6 slices bacon, cut up
1/4 cup finely chopped onion
1/4 cup chopped green pepper
3 cups cooked rice (1 cup uncooked)
2 cups canned tomatoes
1 1/2 teaspoons salt
1/8 teaspoon pepper

Steps:

  • In a skillet, fry the bacon until it is crisp; remove from skillet and drain off most of the fat.
  • Add onion and green pepper to bacon fat and cook over medium heat until the onion is yellowed.
  • Add remaining ingredients and cook uncovered over low heat for abou 15 minutes, or until hot.
  • NOTE: you can heat the oven to 400 degrees and combine the cooked bacon, onion and pepper with the rice and tomatoes, salt and pepper, in a baking dish. Bake for 25-30 minutes.
  • ALSO, you can substitute jarred or packaged cooked bacon bits, genuine or soy-imitation.

1 pound ground beef
1 cup chopped onion
1/2 cup chopped green pepper
1 garlic clove, minced
1 tablespoon chili powder
1 bottle (32 ounces) tomato or vegetable juice
1 cup uncooked long grain rice
1/2 teaspoon salt

Steps:

  • In a skillet, brown ground beef; drain. Stir in the onion, green pepper, garlic and chili powder. Cook and stir until the vegetables are tender. Stir in remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 20-30 minutes or until the rice is tender and most of the liquid is absorbed.

1 lb ground beef
1 green bell pepper, chopped
1 onion, chopped
1 cup rice
1 cup beef broth
1 (15 ounce) can tomato sauce
3 ounces tomato paste
1 (15 ounce) can diced tomatoes, undrained
2 ounces diced green chilies, undrained
1 garlic clove, finely chopped
1 dash pepper
1 dash red pepper flakes
1/2 cup chopped fresh cilantro (for garnish)

Steps:

  • 1. Brown the ground beef with the bell pepper and onion until the beef is no longer pink and the onions are translucent.
  • 2. Drain ground beef and return to pan.
  • 3. Add remaining ingredients (except for cilantro). Bring to a boil, then cover and simmer for 30 minutes or until rice is done.
  • 4. Garnish with fresh chopped cilantro.

Very easy, very good Spanish rice!

1 tablespoon vegetable oil
2 cups uncooked long-grain white rice
¼ onion, chopped
1 green bell pepper, chopped
salt and pepper to taste
1 (14.5 ounce) can stewed tomatoes
4 cups water

Steps:

  • In a large skillet, combine oil, rice, onion, green pepper and salt and pepper until the rice is a light brown color. Remove skillet from stove.
  • Mix tomatoes into the mixture. Pour in water (it should cover the entire mixture; use more if necessary). Return the skillet to the stovetop and bring the mixture to a full boil; salt and pepper to taste. When the mixture begins to boil, cover the skillet, and reduce heat to a simmer. Cook 12 to 15 minutes and never, I mean NEVER, remove the cover. After 12 to 15 minutes, turn stove off and let stand for another 12 to 15 minutes. DO NOT remove cover until the final 15 minutes has elapsed!

My niece, who is of Spanish descent, lives with us and has tweaked my old Spanish rice recipe to make it just like her grandma's. My mother-in-law has also added this recipe to her school meals menu (minus the jalapeno), and it is a hit with the students and faculty.

6 tablespoons butter
2 onions, chopped
2 jalapeno peppers, chopped
2 (14.5 ounce) cans Mexican-style diced tomatoes, undrained
1 cup uncooked white rice
salt and ground black pepper to taste
½ cup sour cream, or as desired
½ cup shredded Cheddar cheese, or as desired

Steps:

  • Melt butter in a large skillet over medium-high heat; cook and stir onions and jalapeno peppers in the butter until softened, 3 to 5 minutes. Stir Mexican-style tomatoes into onion mixture; add rice, salt, and black pepper. Bring rice mixture to a boil, reduce heat, cover, and simmer until rice is cooked, 40 to 45 minutes. Garnish with sour cream and Cheddar cheese to serve.
