Mom's Homemade White Bread Rolls (Or Loaves) image

My mom makes this every year for the holidays, these are delicious and pretty easy to make. I've gotten detailed in the instructions, because she gave me this recipe when I was first learning how to make bread.

Number Of Ingredients 7

2 cups water
1 (1/4 ounce) package yeast
1/4 cup lukewarm water
2 tablespoons sugar
1 tablespoon shortening
2 teaspoons salt
6 cups flour

Steps:

  • Dissolve yeast and 2 Tablespoons sugar in 1/4 cup warm water, set aside.
  • Microwave 2 cups water, shortening and salt, until the shortening melts.
  • Stir this mixture until it completely dissolves.
  • Start adding flour about 2 cups to start to this mixture, just a little at a time so that it stays smooth and doesn't get lumpy.
  • Then add yeast mixture, mix well.
  • Continue adding flour and then turn out on floured surface and knead in remaining flour, until no longer tacky.
  • Grease a large bowl or pan with vegetable oil.
  • Put the bread in this bowl cover and let it rise.
  • If you use a fast acting yeast it should take about 45 minutes.
  • Turn out on the counter and fold in sides, put back in bowl and let rise again.
  • After the second rising it is time to turn it out and make the rolls or bread and place it in a pan.
  • Make sure the pan is well oiled with vegetable oil.
  • Place them in the pan (pans) and let rise one last time and then bake them at 375°F oven until done, about 20 minutes or so.

3 cups all-purpose flour
1 teaspoon salt
2 tablespoons baking powder
¼ cup butter, melted
1 ½ cups water

Steps:

  • Measure flour, salt, and baking powder into a large bowl. Stir to mix. Pour melted butter and water over flour mixture. Stir with fork to make a ball.
  • Turn dough out on a lightly floured surface, and knead gently about 10 times. Pat into a flat circle 3/4 to 1 inch thick.
  • Cook in a greased frying pan over medium heat, allowing about 15 minutes for each side. Use two lifters for easy turning. May also be baked on a greased baking sheet at 350 degrees F (175 degrees C) for 25 to 30 minutes.

Bake these simple white bread rolls for sandwiches, burger buns or to dunk in soup. Using only a handful of ingredients, bread-making has never been so easy

Number Of Ingredients 5

500g strong white bread flour , plus extra for dusting
7g sachet fast action yeast
1 tsp white caster sugar
2 tsp fine salt
1 tsp sunflower oil , plus extra for the work surface and bowl

Steps:

  • Tip the flour, yeast, sugar, salt and oil into a bowl. Pour over 325ml warm water, then mix (with a spatula or your hand), until it comes together as a shaggy dough. Make sure all the flour has been incorporated. Cover and leave for 10 mins.
  • Lightly oil your work surface and tip the dough onto it. Knead the dough for at least 10 mins until it becomes tighter and springy - if you have a stand mixer you can do this with a dough hook for 5 mins. Pull the dough into a ball and put in a clean, oiled bowl. Leave for 1 hr, or until doubled in size.
  • Tip the dough onto a lightly floured surface and roll into a long sausage shape. Halve the dough, then divide each half into four pieces, so you have eight equal-sized portions. Roll each into a tight ball and put on a dusted baking tray, leaving some room between each ball for rising. Cover with a damp tea towel and leave in a warm place to prove for 40 mins-1 hr or until almost doubled in size.
  • Heat the oven to 230C/210C fan/gas 8. When the dough is ready, dust each ball with a bit more flour. (If you like, you can glaze the rolls with milk or beaten egg, and top with seeds.) Bake for 25-30mins, until light brown and hollow sounding when tapped on the base. Leave to cool on a wire rack.

This recipe is from the east coast of Prince Edward Island, they are so easy to make and freeze very well. Great with homemade soups and stews. We also use them for mini fresh tomato sandwiches when the garden is full. This is handed down from my mother-in-law but I had to stand over her when making them for amounts etc. the ladies from the days ago always put the recipe in the head never in a cookbook

16 cups all-purpose flour
1 1/2 cups lard
4 teaspoons salt
2 eggs, beaten
2 tablespoons granulated sugar
4 1/2 cups water, very warm
2 tablespoons granulated sugar
2 tablespoons baker's yeast
1/2 cup water, very warm

Steps:

  • Start yeast mixture by adding the sugar to the warm water, stir to dissolve add yeast ( do not stir) let rise until it doubles.
  • Meanwhile measure flour into large bowl, add lard and salt bland with pastry blended until it looks like course oatmeal with a few larger pieces.
  • When yeast is ready, add to flour mixture add beaten eggs ( mixed with 2 tablespoons of granulated sugar) add warm water ( I rinse my yeast and egg containers with some of this water so i get all remaining yeast, sugar and eggs)
  • Blend until all incorporated.
  • Turn out onto floured surface and knead for approximately 5-8 minutes. Shape into a round. Rinse flour bowl and grease.
  • Let rise covered in warm area for 1 1/2 hours.
  • Punch down centre and roll out to 1/4 " thick cut with biscuit cutter ( I use a tin can with top and bottom removed) place on to cookie sheets Poke holes in each bun with fork and let rise for 1 1/2 hours.
  • Bake at 375°F for 22-25 minutes.
  • Note:.
  • You can freeze these and warm in oven for a few minutes and they will be like you had just made them the same day. Enjoy !
  • ( I know this sound like a lot of work but the results are so good )
  • This recipe can also be halved.

This recipe is one of our family traditions. We don't know how old it is, but it is at least Depression Era (no milk, no eggs). It was handed down from my Grandma Pearl Nash. She never wrote down the recipe, always measured by memory and her hands. She developed breast cancer in the early 60's and shortly before she died. My Daddy asked her to measure out all the ingredients so the recipe would not be lost. He carried her into the kitchen, where she carefully placed the ingredients on newsprint paper. My mama (who my kids called Tutu) shifted the ingredients into measuring cups and spoons to record the amounts.

2 ½ cups warm water
1 ½ tablespoons active dry yeast
½ cup white sugar
1 tablespoon salt
¾ cup shortening (such as Crisco®)
7 cups all-purpose flour, divided, or more as needed
½ cup butter, melted

Steps:

  • Dissolve yeast in warm water in the bowl of a stand mixer fitted with the dough hook. Stir in sugar and salt until you see foam rising. Add 3 cups flour and 3/4 cup shortening; mix with the dough hook until the mixture is the consistency of a thick pancake batter.
  • Fill a pot with hot (not boiling) water.
  • Remove the mixer bowl and cover it with plastic wrap and a towel. Place the bowl over the pot of hot water, making sure the bottom does not touch the water. Let rise until doubled in size, 45 minutes to 1 hour.
  • Place the bowl back on your stand mixer and gradually mix in remaining 4 cups flour until dough is smooth and elastic; you may need to add up to 1 additional cup.
  • Heavily grease two 9x13-inch pans with shortening.
  • Divide dough into 24 balls. Place 12 balls into each of the prepared pans; cover with plastic wrap and a towel. Let rise in a warm area until doubled in size, about 1 hour; balls will start out at about 1 1/2 inches in diameter but will rise and touch the sides of the pans.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Bake rolls in the preheated oven until golden brown on top, 25 to 30 minutes. Remove from the oven and brush melted butter over top.

  • In a large bowl add the butter, honey and salt and pour the boiling water over the ingredients. Stir and let it sit so that the butter melts and the salt dissolves. Let this cool to room temperature. You want to make sure that this isn't too hot as it will otherwise kill your yeast.
  • While the above mixture cools, activate the yeast. Stir the lukewarm water and sugar together in a medium bowl to dissolve and sprinkle in the yeast. Mix gently to combine and let it sit for around 10 minutes, until the yeast is foamy and 'activates'.
  • Add 1 cup of flour to the cooled butter mixture in step 1 and stir to combine. Add the eggs to this mixture and stir to combine, if using (I often omit them, the dough is great without them too). Add the yeast mixture from step 2 to this bowl and stir to combine again.
  • Preheat your oven to 375 F and grease one 9x13 sheet baking pans or 3 loaf pans. You can alternately use any shape of pan you want - I used round ones like the one pictured above and it works fine. Cut off pieces of dough that are approximately 1/2 cup in size (doesn’t have to be exact!) and form into buns. I keep my fingers slightly floured and tuck the dough under as I stretch the dough to make it smooth on top, but you can use whatever technique you like! You can make hamburger buns by spacing the buns out more and flattening them before baking or hot dog buns by forming them into mini loaves or logs (using the same quantity of dough).
