  • In a medium saucepan, combine sugar, salt, and flour
  • Slowly stir milk into dry mixture
  • Place over medium-high heat and cook, stirring continuously, until the mixture is simmering and begins to thicken

5 Egg Yolks
3/4 Cup Granulated Sugar
1/4 Cup Corn Starch
2 Vanilla Bean (Slit)
2 Cups Whole Milk
1 Cup Heavy Cream (Whipped )
3 Bananas (Sliced )
2 Cups Nilla Wafers (Regular or Mini )
1 Cup Heavy Whipping Cream
3 Tablespoon Powdered Sugar
1/2 teaspoon Vanilla Extract

Steps:

  • In a medium bowl, whisk together the egg yolks, 1/2 cup granulated sugar and cornstarch until thick and smooth; set aside
  • In a medium saucepan combine the milk, vanilla bean split in half and the seeds scraped out and the remaining 1/4 cup granulated sugar and bring to a simmer.
  • Once the milk is brought to a simmer, remove the saucepan from the heat and slowly pour about half of the hot milk into the egg mixture while whisking constantly to *temper the eggs. (temper means to slowly warm the eggs by adding a small amount of milk to the egg milk to bring them to the same temperature)
  • Once the eggs are tempered, pour the egg mixture back into the saucepan with the remainder of the milk, continue whisking the egg and milk mixture to avoid the eggs from curdling.
  • On low to medium heat, whisk the custard vigorously until it starts to thicken and begins to bubble. While whisking, let the custard come to a slow boil, lower the heat and allow the custard to cook for another 2-3 minutes.
  • Remove the saucepan from the heat, pour it into a glass bowl and immediately press plastic wrap to cover the surface of the custard to avoid a skin from forming.
  • Allow the custard to cool completely in the refrigerator for 1 hour
  • Once the custard is chilled, whip one cup of heavy cream to stiff peak and fold it into the pastry cream to make a smooth and creamy filling.
  • In mixing bowl with whisk attachment, combine the heavy cream, powdered sugar and vanilla extract. Whisk until the heavy cream comes to soft peaks; set aside
  • Using 4 individual trifles dishes or one large trifle dish, start layering the vanilla pudding in the bottom of each glass, followed by Nilla Wafers and then sliced bananas; repeat each step one time finishing with fresh whipped cream to garish
  • Serve immediately or refrigerate until ready to serve. (Recommended to serve within a few hours of assembling)

2 tablespoons cornstarch
1 (12 ounce) can evaporated milk
1/3 cup water
1 large egg, lightly beaten

lightly sweetened whipped cream, for acompaniment (optional)

Steps:

  • Combine sugar and cornstarch in medium saucepan.
  • Stir in evaporated milk and water.
  • Cook over medium heat, stirring constantly, until mixture comes just to a boil.
  • Remove from heat.
  • Place egg in small bowl; stir in small amount of milk mixture.
  • Add to milk mixture; cook, stirring constantly, for 1 minute (be careful, mixture will bubble and might spatter on your hand so use caution).

Steps:

  • Put egg yolks, cornstarch and salt into a large heatproof bowl, and whisk until the mixture is smooth and there are no lumps.
  • In a medium pot over medium heat, combine brown sugar and butter, whisking, until the brown sugar melts, 1 to 2 minutes. Let cook, whisking constantly, until the mixture starts to smell like hot caramel and darkens slightly, about 1 minute longer. (Don't walk away, or the mixture may burn.)

  • Cook pudding, whisking constantly especially around the bottom and edges of the pot, until it comes to a full boil. (Don't worry about the eggs curdling. You're going to strain the mixture later.) Reduce heat to medium-low and cook, stirring the mixture constantly, until it thickens enough to mound thickly on the spoon, 4 to 7 minutes. If at any point the pudding looks curdled, whisk to help smooth it out.
  • Strain mixture through a fine sieve into a heatproof container or bowl, then stir in the Scotch or bourbon, if using, and vanilla. To prevent a skin from forming, press plastic wrap directly onto the surface of the pudding. (If you like the skin, don't cover pudding until it cools.) Chill for at least 2 hours and up to 2 days.
  • When serving, spoon pudding into dishes. Top with dollops of whipped cream, sour cream or crème fraîche, and any of the optional garnishes.

  • Whisk together the eggs and cornstarch. Add 1 c. of milk and whisk until smooth and creamy.
  • In a cup or small bowl, mix gelatin and cold water. Set aside.
  • Once your milk is getting hot, you will want to keep your eye on it, because when it comes to the boiling point it will begin to rise. When the milk begins to rise, turn off the burner and slowly pour in your egg/cornstarch mixture, whisking as you are pouring.
  • Remove from the burner and add the gelatin mixture, butter, and vanilla. Whisk until the gelatin is dissolved and the pudding is creamy-looking.
  • Cool. To avoid having a skin form on the top, place a piece of plastic wrap on top of the pudding.
  • Cool completely and add cool whip or whipped cream, if desired. It makes it more creamy.

½ cup granulated sugar (or coconut sugar/sweetener of choice)
4 Tbsp unsweetened cocoa powder
¼ tsp salt
3 cups milk of choice (room temperature (separated into ½ cup and 2½ cups))
3 egg yolks (room temperature)
5 oz ~⅔ cup dark or milk chocolate, finely chopped
½ tsp vanilla extract

Steps:

  • Add flour, sugar, cocoa powder, and salt to a bowl and whisk to combine.
  • Add ½ cup of milk and egg yolks one at a time, whisking to combine after each.
  • Set aside.
  • In a saucepan, add remaining 2½ cups of milk and bring to a simmer over medium-high heat.
  • Once simmering lightly, remove from heat and slowly pour hot milk into cocoa mixture, whisking constantly to combine. (You don't want to scramble the eggs!)
  • Add entire mixture back into saucepan and return to the heat.
  • Whisk constantly over medium-high until thickened, so the pudding leaves a "trail" as you whisk (2-3 minutes).
  • Remove from heat and add chopped chocolate and vanilla, stirring until smooth.
  • Transfer pudding into small containers and allow to cool. (It will thicken as it cools.)
  • Serve chilled or at room temperature. Store in airtight container(s) in the fridge for 5-7 days.
  • Enjoy on its own, or use to make DIY pudding dirt cups with crumbled Oreos and gummy worms!
