1 tbsp canola oil
4 small boneless, skinless chicken breasts
1 can (10.75 oz) condensed cream of chicken soup
1/2 cup chicken broth
1/2 cup water
2 cups Minute® White Rice
1 tsp garlic powder
1 tsp onion powder
chopped parsley (optional)

Steps:

If you have 15 minutes to spare, you can make this perfectly creamy and delicious chicken and rice dinner tonight! This flavor-packed recipe couldn't be simpler or more satisfying. Step 1
Heat oil in a large, nonstick skillet on medium-high heat. Step 2
Add chicken and cover. Cook for 4 minutes on each side, or until lightly browned. Remove chicken from skillet and set aside. Step 3
Add soup, chicken broth and water to skillet. Stir to combine and bring to a boil. Step 4
Stir in rice, garlic powder and onion powder. Top with chicken; cover. Step 5
Cook on low heat for 5 minutes, or until chicken is cooked through (170º F). Step 6
Let sit for 5 minutes, or until liquid is absorbed. Serve sprinkled with chopped parsley, if using.

1 cup broth (chikcen or beef)
1 (10 ounce) can rotel or 1 (10 ounce) can tomatoes and green chilies, mostly drained
2 tablespoons cilantro, chopped
1/2 cup shredded cheddar cheese
2 teaspoons chili powder

Steps:

Pour broth, can or Rotel, and chile powder into sauce pan and bring to a boil.
Add rice and cilantro and cover. Remove from heat and allow rice to absorb liquid.
Mix with cheese while rice is still warm.

10 3/4 ounces condensed cream of celery soup
2 cups long-grain minute rice, uncooked
2 cups baby spinach leaves

Steps:

Add water and soup in a medium saucepan.
Stir until well blended.
Bring to a boil.
Stir in the rice and spinach leaves.
Cover.
Remove from heat and let stand 5 minutes.
Stir gently and serve.

2/3 c minute rice, uncooked
2 3/4 c whole milk
1/2 c raisins
1/2 c sugar
2 Tbsp butter, melted
1/2 tsp salt
1 tsp vanilla extract
1/4 tsp ground nutmeg
cinnamon

Steps:

1. Preheat oven to 350°F. Combine rice, milk, raisins, sugar, butter, salt, vanilla, and nutmeg in a buttered 1 1/2 quart baking dish.
2. Bake in a 350° oven for 1 hour, stirring after 15 minutes and again when pudding is done. Sprinkle with cinnamon. Serve warm or chilled. Pudding thickens as it stands.
