1 pound ground beef
6 medium potatoes, peeled and sliced
1 large onion, sliced
Salt and pepper to taste
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup milk
1/4 cup chopped green pepper

Steps:

  • In a skillet, cook beef over medium heat until no longer pink; drain. In a greased 13-in. x 9-in. baking dish, layer half of the potatoes, onion and beef; sprinkle with salt and pepper. Repeat layers. In a bowl, combine the soup, milk and green pepper; mix well. Pour over top. Cover and bake at 350° for 45 minutes. Uncover; bake 15 minutes longer or until potatoes are tender.

An old-fashioned comfort food dish -- this cheesy and creamy Hamburger Potato Casserole is an easy dinner that the whole family can agree on!

1 cup crushed Corn Flakes cereal ((about 1 ¾ cups whole cereal before crushing))
2 tablespoons melted butter
1 ½ lbs. ground beef
1 medium onion, diced
1 medium stalk celery, diced
1 (15 ounce) can corn, drained
1 (10.5 ounce) can condensed cream of mushroom soup
1 (10.5 ounce) can condensed cream of celery soup
1 cup milk
2 lbs. (about 4 medium) russet potatoes, peeled and thinly sliced (less than ¼-inch thick)
8 ounces (about 2 cups) grated cheddar cheese
Optional garnish: chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F. Grease a 9 x 13-inch baking dish; set aside.
  • Combine crushed Corn Flakes with melted butter in a small bowl; set aside.
  • Cook the beef, onion and celery in a large skillet over medium-high heat until the beef is no longer pink; drain. Stir in the corn.
  • In a bowl, whisk together condensed soups and milk.
  • In the prepared baking dish, spread half of the beef mixture in an even layer. Add half of the potatoes on top and season with salt and pepper. Pour half of the soup mixture over top and sprinkle with half of the cheese. Repeat layers once more, ending with the cheese on top.
  • Cover with foil and bake 1 hour. Remove foil, sprinkle the buttered Corn Flakes on top, and return to the oven (uncovered) for about 10-15 more minutes (or until the topping is golden brown and the potatoes are tender). Garnish with fresh parsley just before serving.

3-1/2 teaspoons butter, divided
1 tablespoon all-purpose flour
1/4 teaspoon salt
Dash pepper
3/4 cup milk
1 cup sliced peeled potatoes
1 tablespoon finely chopped onion

Steps:

  • In a saucepan over medium heat, melt 3 teaspoons of butter. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Place half of the potatoes in a greased 2-cup baking dish; top with the onion and half of the sauce. Layer with remaining potatoes and sauce. Dot with remaining butter. Cover and bake at 350° for 30 minutes. Uncover; bake 30-40 minutes longer or until potatoes are tender.

3 lbs red potatoes, peeled and sliced 1/4-inch thick
1 lb lean ground beef
1/2 cup chopped sweet onion
4 tablespoons butter
1/4 cup flour
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 cups milk
2 cups sharp cheddar cheese, grated
1/2 cup unseasoned breadcrumbs

Steps:

  • Place the potatoes in a large saucepan with water to cover by 1 inch.
  • Add a generous pinch of salt and cook for 15 minutes, or until tender; do not overcook.
  • Drain the potatoes and arrange them in a 9 x 9 inch casserole dish.
  • While potatoes are cooking, in large skillet, combine the beef and onion and cook together over medium heat until the beef is browned and the onion softened, 12-15 minutes.
  • Pour off excess fat.
  • Preheat oven to 350 degrees.
  • Melt the butter in a medium saucepan and whisk in flour to make a roux.
  • Cook over medium heat, whisking constantly, until the mixture bubbles and the flour turns light brown in color.
  • Gradually whisk in the milk and continue to stir while cooking over medium heat.
  • When the mixture thickens, whisk in the salt and pepper, then stir in the cheese and browned beef.
  • Pour the ground beef mixture over the potatoes and bake the casserole for 20 minutes until heated through and bubbling.
  • Stir the casserole gently.
  • Sprinkle a little more cheddar cheese on top, if desired, and the bread crumbs on top of the casserole and bake until the crumbs are toasted, about 5 minutes longer.

3 cups peeled and thinly sliced potatoes
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup chopped onion
¾ cup milk
salt to taste
freshly ground pepper, to taste
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium skillet over medium heat, brown the ground beef; drain fat.
  • In a medium mixing bowl, combine cream of mushroom soup, onion, milk, salt and pepper to taste.

1/4 cup flour
2 cups milk
8 ounces shredded cheddar cheese
4 ounces brie cheese, rind removed (They now sell it without the rind)
1 teaspoon salt
1/2 teaspoon pepper
5 large potatoes, scrubbed and thinly sliced
2 small onions, thinly sliced
4 slices bacon, cooked till crisp crumbled

Steps:

  • Preheat oven 350 degrees Fahrenheit.
  • Melt butter and blend in flour; add milk cooking until slightly thickened (can be done in Microwave).
  • Add shredded cheese and brie until melted.
  • Butter pan and layer 1/2 the potatoes, onions, bacon bits, and sauce then add next layer. (You can do more layers if you want ending with sauce.).
  • Bake for 1 hour until tender.

1/2 cup chopped onion
1 teaspoon ground mustard
1 teaspoon salt
1/2 teaspoon coarsely ground pepper
2 garlic cloves, minced
1/4 cup all-purpose flour
2 cups whole milk
3 blocks (4 ounces each) sharp cheddar cheese, shredded and divided
1 block (4 ounces) Monterey Jack cheese, shredded
3 pounds russet potatoes, peeled and thinly sliced
3/4 cup dry bread crumbs
Minced chives, optional

Steps:

  • Preheat oven to 350°. In a Dutch oven, melt butter over medium heat. Add onion, mustard, salt and pepper; cook until onion is tender, 6-8 minutes. Add garlic; cook until fragrant. Whisk in flour; continue whisking 3-5 minutes., Whisk in milk; bring to a boil. Reduce heat; simmer, uncovered, until thickened slightly, 8-10 minutes. Gradually stir in 2 cups shredded cheddar cheese; stir in Monterey Jack cheese. Add potatoes and toss to coat.
