GINGERBREAD MAN COOKIES

Thick, soft and chewy, these classic Gingerbread Man Cookies are a fun and festive addition to your Christmas cookie tray!

1 cup white sugar
1 tablespoon ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon ground cloves
¼ teaspoon ground allspice
1 ½ tsp baking soda
1 tsp salt
1 cup (2 sticks) salted butter, softened
½ cup evaporated milk
1 cup molasses
5-6 cups all-purpose flour, sifted
1 ½ cups confectioners' sugar, sifted
1 tablespoon light corn syrup
1-2 tablespoons milk
½ teaspoon vanilla extract
Decorative candies, sprinkles and food coloring, if desired

Steps:

  • Add sugar, ginger, cinnamon, nutmeg, cloves, allspice, baking soda and salt to the large bowl of a stand mixer. Mix on low speed with the paddle attachment until well combined.
  • Add softened butter, evaporated milk, and molasses. Mix again until completely combined, starting on the lowest speed so that the liquid doesn't splash out of the bowl. Gradually increase the speed until the butter and sugar are creamed together.
  • Put the mixer back on low speed and add 5 cups of flour (one cup at a time), stirring constantly until the flour is completely incorporated.
  • The dough should be quite thick and slightly sticky. If it's still too soft and sticky, add additional flour (½ cup at a time), just until a fairly stiff dough comes together. I typically use at least 5 ½ cups of flour total for this recipe -- sometimes up to 6 cups if the air is particularly humid.
  • Plop about half of the dough onto a large piece of plastic wrap. Wrap it up, then flatten it into a disc. Repeat with the second half of the dough. Chill in the refrigerator for at least 2 hours (or overnight).
  • Preheat oven to 375 degrees F. Line baking sheets with parchment paper or silicone mats.
  • Working with one disc of dough at a time (leave the other disc in the fridge to stay cool), roll out the dough to a thickness between ¼-inch and ½-inch on a very well-floured surface. Use a floured cookie cutter to cut the dough into desired shapes. Don't be afraid to continually add more flour as you work, since the dough will become sticky. Re-roll the dough scraps until all of the dough is used.
  • Use a metal spatula to place shapes onto prepared baking sheets. Chill in the freezer (if there's room) or in the refrigerator again for about 10 minutes (this second round of chilling will just ensure that the cookies don't spread in the oven).
  • Bake for 10-12 minutes, or until slightly golden brown but still soft. Make sure that you don't bake them for too long or they will become hard and crispy. To maintain the soft, chewy texture, pull them out of the often while they're still soft and let them firm up slightly while they cool.
  • Allow cookies to cool on the baking sheet for at least 5 minutes before transferring them to a wire rack to cool completely.
  • Once the cookies are cool, decorate with desired icing, frosting, candies and decocrations. If you'd like to prepare the icing here, mix together confectioners' sugar, milk, corn syrup and vanilla until smooth. If the icing is too thick, add more milk, about a teaspoon at a time, until the frosting is spreadable. If the icing is too thin, add powdered sugar until desired texture is reached. Transfer icing to a piping bag and decorate cookies as desired. The icing will set in about 30 minutes.

This is my very favorite gingerbread cookie recipe. The dough is so firm and nice to work with and is so wonderful smelling that it is almost like a stress reliever. These disappear in lightning speed in my house! This recipe is adapted from a recipe in the Joy of Cooking and according to the entry they only have 3 grams of fat per cookie! If you want crisp cookies roll out very thin. Thicker cookies = softer cookies, thinner cookies= crisper cookies. If the dough is too sticky, chilling should help. **I noticed a lot of people have been having some sticky dough issues. You need to make sure you let the dough rest at LEAST two hours. For some reason this helps make the dough more workable. I live in FL and we have terrible humidity, but I have never had a problem with sticky dough in this recipe.

3 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon ground ginger

6 tablespoons unsalted butter
3/4 cup dark brown sugar
1 large egg
1/2 cup molasses
2 teaspoons vanilla
1 teaspoon finely grated lemon zest (optional)

Steps:

  • In a small bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves until well blended.
  • In a large bowl (KitchenAid's great for this) beat butter, brown sugar, and egg on medium speed until well blended.
  • Add molasses, vanilla, and lemon zest and continue to mix until well blended.
  • Gradually stir in dry ingredients until blended and smooth.
  • Divide dough in half and wrap each half in plastic and let stand at room temperature for at least 2 hours or up to 8 hours.
  • Preheat oven to 375 deg. Prepare baking sheets by lining with parchment paper.
  • (Dough can be stored in the refrigerator for up to 4 days, but in this case it should be refrigerated. Return to room temp before using.) Preheat oven to 375°.
  • Grease or line cookie sheets with parchment paper.
  • Place 1 portion of the dough on a lightly floured surface.
  • Sprinkle flour over dough and rolling pin.
  • Roll dough to a scant 1/4-inch thick.
  • Use additional flour to avoid sticking.
  • Cut out cookies with desired cutter-- the ginger bread man is our favorite of course.
  • Space cookies 1 1/2-inches apart.
  • Bake 1 sheet at a time for 7-10 minutes (the lower time will give you softer cookies-- very good!).
  • Remove cookie sheet from oven and allow the cookies to stand until the cookies are firm enough to move to a wire rack.
  • After cookies are cool you may decorate them any way you like.
  • I usually brush them with a powdered sugar glaze when I am in a hurry, but they look wonderful decorated with Royal icing.

1 cup sorghum or 1 cup molasses
3/4 cup oil or 3/4 cup lard
1/2 cup hot water
2 eggs
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon

6 -7 cups white flour

Steps:

  • Combine first four ingredients in large bowl.
  • Add eggs.
  • Mix dry ingredients together and add to wet.
  • Mix well.
  • Cover and refrigerate overnight.
  • Roll dough out on Pam (or other non-stick cooking spray) covered surface (I roll mine out thick,I like a thicker cookie) Cut with desired shapes.
  • Bake at 350 degrees for 10 minutes.
  • These cookies freeze well and are softer and more flavorful after freezing.

2 cups white sugar
½ cup shortening
½ cup butter
3 eggs
5 teaspoons baking powder
½ cup milk
4 cups all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two cookie sheets.
  • Cream the sugar with the shortening and the butter or the margarine. Add the baking powder, eggs, milk and flour. Mix until combined.
  • On a lightly floured surface roll out the dough to 1/4 inch thick and cut into desired shapes. Place cookies on the prepared cookie sheets.
  • Bake at 350 degrees F (175 degrees C) until lightly browned.
