- In a large bowl, combine the flour, sugar cocoa, baking powder and baking soda. Beat in mayonnaise and water. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Spread with frosting.

Steps:
- Preheat oven to 350 degrees F and grease 2-9 inch pans (I use Wilton cake release)
- In a large bowl, combine flour, baking soda, baking powder, cocoa and sugar. Stir in mayonnaise.
- Gradually add water and vanilla to flour mixture and blend until smooth. Pour cake batter into prepared pans.
- Bake at 350 degrees F for 30 minutes or until cake tester comes out clean.
- Cool, then remove from pans onto wire rack. Frost with your favorite chocolate frosting (see my recommended frosting)

- Preheat oven to 350
- In a small bowl mix together flour, baking soda, baking powder, and cocoa.
- In a large bowl mix together sugar, eggs, and vanilla on high speed for 3-4 minutes until light and creamy.
- Add in mayonnaise to the egg and sugar mixture Continue blending on low speed
- Begin adding in flour mixture and alternate with water. Make sure you add the flour last.
- Grease a 9x13" baking pan.
- Bake for 40 minutes or until a toothpick comes out clean.
- Remove and allow to cool about 1 hour.
- Top with your favorite frosting or use the cool whip topping below.
- Using an electric mixer
- Add, cream, cocoa, sugar, and vanilla
- Beat at a high speed for about 5 minutes or until forms a peak.
- Spread over your cake

- Preheat oven to 350 degrees F. Mix first 5 ingredients. In a separate large container, add the baking soda into hot water. Water will rise and fizz so be sure container is large. Slowly fold the soda water into the cake mixture and mix well. Add flour a little at a time while stirring, mix well but do not beat. Pour into a greased and floured 11x15 or 9x13 cake pan and bake about 30-35 minutes. Let cool and enjoy.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. In a saucepan, melt 1 cup of butter. Stir in 1 cup water and 4 tablespoons cocoa powder. Remove from heat and set aside.
- In a medium bowl, dissolve the baking soda in 1/2 cup of buttermilk. Stir in the eggs and vanilla. Mix in the cooled cocoa mixture.
- In a large bowl, sift together the flour, sugar, cinnamon and salt. Make a well in the center and pour in the cocoa buttermilk mixture. Stir until blended. Pour batter into prepared pan. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Ice the cake with Buttermilk Pecan Icing while it's still warm.
- For the icing: In a large saucepan, melt 1/2 cup butter with 4 tablespoons cocoa. Stir in 1/3 cup buttermilk, and heat until almost boiling. Stir in confectioners' sugar, vanilla, salt and pecans. Remove from heat. Mix well and pour over warm cake.

- Grease a 9x13" pan. Combine all the dry ingredients (flour through salt). Combine the milk with the vanilla and the well beaten eggs. Add, to the dry ingredients, the milk mixture along with the mayonnaise and the coffee with the melted dark chocolate and mix well.
- Pour into greased pan and bake in preheated 350 degrees F oven for 45 minutes. When completely cool, spread with chocolate frosting (recipe below).
- Frosting
- In small bowl, beat butter. Add powdered sugar and cocoa alternately with coffee. Add vanilla; beat until smooth and a spreading consistency is achieved.

This a very moist, chocolate,rich goodness. I adopted this recipe from Barbara McNeil of NW FL and also my mother. I tweaked the two recipes and made an adaptation of an oldie but goldie.

- Sift dry ingredients together. Mix mayo and sugar. Alternate mixing mayo mix, dry ingredients and water til blended well. Then add vanilla and mix well. Pour into 9x13 greased sheet pan. Bake until toothpick comes clean. Bake @ 350 for 15-20 min or when the toothpick comes out clean. Determine by your oven.
- While cooling mix your topping. In small boiler add sugar, evap. milk, cocoa and butter. Boil, stirring costantly, for 3 min. Then add vanilla and pinch of salt--mix well. Add nuts if you choose.
- With butter knife make poke holes in cake to absorb topping. Pour topping into center of cake spreading all over and over the edges. Let sit till cools. Eat!
