GERSCHUH'S RESTAURANT OLD FASHIONED SUGAR CREAM PIE

Steps:
- Preheat home oven to 350 degrees.
- Mix the sugar with the flour until completely blended. Add the salt and whipping cream.
- Blend the half-and-half with the yolks and stir into the sugar mixture, then add the vanilla.
- Just blend the mixture; do not beat it.
- Pour into an unbaked pie shell, distribute the cold, chopped butter evenly on top of the pie filling and sprinkle cinnamon on the top.
- Bake the pie until the filling is completely set when the pie is jiggled. Bake "until it bubbles through for 10 minutes." In a convection oven that takes and hour and 15 minutes. In the home oven start checking the pie after an hour.

- Preheat oven to 425 degrees F (220 degrees C).
- In a bowl combine apples, sugar, flour, cinnamon, nutmeg and salt. Place mixture in a pastry-lined 9 inch pie plate. Dot with butter and adjust top crust that has been vented.
- Place in oven and bake at 425 degrees F (220 degrees C) for 10 minutes. Turn oven temperature down to 275-300 degrees F (135-150 degrees C) and bake 40-50 minutes or until crust is golden brown and apples are tender. Let cool and serve.

This was my great aunt's recipe. My aunt uses the recipe often and modernized it for today's lifestyle (hence the microwave). Simple ingredients and little effort with down-home results.

Steps:
- Mix sugar, cornstarch and salt together in a microwavable bowl and stir in the milk.
- Microwave for 9 minutes, stopping to stir every 3 minutes.
- The object is to cook until it achieves a thick, pudding-like consistency, so it may take more or less time dependent upon the individual microwave.
- This can also be performed in a saucepan on the stovetop.
- Add the butter and vanilla into the mixture.
- Pour the thick mixture into the baked 8 inch pie shell and sprinkle the top with cinnamon.
- Serve at room temperature.

- Preheat oven to 450 degrees F.
- Line a 9-inch pie pan with rolled out dough, prick all over with a fork, then press a piece of heavy-duty foil snugly into the pie shell.
- Bake for about 6 minutes, remove the foil and bake about 4 minutes more until just beginning to brown.
- Remove from oven and reduce heat to 350 degrees.
- Sift the sugar, flour and salt into a bowl, and stir with a fork; mix well.
- Pour the sugar mixture into the pie shell and spread evenly over the bottom.
- Pour cream over the sugar mixture, completely covering.
- Dab the softened butter in bits over the cream.
- Sprinkle the nutmeg evenly over the top.
- Bake at 350 degrees for 45 minutes or until golden spots form on top.
- This may take as long as an hour.
- The filling will seem liquid but will become more firm as it cools.

OLD FASHIONED CARAMEL PIE
This pie is made mostly the old fashioned way. I caramelize the sugar in an iron skillet, but I make the rest of the filling in the microwave. My mom taught me to make this. She just dumps the ingredients in, though, so I had to make her let me measure before she "dumped" so I could write down the recipe. This recipe sounds long and involved, but is really easy. I do it from memory now. My kids won't even try caramel pie from a restaurant. They say they can tell by looking at restaurant caramel pies that they won't be as good!

- Leave oven on from baking pie shells. Whisk together the 1-2/3 cups sugar and cornstarch in a large (at least 2 qt.) microwaveable bowl until there are no more lumps from the cornstarch. Pour the milk into the sugar mixture and whisk together until smooth. Add the butter to the top of the mixture.
- Microwave on high for 3 minutes. Whisk thoroughly. Microwave for 3 more minutes, whisk again. Have the egg yolks in a separate bowl. Beat them slightly. Add a tablespoon full of the hot mixture at a time to the egg yolks, stirring well after each addition. Do this until the yolk mixture is warm. (This will keep it from getting lumpy.) Then add the yolk mixture to the cooked mixture. Microwave in one minute increments, whisking each time, until the mixture is of pudding consistency. Whisk in the vanilla. Set aside.
- Put the 2/3 cup sugar into a small iron skillet. Cook, stirring constantly, on high until brown and bubbling. It will look like it's going to boil over. Pour IMMEDIATELY into cooked filling and whisk thoroughly. Divide between the 2 pie shells.
- Beat the egg whites and cream of tartar (if using) until foamy and slightly holding shape. Turn beaters on low speed. Add the 3/4 cup sugar. After sugar is mixed in, turn beaters on high again. Beat until meringue is hard to shake off a spoon (or it stays on beater when you turn off mixer and pull beaters out of bowl). Spread meringue onto filling all the way to the edges.
- Bake about 10 minutes or until brown. Watch closely. Turn off oven, open oven door slightly, and let pies cool in oven for 1 hour. Let pies cool completely on counter. Spray plastic wrap with Pam, cover pies and refrigerate.
