This flank steak recipe is a family favorite. Learn how to cook flank steak by tenderizing with tiny cuts, then pan-frying in butter on the stove. No marinating required!

1 1/2 pound flank steak
Salt
Freshly ground black pepper
Dry mustard
Softened butter

Steps:

  • Remove from the heat: Remove the pan from the heat and let the steak continue to cook for 5 to 10 minutes in the residual heat of the pan (assuming you are using cast iron, if not, lower the heat to low).
  • Check for doneness: Use your fingertips to check for doneness or insert a meat thermometer into the thickest part of the steak - 120°F for very rare, 125°F for rare, or 130°F for medium rare. Flank steak should be served rare or medium rare, otherwise, it may be too dry. If the steak isn't done enough to your liking, return the steak and pan to medium high heat for a few minutes.
  • Make the sauce: Any juices that come out of the meat while cutting or resting, return to the pan. Return the pan to a burner on high heat and deglaze the pan with a little water, scraping up any browned bits. Once the water has mostly boiled down, add a little butter (about a tablespoon) to the pan for a nice sauce. Arrange the cut meat on a serving plate and pour the deglazed pan juices over the meat.

1/2 cup vegetable oil
1/3 cup soy sauce
1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
2 garlic cloves, minced
1/2 teaspoon ground black pepper
1 1/2 lbs flank steaks

Steps:

  • In a medium bowl, mix the oil, soy sauce, vinegar, mustard, garlic, and ground black pepper.
  • Place meat in a Ziploc bag and pour marinade over the steak.
  • Refrigerate overnight.
  • Preheat grill for medium-high heat.
  • Place steak on the grill, and discard the marinade.
  • Grill meat for 5 minutes per side, or to desired doneness.

2/3 cup olive oil
1/4 cup lemon juice
2 tablespoons red wine vinegar
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon Dijon mustard
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1 beef flank steak (about 1-1/2 pounds)

Steps:

  • In a shallow dish, combine the first nine ingredients. Add steak and turn to coat. Cover; refrigerate for 8 hours or overnight, turning occasionally., Drain and discard marinade. Grill, covered, over medium-hot heat for 6-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). To serve, thinly slice across the grain.

2 tablespoons vinegar
1 1/2 teaspoons garlic powder
1 1/2 teaspoons ginger
3/4 cup canola oil
1 medium onion, very finely chopped

Steps:

  • Combine all ingredients, and pour over flank steak.
  • You can place either in casserole dish, or ziploc bag.
  • Marinate in refrigerator for at least 4 hours.
  • Cook the steak over a hot grill, approximately 5 minutes per side.

I originally got the idea for this out of Sunset Magazine, and have tweaked it to suit my family and friends. It makes a great OAMC entree for the grill, or to take camping. I've used this on chicken and salmon as well as beef, just reducing the marinating time appropriately. Don't use ground (dry) ginger in this- the flavor is not the same.

1/4 cup water
1/4 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons gingerroot, grated
1 tablespoon sugar
1 pinch chili flakes
2 lbs flank steaks

Steps:

  • Place all ingredients except for steak in a gallon size zip top bag, and mix well to combine.
  • Add steak to bag, remove all of the air, and seal.
  • Marinate for up to 24 hours, turning bag occasionally.
  • Remove meat from marinade, and grill or broil to desired degree of doneness.
  • Thinly slice steak against the grain and serve.
  • To OAMC, freeze bag for up to 6 months, and pull from freezer at least 24 hours before using.
  • You can substitute (or add) garlic for the ginger. If you like it spicy, add more chili flakes!
