This Old Fashioned Macaroni Salad is just like Mom used to make, and it's the perfect summertime potluck dish. This easy macaroni salad is great served hot or chilled, is portable and simple to make for a crowd. Just mix together macaroni noodles, mayonnaise, mustard, relish, and freshly chopped onions and peppers, and you'll have a homemade macaroni salad that's as tasty as can be. Enjoy this wonderful side this summer or anytime you're searching for a quick-fix, bring along side dish.

3 large eggs
1 (8-ounce) package elbow macaroni
1 cup mayonnaise
1 tablespoon cider vinegar
1 tablespoon yellow mustard
1/2 teaspoon salt
fresh ground pepper
1 cup finely diced celery (about 2 stalks)
1/2 cup finely diced bell pepper, red or green or both
1/2 cup finely diced sweet pickles or pickle relish
1/4 cup finely diced onion

Steps:

  • Put eggs into a small pot of water to cover. Bring to a boil, then lower heat to a simmer and cook for 10 minutes.
  • Drop the eggs into a bowl of ice water to cool, then peel and chop.
  • In a large pot bring 4 quarts of water and 1 Tbsp salt to the boil. Cook macaroni until just tender, 6 - 8 minutes per package directions. Drain and cool.
  • In a large bowl, whisk together the mayonnaise, vinegar and mustard plus salt and pepper until smooth. Stir in the vegetables.
  • When pasta has cooled to room temperature, toss with the dressing and vegetables. Add eggs last and stir gently. Taste, adding salt and pepper as desired.
  • Cover and chill in the refrigerator for at least 1 hour or up to 1 day before serving, checking flavors and adding more salt and pepper if needed just before serving.

  • Combine cooked macaroni, butter, cheese, salt and pepper.
  • Place in a greased 1 1/2 quart baking dish.

Most requested recipe for me to bring to a potluck or family reunion. I received it from my husband's aunt in the 1960s and has since been my favorite dish. The recipe may be halved for a 9 x 9 inch baking dish.

1 (16 ounce) box macaroni elbow macaroni
2 teaspoons salt
2 quarts water
4 eggs
3 1/2 cups milk
1 tablespoon sugar
1/4 teaspoon vinegar
1/4 teaspoon baking powder
1 teaspoon dry mustard
2 teaspoons cornstarch
4 tablespoons butter, melted
2 (12 ounce) packages cheese, shredded
1 (8 ounce) package cheese, shredded

Steps:

  • Cook macaroni noodles in salted water until just before being tender. (Noodles will continue to bake in dish.).
  • While noodles are cooking, beat eggs in a large bowl.
  • Add milk to eggs and stir in all other ingredients except the 8 ounces of cheese.
  • Combine drained noodles with egg mixture.
  • Pour into buttered 9 x 13 inch baking dish.
  • Begin baking at 450 degrees for 15 minutes. Then reduce heat to 375 degrees and bake 15 more minutes until becomes bubbly and slight brown at edges. Sprinkle 8 ounces of cheese on top and bake for last 5 minutes. Do not over bake. Remove from oven and let sit for 5 minutes.

2 cups uncooked elbow macaroni
4 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
¼ onion, minced
salt and pepper to taste
¼ pound processed cheese food
¼ pound shredded Cheddar cheese
¼ pound shredded Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Prepare the elbow macaroni according to package directions.
  • Meanwhile, melt the butter in a small saucepan over medium high heat. Stir in the flour until a cream colored paste forms. Then pour in the milk and stir constantly until this comes to a hard boil, then stir for 1 more minute. Remove from heat and set aside.
  • When the macaroni is cooked, spread 1/2 of it into the bottom of a lightly greased 9x13-inch baking dish. Then layer 1/2 of the grated onion, 1/2 of the salt and pepper and 1/2 of each of the cheeses. Repeat this one more time: macaroni, onion, salt and pepper and cheeses, and then pour the reserved white sauce over all. Top off with small pats of butter to taste.
  • Cover and bake at 350 degrees F (175 degrees C) for 45 minutes.

16 oz uncooked elbow macaroni or 2 cups
1 stick butter
1 1/2 tsp kosher salt or to taste
1/2 tsp pepper
1 can(s) evaporated milk
4 extra large eggs, beaten well
1 - 8 oz fresh shredded cheddar cheese
1 - 8 oz fresh shredded sharp cheddar
1- 8 oz fresh shredded colby cheese

Steps:

  • 1. Preheat oven to 350. Shred cheeses and mix together.
  • 2. Spray a 1 1/2 - 2 quart shallow casserole dish with cooking spray. Cook pasta to al dente, drain and place back into pan. While hot, stir in butter until melted. Stir in 3/4 of the cheese, salt and pepper.
  • 3. Pour into prepared dish. Beat eggs well and whisk with the milk. Pour this mixture over the pasta, it should be almost covering pasta.
  • 4. Sprinkle with remaining cheese.
  • 5. Bake for 30 minutes or until bubbly and cooked in the center. Serve hot! Might need more salt as well.

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch ovenproof casserole dish.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook until tender (a little more than al dente), about 12 minutes. Drain well in a colander.
  • In a large bowl, combine the macaroni, cheese, milk and eggs. Add some salt and pepper. Transfer to the prepared dish.

6 slices good white bread, crusts removed, torn into 1/4- to 1/2-inch pieces
5 1/2 cups milk
1/2 cup all-purpose flour
2 teaspoons salt
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper, or to taste
4 1/2 cups grated sharp white cheddar cheese (about 18 ounces)
2 cups grated Gruyere cheese (about 8 ounces) or 1 1/4 cups grated Pecorino Romano cheese (about 5 ounces)
1 pound elbow macaroni

Steps:

  • Heat oven to 375 degrees. Butter a 3-quart casserole dish; set aside. Place bread in a medium bowl. In a small saucepan over medium heat, melt 2 tablespoons butter. Pour butter into bowl with bread, and toss. Set breadcrumbs aside.
  • In a medium saucepan set over medium heat, heat milk. Melt remaining 6 tablespoons butter in a high-sided skillet over medium heat. When butter bubbles, add flour. Cook, whisking, 1 minute.
  • While whisking, slowly pour in hot milk. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick.
  • Remove pan from heat. Stir in salt, nutmeg, black pepper, cayenne pepper, 3 cups cheddar cheese, and 1 1/2 cups Gruyere or 1 cup Pecorino Romano; set cheese sauce aside.
  • Fill a large saucepan with water; bring to a boil. Add macaroni; cook 2 to 3 minutes less than manufacturer's directions, until the outside of pasta is cooked and the inside is underdone. (Different brands of macaroni cook at different rates; be sure to read the instructions.) Transfer macaroni to a colander, rinse under cold running water, and drain well. Stir macaroni into the reserved cheese sauce
  • Pour mixture into prepared dish. Sprinkle remaining 1 1/2 cups cheddar cheese, 1/2 cup Gruyere or 1/4 cup Pecorino Romano, and breadcrumbs over top. Bake until browned on top, about 30 minutes. Transfer dish to a wire rack to cool 5 minutes; serve hot.

Then your Worcestershire sauce, salt and continue stirring for 5 minutes.
  • Time to add in your "Old Shredded Cheddar Cheese" a bit at a time while stirring it over a low heat until the cheese melts into the white sauce. Now add a tsp of your Dijon Mustard and let it sit to combine. Enjoy!
  • Pour into a baking dish and sprinkle the panko bread crumbs over the top. Bake 350 f for 30 minutes. Enjoy!
