CHERRY CLAFOUTIS
Raymond Blanc shares his simple recipe for a classic clafoutis. Other stone fruits would also work well in this dish. Try peaches, plums or apricots.

Steps:
- Gently mix together the cherries, sugar and kirsch and leave to macerate for two hours. (The sugar will slowly permeate the cherries and intensify their flavour.)
- Preheat the oven to 180C/350F/Gas 4. Grease a baking dish with butter and sprinkle with sugar. Shake the sugar around the dish so that it is evenly coated, then tip out any excess.
- For the batter, heat the butter in a small pan until it turns a pale hazelnut colour - this is called a beurre noisette. Do not allow the butter to burn or it will become bitter and carcinogenic. Remove the pan from the heat and set aside in a warm place.
- In a large bowl whisk together the eggs, sugar and vanilla until creamy.
- Add the flour, whisk until smooth, then slowly incorporate the milk, cream, salt and beurre noisette.
- Mix the macerated cherries and their juice into the batter and pour into the prepared baking dish.
- Bake in the oven for 30-35 minutes, or until the top is slightly domed and the blade of a knife inserted in the middle comes out clean.
- To finish, sprinkle with caster sugar and serve warm.
CHERRY OLD-FASHIONED
Steps:
- Divide the bourbon, cherry juice and bitters between 2 rocks glasses and stir. Add some ice and garnish with an orange slice and a cherry. Serve immediately.
CHERRY CLAFOUTI
Inspired by the simple cherry desserts from the Limousin region of France, this baked custard can be served warm or at room temperature. Feel free to use pitted or unpitted cherries.

- Preheat oven to 375°F. Butter cake pan or ramekins. Arrange cherries in a single layer in pan.
- Combine milk and cream in a small saucepan; bring just to a simmer over medium heat. Set aside. Combine eggs, flour, sugar, lemon zest, vanilla, and salt in a medium bowl; whisk to blend. Gradually whisk in hot milk mixture; whisk until custard is smooth. Pour custard evenly over cherries in pan. If necessary, gently shake pan to allow custard to settle.
- Bake clafouti until custard is set and top is golden brown, about 30 minutes for ramekins and 45-55 minutes for cake pan. Let cool 3 minutes, then run a knife around pan sides to loosen clafouti (if using a cake pan). Dust top with powdered sugar; cut into wedges and serve.
CHERRY CLAFOUTIS RECIPE BY TASTY

- Preheat the oven to 350°F (180°C).
- Pit the cherries by placing them on top of an empty glass bottle, one at a time. Using a chopstick, push through the cherry to remove the pit. Set aside.
- In a medium bowl, mix together the flour, sugar, and salt. Add the eggs and stir well to combine. Add the half-and-half and vanilla and whisk until smooth.
- Melt the butter in an 8-inch (20 cm) cast-iron skillet over medium heat. Once the butter has melted, remove the pan from the heat.
- Spread the cherries evenly in the pan. Pour the batter over the cherries.
- Bake for 40-45 minutes, until the clafoutis is golden brown and firm to the touch.
- Dust the powdered sugar on top.
- Enjoy!

- Preheat oven to 425 degrees F.
- In mixing bowl, combine cherries, flour and sugar; toss to coat evenly.
- Place in 8" square pan and bake for 25-30 minutes until bubbly.
- Meanwhile, sift flour into bowl; add baking powder, soda, and salt; and cut in chilled butter with pastry blender or 2 knives. When pea-sized texture, add buttermilk -all at once- stir just to blend.
- DO NOT OVERMIX; dough will be tough.
- When cherries are finished baking, remove from oven, drop dough by large spoonsful over cherries, and sprinkle lightly with granulated sugar.
- Return to oven for 25-30 minutes or until topping is done and golden brown.
- Serve hot or cool with whipped cream.

CHERRY CLAFOUTIS
This classic French dessert looks fancy, but it is a cinch to make. I use yogurt in my clafoutis, although it isn't traditional (the French use cream). And I always enjoy leftovers for breakfast.

Steps:
- Toss the cherries with the kirsch and 2 tablespoons of the sugar, and let sit for 30 minutes. Drain over a bowl.
- Preheat the oven to 375 degrees. Butter a 10- or 10 1/2-inch ceramic tart pan or clafouti dish. Fill the dish with the drained cherries.
- In a medium bowl, beat the eggs with the remaining sugar and the seeds from the vanilla bean. Add the salt and the liquid from the cherries, and combine well. Slowly beat in the flour, and whisk until smooth. Add the yogurt and milk, and combine well. Pour over the cherries, scraping out all of the batter with a rubber spatula.
- Bake in the preheated oven for 30 to 40 minutes until the top is browned and the clafouti is firm and puffed. Press gently on the top in the middle to see if it's firm. If not, return to the oven for five minutes.
- Remove from the oven and cool on a rack. When the clafouti is warm or cool, sift on the powdered sugar. Serve warm or at room temperature.
