3 cups powdered sugar
1/4 cup whole milk, at room temperature
1 teaspoon pure vanilla extract

Steps:

  • In a medium bowl, using an electric hand mixer, beat the butter until light and smooth. Beat in the powdered sugar, milk and vanilla until smooth and creamy.

  • Beat 4 sticks softened butter and 1/2 teaspoon salt in a large bowl with a mixer on medium-high speed until smooth and fluffy.
  • Reduce the speed to low and beat in 5 cups confectioners' sugar, 1 cup at a time, increasing the speed to medium high between each addition. Add 1/4 cup milk and 1 tablespoon vanilla and beat until smooth.

  • Beat 3 sticks softened butter and a pinch of salt with a mixer on medium-high speed until fluffy, 2 minutes. Gradually beat in 4 cups confectioners' sugar on low speed until combined.
  • Add 1 tablespoon vanilla and beat on medium-high speed until fluffy, about 3 minutes. Beat in 3 tablespoons milk until combined, 1 to 2 more minutes.
  • Spread the frosting on the cake. Refrigerate 30 minutes before serving.

1/2 cup plus 1 tablespoon whole milk, at room temperature
1 tablespoon plus 3/4 teaspoon vanilla extract, at room temperature
1 1/2 tablespoons freshly squeezed lemon juice, at room temperature
1/2 teaspoon finely grated lemon zest
1 1/2 pounds unsalted butter, at room temperature
4 1/2 cups confectioner's sugar

Steps:

  • In a small bowl, whisk together the milk, vanilla, lemon juice, and zest.
  • In a standing mixer fitted with the paddle attachment, or with a hand-held electric mixer and a bowl, combine the butter and sugar and mix on low until incorporated. Raise the speed to high and mix until light and fluffy, about 10 minutes. (Occasionally turn the mixer off, and scrape the sides of the bowl down with a rubber spatula.)
  • Reduce the speed of the mixer to low. Add the milk mixture in 3 batches, waiting for each batch to be fully incorporated before adding the next (scrape the bowl down occasionally). Raise the speed to high and mix briefly until fluffy. Use as desired. May be stored, covered, in the refrigerator for 3 days.

  • Add vanilla and cream and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.

2 egg whites, at room temperature
1/4 teaspoon salt
1/4 cup sugar
3/4 cup light corn syrup
1 teaspoon pure vanilla extract

Steps:

  • Use a stand mixer. It will change your life. You can make this using a hand mixer, but it just takes time. In a clean bowl (any grease on your bowl or utensils will ruin the icing -- egg whites hate grease!), beat the egg whites and salt on high speed until foamy.
  • With the mixer still running, slowly add the sugar. Beat mixture until soft peaks form (when you pull the mixer out of the white mixture, you should get a little point that bends over).
  • Bring the corn syrup to a boil over medium heat in a small saucepan. When the corn syrup comes to a boil, remove from heat.
  • Slowly pour the hot corn syrup into the egg mixture while your mixer is mixing on high. Beat the mixture until stiff peaks form, about 5 minutes. Add the vanilla, and mix to combine.
  • Use right away.

  • Beat the icing sugar and butter together in free standing electric mixer with a paddle attachment (or use a hand held electric whisk) on medium-slow speed until the mixture comes together and is well mixed.
  • Turn the mixer down to speed.Combine the milk egg and vanilla bean paste/vanilla extract in a seperate bowl ,then add a couple of teaspoons at a time .
  • Once all the milk has been incorperated, turn the mixer up to high speed.Continue beating until the frosting is light and fluffy , at least 5 minutes .The longer the frosting is beaten , the fluffier and lighter it becomes.
