Steps:
- In a 6 to 8-quart pan, cook pasta in 3 quarts boiling water until al dente (7 to 9 minutes or according to package directions).
- Drain.
- Place pasta in a warm bowl.
- Meanwhile, combine prosciutto and oil in a wide skillet.
- Cook, stirring, over medium-high heat, until prosciutto is lightly browned (about 3 minutes).
- Add onions and cook, stirring, until limp (about 2 minutes).
- Add olives and tomatoes and cook, shaking pan often, until olives are hot (about 2 more minutes).
- Pour prosciutto mixture over noodles and toss well.
- Transfer to a warm serving bowl.
- Offer cheese to add to taste, if desired.

- Heat bacon in a large skillet over medium-low heat. Cook until bacon renders its fat and begins to brown. Stir in crushed red pepper and cook 1 minute. Add tomato sauce and bring to a boil.
- Cook pasta according to package directions. Drain pasta, reserving 1/2 cup of cooking liquid. Return pasta to pot.
- Add bacon/tomato sauce mixture and reserved pasta cooking liquid to pot. Bring to a boil and remove from heat. Stir in grated cheeses and basil.

- Combine the basil, pine nuts, olive oil and garlic in a food processor until finely chopped.
- Transfer to a bowl and mix in the cheeses and black pepper.
- (This sauce does not call for salt because of the saltiness of the cheeses used.).
- In a large pot, bring 5 quarts of water to a boil. Add about 1 tablespoon of salt.
- Add the pasta and stir frequently until al dente (about one or two minutes less than the cooking time recommended on the package).
- Drain the pasta, reserving 3 ounces of the cooking water.
- Place the pasta, pesto sauce, water, and butter in a large bowl and toss until all ingredients are well mixed.

- Purée 2 1/2 cups tomatoes, wine, and garlic in blender. Heat oil in heavy large skillet over medium-high heat. Add tomato puree and olives. Cook until sauce begins to thicken, stirring often, about 6 minutes.
- Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain, reserving 1/2 cup pasta cooking liquid.
- Add pasta, parsley, basil, and vinegar to sauce in skillet. Toss over mediumhigh heat until sauce coats pasta, adding reserved cooking liquid by 1/4 cupfuls if dry, about 3 minutes. Season to taste with salt and pepper. Mix in remaining 1 cup tomatoes and half of cheese. Mound pasta in bowl. Sprinkle with remaining cheese.

Steps:
- Cut bottom 2 inches off asparagus stems (the inedible part), then cut remaining stem into 1 inch pieces. Boil asparagus until tender. Drain and allow to cool. Remove tips from asparagus and set tips aside.
- Heat oil in non-stick saute pan. Add sausage. While sausage is cooking, break up with spoon. When sausage is completely cooked, drain fat. Set aside.
- Combine asparagus and heavy cream. Simmer 10-12 minutes over medium heat.
- Add hot, drained pasta to asparagus cream sauce. Add parmesan and butter. Stir well.
- Add cooked sausage and return to low heat until simmering, stirring constantly. Salt and pepper to taste.
- Transfer to large platter. Garnish with asparagus tips and serve.

- **NOTE: For wild mushrooms you may use portabella, oyster, or the dried mixed exotic. If using dried mushrooms, soak in water overnight and boil in water for an hour the next day to ensure they will be tender.
- COOK linguine according to package directions.
- HEAT oil in a saute pan while pasta cooks. Add prosciutto, garlic, and mushrooms. Saute for 1-2 minutes, until you can smell the garlic. Add olives and 1 tablespoon sauce and bring to a boil.
