This recipe has been a family favorite for years. It's just as good room temp as it is warm, and even better the second day!

Number Of Ingredients 8

1/3 cup butter
2 eggs, beaten
1 cup sour cream
1 teaspoon salt
1 teaspoon pepper
1 (15 1/4 ounce) can whole kernel corn
1 (14 3/4 ounce) can creamed corn
1 (8 ounce) box Jiffy corn muffin mix (or equivalent)

Steps:

  • Use a 9 x 9 pan for the basic recipe, larger if doubling recipe.
  • Spray pan with Pam or grease the pan in some other way.
  • Mix all ingredients in a bowl until the batter is smooth.
  • Bake at 350 for 45 minutes.
  • Note: This is often not done cooking immediately. If the middle still jiggles, turn the over off and put the pan in oven while it is cooling down.

1 cup unbleached flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup yellow cornmeal
1 cup milk
2 eggs
1/4 cup honey or 1/4 cup maple syrup
1/4 cup butter

Steps:

  • Preheat oven to 425 degrees F.
  • Sift together the flour, baking powder and salt.
  • Add the cornmeal and stir until well mixed.
  • In a second bowl, combine the milk, eggs, and honey or maple syrup.
  • Melt the butter and add it to our second bowl, mixing well.
  • Combine the dry and liquid ingredients and mix well.
  • Pour the batter into an oiled 8in square baking pan and bake for about 20 minutes or until done in the centre and lightly browned.
  • To test for doneness, insert a toothpick into the centre; If it comes out dry, the corn bread is done.

2 c 2 cups yellow self rising cornmeal
1/2 tsp salt
2 c boiling water
1/2 tsp garlic powder
1/2 c chopped green onions
10 pickled jalapeno rings chopped fine
11/2 c vegetable oil + 1/4 cup bacon drippings for frying

Steps:

  • 1. Heat enough oil in a large heavy bottom skillet on high heat.
  • 2. In a medium bowl, mix together cornmeal and salt. Stir in enough boiling hot water that the cornmeal mixture comes together enough to spoon (not too thick and not too thin.
  • 3. When your oil is hot but,not smoking,you can either spoon your mix in the oil or shape each piece.Fry in oil about 5 minutes depending on how think the cakes only flip once.you want them to be golden and crispy.They absorb alot of oil so be sure to drain on paper towels.
  • 4. Note: These little gems are good served with beans.I make them when I have beans and fried chicken.

This is my mother's recipe. It was on the menu at every cafe she cooked. This cornbread has a great crisp crust yet the inside is soft and tender. It is a perfect accompaniment to soups, stews and the southern standard, "a big ole pot of brown beans."

1 cup all-purpose flour
1 cup cornmeal, my mother used stoneground but any is fine (not mix)
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1 -3 tablespoon sugar, depending on how sweet you like it
1 1/4 cups buttermilk
1 large egg
1/4 cup corn oil
3 tablespoons butter

Steps:

  • Preheat oven to 375 In a large bowl, combine flour, cornmeal, baking powder, salt, baking soda, and sugar.
  • (If baking powder or soda appear at all lumpy, sift them in).
  • Stir well to combine.
  • In a small bowl, whisk together buttermilk, egg, and oil.
  • Place the butter in a 9 or 10 inch skillet and place in the oven and heat until the butter melts and is sizzling seriously.
  • Tilt the pan to coat the sides of the skillet.
  • As the butter's melting, quickly pour the wet ingredients into the dry, and, using a wooden spoon, stir the wet and dry together with as few strokes as possible--- only as many as are needed to combine the two.
  • Don't beat it!
  • Scrape the batter into the hot, buttery skillet.
  • It should sizzle.
  • Place it in the oven immediately.
  • Bake until golden brown on top, about 25 to 30 minutes.

1 bag marie callenders corn bread mix
1 box jiffy yellow cake mix
2 cups water
1 egg
2 capfuls vanilla extract
1 stick butter, melted
1/4 cup honey

Steps:

  • 1. Spray 9x13 pan with cooking spray, or grease. Heat oven to 350.
  • 2. In medium bowl, combine mixes, water, egg, and vanilla. Stir to mix well. Pour into prepared pan. Bake at 350 for 30-35 minutes. Bread will be light golden brown, and toothpick comes out clean.
  • 3. While bread is baking, melt butter. Add honey. Mix well. As soon as bred comes out of the oven, pour butter honey mixture on bread. Spread to reach corners. Serve while warm. We like ot heat the leftovers in the microwave for 15 seconds. Just like fresh out of the oven.

1 cup cornmeal
1/2 cup flour
1 teaspoon salt
1 teaspoon sugar
1/2 cup milk
1/2 cup boiling water
3 tablespoons corn oil
1 egg
1 1/2 teaspoons baking powder

Steps:

  • Grease an 8-inch round or square baking pan (or, for more authenticity, a cast iron skillet). Preheat oven to 425. Place pan in oven to preheat.
  • Combine cornmeal, flour, salt, and sugar in mixing bowl. Add corn oil and use a cutting motion with spoon so that oil will be well blended with other ingredients. Add the boiling water and mix well.
  • Add cold milk and stir. Let stand for a few minutes until batter has cooled to room temperature.
  • Mix in egg and then baking powder; beat briskly.
  • Remove preheated pan from oven and pour in batter. Bake until lightly browned (approx. 20 minutes).

1/2 cup milk
1 egg
1 (8 1/2 ounce) box Jiffy cornbread mix
1 1/4 cups unbleached flour
1 1/2 teaspoons bread machine yeast
1/4 cup butter
1/4 cup cornmeal (optional)

Steps:

  • Heat milk to lukewarm. Add to bread-machine pan along with the egg, cornbread mix, flour, and yeast. Set on "Dough" cycle.
  • When complete, remove dough to floured surface. Roll into 15 x 8-inch rectangle.
  • Cut ¾-inch strips the short way. (See picture above.) Dip in butter, then cornmeal, if desired. Knock off excess cornmeal. Twist and lay onto greased cookie sheet or silicone mat. Don't crowd. I use two cookie sheets.
  • Cover twists and set in warm place to rise about 30 minutes.
  • Preheat oven to 375 degrees.
  • Bake 12-15 minutes until golden.
