OLD-FASHIONED PAN-FRIED PORK CHOPS
I thought it was time to revisit on old-fashioned cooking method: Pan Frying. Is it time to bring it back? Go into any of the wonderful family-style restaurants in the South and order a pan-fried pork chop, and you are served a thing of beauty. For some reason, this no-fuss, easy method has fallen out of favor with home cooks (maybe because most recipes are so vague..."Season pork chop, cook in frying oil until done".) Follow my instructions and you will yield a beautifully browned, moist chop...serve with Macaroni & Cheese and some greens, and you will have a fast, old-fashioned weeknight supper.:)

Steps:
- Combine the garlic powder, paprika, salt, pepper, and cayenne in a bowl. Place the flour in a shallow dish. Pat the chops dry with paper towels. Cut 2 slits about 2 inches apart through the fat on the edges of each chop (Since pork chops have a tendency to curl when cooked at high heat, cutting the slits will prevent this from happening). Season both sides of the chops with the spice mixture, then dredge the chops lightly in the flour (do NOT discard the flour). Transfer to a plate and let rest for 10 minutes.
- Meanwhile, cook the chopped bacon in a large nonstick skillet over medium heat until the fat renders and the bacon is crisp, about 8 minutes. using a slotted spoon, transfer the bacon to a paper towel-lined plate and reserve for another use. (if having baked potatoes with the pork chops, serve with sour cream, chopped chives, and sprinkle on the cooked, chopped bacon -- YUM!) Do NOT wipe out the pan!
- Add the oil to the fat in the pan and heat over medium-high heat until just smoking. Return the chops to the flour dish and turn to coat. Cook the chops until well browned, 3 to 4 minutes per side.
- Serve and enjoy!

This recipe is my nanny's passed to my momma and then to me. I would just watch them in the kitchen as a child. Nothing was really ever measured, just a little of this and that.

Steps:
- Put the flour, salt and pepper in a paper bag or ziplock bag.
- Put a couple of pork chops in and shake the bag well set aside.
- Heat the oil in a skillet when the oil is hot put the chops in and fry about 5 to 10 minutes on each side.
- Turn chops every 2 to 3 minutes.
- Place on paper towels to drain.
- I put them in a warm oven until they are all done.

- Cut spareribs into pieces.
- Salt and pepper ribs.
- Add garlic and onion powder to ribs.
- Roll in flour.
- In frying pan, that has been heated with vegetable oil, add sliced onions.
- Place spareribs over onions.
- Add more onions on top.
- Fry until done.
- NOTE: Beef spareribs can be substituted for pork.
ONION PAN-FRIED PORK CHOPS
I made this up one day because I was wanting something different then the same old pan-fried pork chops (that is how my husband asked me to cook them that day). So made this up real fast and boy did he love them. Now he asks for them every time. I do this with boneless and bone-in pork chops. So it doesn't matter what kind you have on hand just cook them up and enjoy. My husband loves these.

Steps:
- With your hands and onion soup mix still in sealed packet crush onions up some what, but you do not want to make them into a powder you just want to break them up.
- Mix flour and onion soup mix in a shallow bowl.
- Add enough oil to bottom of a pan that would cover about half way up your pork chop.
- Heat on medium heat until when you add flour mix to pan it sizzles.
- Coat each pork chop with flour mixture.
- Add to pan, about 30 seconds after adding the chops turn over, and cook until done (about 4-5 minute per side for ½ to 3/4 inch pork chop).

- get out a square bowl,
- put raw pork chops is bowl,
- season with garlic powder, Lowery's salt, pepper to your liking to one side of pork chops,.
- take a fork and poke holes into the chop all over.
- flip the chops over and re-peat steps 3-4.
- heat pan to about medium heat (between 5-7).
- put 1/4-1/2 stick of butter in the heated pan (let melt).
- put 3-4 chops in the pan and cook until done (the inside is white NOT pink).
