OLD ENGLISH CORNISH PASTIES



Old English Cornish Pasties image

These are great especially for packed lunches or light dinner. They freeze really well so you can make them ahead and have them handy. Just heat them up and enjoy.

Number Of Ingredients 13

2 cups flour
1 pinch salt
3 ounces lard or 3 ounces shortening
1/3-1/2 cup water
1/4 lb beef or 1/4 lb chicken liver
1 celery rib
1/2 ground beef
1 small carrot
salt & pepper
1 small turnip
2 potatoes, raw sliced
1 egg, beaten
1 small onion

Steps:

  • Mix flour and lard, then add salt and water. Work into smooth dough and rest under a cover or in fridge for 30 minutes.
  • Meanwhile, prepare the filling:.
  • Chop liver coarsely in a blender and mix with beef.
  • Add salt and pepper and let rest for 10-20 minutes.
  • Peel onion and pare potatoes, carrot and turnip; slice thinly, and blanch in boiling water for 2-3 minutes with thinly sliced celery.
  • Drain and season with salt and pepper.
  • Roll out dough to 1/8 inch thickness; cut into 3 large squares.
  • Put a layer of vegetables on half of each square and top it with meat mixture.
  • Brush edges of dough with egg and fold plain half over the meat.
  • Pinch edges together tightly.
  • Bake for 1 hour: first for 2-3 minutes at 400°F, then at 325°F for 1 hour.

  • Cornish Pasty. We couldn’t start the list without referring to the revered Cornish pasty now, could we? The Cornish pasty is a traditional Cornish food that has been eaten by miners for centuries (the earliest literary mention of the pasty is in Chaucer’s Canterbury Tales, which was written in the 14th century – so it has quite the pedigree).
  • Cornish Cream Tea with Clotted Cream. The second Cornish dish in our list is a contentious one – the cream tea. A staple of the South West, the cream tea consists of a scone filled with clotted cream and fruity jam, accompanied by a pot of tea.
  • Stargazy Pie. An iconic dish in Cornish culture, Stargazy pie (or Starrey gazey pie) allegedly dates back to Mousehole in the 16th century. The pie is made from pilchards (or sardines), spices and pastry, with the pilchards’ heads sticking out of the crust, as though looking at the stars.
  • Cornish Yarg. Cornwall produces a vast amount of cheese – 60 varieties to be exact – but the most well known would be Cornish Yarg. Cornish Yarg is a semi-hard cheese made from cow’s milk.
  • Pilchards. Mining and fishing were the backbones of Cornish industry for centuries. When it comes to the latter, pilchards in particular were what Cornish fishing fleets were famous for.
  • Saffron Bun. Saffron buns are fairly similar to other tea cakes found throughout Britain; a bun delicious bun with plenty of currants. The main difference with Cornish saffron buns is that this particular tea cake is made with the spice saffron.
  • Hevva Cake (Heavy Cake) Hevva Cake, sometimes known as ‘heavy cake’, is a traditional Cornish treat that dates back to the days of the Pilchard industry.
  • Cornish Fairings. Cornish fairings are traditional ginger biscuits from Cornwall. They were popular sweet snacks that you would buy for children or sweethearts at fairs, made out of butter, flour, caster sugar, combined with mixed spice, ginger, cinnamon and golden syrup.
  • Newlyn Crab. You can sample freshly caught at many fishing ports along the Cornish Coast, but there is something extra special about Newlyn Crab. Newlyn is a small settlement close to the bustling town of Penzance, in West Cornwall.
