OLD-FASHIONED POTATO SALAD

Old-Fashioned Potato Salad image

This classic potato salad is a family favorite. It is made with plain, honest, good old-fashioned ingredients...Yukon Golds (which hold up well after cooking), hard-boiled eggs, celery, and onions...a dressing made with purchased mayonnaise, ballpark-style mustard, a few splashes of cider vinegar and lemon juice, and the enhanced richness of mashed hard-boiled eggs. I guarantee that everyone will want seconds (I was told that one of my nephews ate a whole bowl at one sitting...WOW!!). This salad can easily be doubled or tripled for those larger crowds.

Provided by Alan in SW Florida

Categories     Salad Dressings

Time 45m

Yield 6 serving(s)

Number Of Ingredients 11

2 lbs yukon gold potatoes
4 large hard-boiled eggs, divided
1 1/2 cups chopped celery
1/2 cup chopped yellow onion
1/2 cup mayonnaise (Hellmann's is my favorite. And, please, NOT reduced-fat or nonfat)
2 1/2 teaspoons fresh lemon juice (plus more, if needed)
1 1/2 teaspoons cider vinegar
1 1/2 teaspoons ballpark-style yellow mustard (I like French's, NOT Dijon)
1 teaspoon kosher salt (plus more, if needed)
1/8 teaspoon cayenne pepper (ground red pepper)
1/4 cup chopped fresh flat-leaf parsley (Italian parsley)

Steps:

  • Bring a large pot with 3 quarts of water to a boil. While water is coming to a boil, peel and cut potatoes into 1-inch dice. Add diced potatoes to boiling water and cook about 10 minutes, or until tender (NOT mushy) when pierced with a knife. Remove and drain well in a colander.
  • Place potatoes in a large non-reactive bowl (a glass bowl is best), and cool to room temperature. Chop 3 of the hard-boiled eggs and add to the bowl with the chopped celery and onion. Mix well to blend.
  • Mash the remaining egg in a small bowl, then add the mayonnaise, 2 1/2 teaspoons of lemon juice, vinegar, mustard, 1 teaspoon of salt, and cayenne. Whisk well to blend. Add to the bowl with the potatoes and mix well to combine. Taste and season with a little more salt and lemon juice, if needed. Cover with plastic wrap and refrigerate until needed (Salad can be made 6 hours ahead, bring to room temperature for 30 minutes before serving).
  • When ready to serve, sprinkle with the chopped parsley.

OLD-FASHIONED POTATO SALAD ADAPTED FROM A RECIPE COURTESY OF BOB

Old-Fashioned Potato Salad Adapted from a Recipe Courtesy of Bob image

I found this recipe in Guy FIeri's Diners, Drive-ins, and Dives from Bob Mueller of Louie Mueller Barbecue in Taylor, Texas. I must admit I thought the ingredients sounded too simple to be so delicious. This is a potato salad you can't stop eating. I really liked the idea of mashing the potatoes because I've been told the secret to a great potato salad is small and uniform potatoes. I'm way too impatient to dice perfect potatoes, but I did partly mash them and loved the creamy texture (next time I'll mash more thoroughly). Mashing potatoes makes them taste better for some reason, kind of like what happens when shredding cheese (it's just tastier)! I'll make this one again because it's that good. I may have found the potato salad motherload. Serving size is estimated because it wasn't listed.

Time 20m

Yield 8-10 serving(s)

Number Of Ingredients 10

10 cups red potatoes (or yukon gold potatoes, small to medium, roughly peeled and diced, do not use Russet)
3/4 cup celery, diced
1/3 cup yellow mustard
1/3 cup sweet pickle relish
1 cup mayonnaise (not Miracle Whip)
2 -3 hard-boiled eggs, chopped (optional)
2 teaspoons sea salt (adjust to taste)
2 -3 teaspoons course-ground black pepper (adjust to taste)
paprika, to dust over top
fresh parsley leaves, to dust over top

Steps:

  • Bring peeled, diced potatoes to a boil in a large stock pot; cook approximately 5 minutes or until just tender (you don't want mashed potatoes). Immediately drain and rinse several times in cold water to stop the cooking process; drain and put into large mixing bowl. Add next 7 ingredients and mix until thoroughly combined; adjusting amounts of relish, mayo and mustard to suit your taste. You want it to be creamy, but not too soupy. Adjust seasonings and place potato salad in a large, covered storage container; dust top with paprika and parsely leaves if desired. Refrigerate several hours before serving.

OLD FASHIONED POTATO SALAD

This family favorite has been passed down for several generations. My daughter told me she'd tried all kinds of recipes and had never found one to top this one. I guestimate on quantify, but here are the ingredients. This is not a German potato salad that is largely vinegar. You don't want to detect that the vinegar is even there, yet without it you will not have a superior salad.
