1 teaspoon celery salt
3 medium tomatoes, chopped
1 1/2 cups chopped sport peppers or pepperoncini (about 5 1/2 ounces)
One 14-ounce container yellow mustard
1 1/2 cups chopped dill pickles (about 10 spears)
1 cup sweet pickle relish
Potato chips, for serving

Steps:

  • Put the hot dogs in a food processor and pulse until coarsely chopped. Heat the oil in a large nonstick skillet over medium-high heat, add a third of the onions and cook, stirring, until soft and slightly golden brown, about 4 minutes. Add the garlic and stir for 30 seconds. Add the chopped hot dog and cook, stirring occasionally, until lightly golden brown, about 5 minutes. Remove from the heat and let cool completely.
  • Preheat the broiler. Open the buns and arrange on a baking sheet. Broil until toasted on each side, 1 to 2 minutes per side. Cut into small pieces.
  • Whisk together the mayonnaise and poppy seeds in a small bowl. Toss the cucumber and celery salt together in a small bowl.
  • Layer the dip in a medium, 3-quart glass trifle bowl or your favorite small serving dish. Spread out the tomatoes on the bottom, then top, in even layers, with the peppers, toasted buns, a generous drizzle of mustard, the remaining onions, the hot dog mixture, the pickles, poppy seed sauce, relish and cucumber. Wrap and refrigerate until chilled, at least 1 hour or overnight. Garnish with another drizzle of mustard and serve with potato chips.

1 cup store-bought corn tortilla chips
Nonstick cooking spray
2 tablespoons store-bought chili-lime powder (recommended: Tajin)
Olive oil
1/2 onion, thinly sliced
4 strips bacon, chopped
1 tablespoon soy sauce
1 tablespoon lime juice (from 1 lime)
1/4 teaspoon Worcestershire sauce
8 beef hot dogs, preferably organic
Mayonnaise, for serving
8 hot dog buns
Ketchup, for serving
Mustard, for serving

Steps:

  • For the spicy chips: Preheat the oven to 350 F.
  • Spray the tortilla chips with nonstick cooking spray. Sprinkle with the chili-lime powder and toss to combine. Transfer the chips to a baking sheet and bake for 6 minutes.
  • For the hot dogs: Heat a medium, heavy skillet over medium-high heat. Add the bacon and cook until all the fat has rendered, about 5 minutes. Add the onions and cook until translucent, about 3 minutes. Add the soy sauce, lime juice and Worcestershire sauce, stirring to combine. Cook for 30 seconds and turn off the heat. Transfer the mixture to a medium bowl and set aside.
  • Using the same pan, cook the hot dogs over medium heat until golden brown and cooked through, about 5 minutes per side. Transfer to a plate and wrap tightly with aluminum foil to keep warm.
  • To assemble each hot dog, spread some mayonnaise on each bun. Put a hot dog in each bun, top with the onion mixture and crumbled Spicy Chips and serve with ketchup and mustard.

I first had this at a root beer stand. They top hot dogs with it, yum. Next, I found it at a Hot and Now fast food drive-thru on a burger. Again, yum. I was surprised it was not posted here already. This can be really salty if using a 1:1 ratio of mayo to olives, so I gave a range. You can add more mayo (or use less olives) to suit your taste. This will make just under 1/2 c of olive mayonnaise. Use to top hot dogs or burgers, or use as a chip dip. It's delicious! Note: To make it clear, you need to work with your ratio of mayo to olives. If it seems too salty, add more mayo. If it is too bland, add more olives. I cannot speak for how olive oil mayonnaise would affect the taste or saltiness, but adjusting the amounts should have reduced the saltiness. It IS salty, and that's what makes it good. It just doesn't have to be too salty.

12 ounces cubed Velveeta
1 can (10-3/4 ounces) condensed tomato soup, undiluted

1 teaspoon ground cumin
Tortilla chips

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink, 8-10 minutes, breaking into crumbles; drain. Transfer to a greased 3- or 4-qt. slow cooker. Stir in Velveeta, soups and seasonings. Cook, covered, on low until heated through, 1-1/2 - 2 hours, stirring halfway through cooking. Serve warm with tortilla chips.

1 pound ground beef
2 teaspoons reduced-sodium soy sauce
2 teaspoons Worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 tablespoon butter
1/2 cup sliced green olives with pimientos, drained
1/4 cup Miracle Whip
1 tablespoon stone-ground mustard
4 hamburger buns, toasted
1/4 cup crumbled feta cheese, optional
Bibb lettuce leaves, optional

Steps:

  • In a large bowl, combine beef, soy sauce, Worcestershire, garlic powder and onion powder, mixing lightly but thoroughly. Shape into four 1/2-in.-thick patties, indenting the center slightly., Melt butter in a large nonstick skillet; cook burgers over medium heat until a thermometer reads 160°, 4-6 minutes on each side., Meanwhile, in a small bowl combine olives, Miracle Whip and mustard.
