These shrimp marinate for only 30 minutes in a flavorful mix of lemon juice, garlic and the powerhouse spice blend, Old Bay seafood seasoning. Don't be tempted to let them sit in the sauce any longer than that because the lemon juice will start to cook the shrimp and make them tough. Serve with some boiled or roasted potatoes for a grill-lover's version of a shrimp boil.

1 large lemon
2 large cloves garlic
1 tablespoon seafood seasoning, such as Old Bay
2 tablespoons extra-virgin olive oil
1 pound jumbo shrimp (16/20), peeled and deveined
Hot sauce, for serving

Steps:

  • Juice half of the lemon and add the juice to a medium glass bowl. Finely grate the garlic and add to the bowl along with the Old Bay seasoning, olive oil and shrimp. Toss to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lemon half into wedges and reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.
  • Serve the shrimp with the reserved lemon wedges and hot sauce.

32 shell-on (21 to 25 count) tiger shrimp
1/4 cup kosher salt
1/4 cup sugar
1 cup water
2 cups ice
1 (14 1/2-ounce) can diced tomatoes, drained
1/2 cup prepared chili sauce
4 tablespoons prepared horseradish
1 teaspoon sugar
Few grinds fresh black pepper
1/2 teaspoon kosher salt
1 tablespoon olive oil
Sprinkle Old Bay seasoning

Steps:

  • Using a pair of scissors or a serrated knife, make an incision down the backside of the shrimp, following the intestinal track. Eviscerate shrimp and rinse under cool water leaving shells intact.
  • Place cleaned shrimp into a bowl with brine and refrigerate mixture for 20 to 25 minutes. While shrimp are brining, place tomatoes, chili sauce, horseradish, sugar, pepper, and salt in food processor and blend until smooth. Refrigerate cocktail sauce until ready to serve.
  • Place a baking sheet or broiler pan under oven broiler and preheat for 5 minutes. Remove shrimp from brine and drain thoroughly. Rinse the shrimp under cold water and dry on paper towels. In a large bowl, toss shrimp with olive oil and sprinkle with Old Bay seasoning, if desired.
  • Place shrimp onto a sizzling sheet pan and return to broiler immediately. After 2 minutes, turn the shrimp with a pair of tongs. Return the shrimp to broiler for 1 minute. Transfer to a cold cookie sheet. Refrigerate immediately.
  • Once shrimp have chilled, arrange with cocktail sauce in a martini glass or as desired.

While the shrimp cook, combine the ketchup, lemon juice, horseradish, and sriracha. Taste and adjust the spice level to your preference. Serve with the shrimp.

30 jumbo shrimp - uncooked with tail on
2 tablespoons butter
1/2 tablespoon paprika
1/2 tablespoon garlic powder
1/2 tablespoon Old Bay
1/4 teaspoon salt +/- to your taste
1/2 a lemon
a sprinkle of red pepper flake (optional)
about 10 tablespoons of cocktail sauce for dipping
10 long toothpicks
10 tall parfait containers - I purchased plastic from Amazon

Steps:

  • In a large skillet over medium-high heat melt the butter.
  • Place the shrimp on paper towels, pat to dry. Sprinkle with the paprika, garlic powder, Old Bay and salt. place the shrimp (seasoning side down) in the hot butter. Sprinkle the other side with the seasonings.
  • Cook on each side for about 2 minutes. Remove from heat and thread 3 shrimp on each toothpick.
  • Place about 1 tablespoon of the cocktail sauce in the bottom of each parfait container and place the skewered shrimp in the parfait container. Repeat with the remaining shrimp.

2 tablespoons Old Bay Seasoning

Steps:

  • Rinse and peel the shells from the shrimp, leaving the tails intact.
  • Add the water, cider vinegar, and old bay seasoning to a large stockpot and bring to a boil over medium high heat.
  • Add the shrimp to the boiling water solution and simmer for 3 minutes, or until the shrimp turn pink and is no longer opaque.
  • Drain cooking liquid from the shrimp and allow to cool.
  • Pour contents of pot onto a large platter and garnish with lemon wedges, fresh parsley, and sprinkle with additional old bay seasoning if desired.
  • Chill until ready to serve.

1 lemon, halved
1 onion, roughly chopped
3 garlic cloves, peeled and smashed
1 tbsp. Old Bay Seasoning
1 bay leaf
2 tsp. kosher salt
1 tsp. black peppercorns
2 lb. large shrimp, peeled and deveined (thawed if frozen)
1 c. ketchup
2 tbsp. prepared horseradish
1 tsp. hot sauce
3 dashes of Worcestershire sauce
1/2 tsp. kosher salt
1/2 tsp. black pepper

Steps:

  • For the shrimp: Fill a large pot with 8 cups cold water. Squeeze in the lemon juice, then add the lemon halves. Add the onion, garlic, Old Bay, bay leaf, salt and peppercorns and bring to a simmer over medium heat; cook for 20 minutes. Scoop out the solids and return the liquid to a simmer.
  • Fill a large bowl halfway with ice. Add 3 cups of water and place a smaller bowl inside (but don't let the water get in the smaller bowl!).
  • Add the shrimp to the pot with the simmering liquid and stir, then cover and turn off the heat. Let sit until the shrimp are pink, curled and opaque throughout, 3 minutes for smaller shrimp and 4 minutes for larger shrimp. Using a slotted spoon, transfer the shrimp to the bowl set over the ice bath. Gently stir every few minutes to cool down the shrimp. Once they're no longer steaming, put the shrimp on a platter and refrigerate until cold, at least 30 minutes.
  • Meanwhile, for the cocktail sauce: Stir the ketchup, horseradish, hot sauce, Worcestershire sauce, salt and pepper in a small bowl. Chill at least 30 minutes before serving. Serve with the shrimp.

  • In a large bowl, combine shrimp, olive oil, kosher salt, and Old Bay seasoning. Toss to combine.
  • Place beer and water in a skillet or pot, then heat over high heat until rapidly boiling. Turn heat down to a simmer.
