Super soft, chewy and fresh tasting Molasses cookies. I always prefer to under bake cookies so they're soft but if you prefer a crisper version, just add a few minutes to the baking time

12 tablespoons of softened butter
1/3 cup sugar, plus additional for rolling
1/3 cup brown sugar
1 egg
1 teaspoon vanilla
1/2 cup molasses
2 1/2 cups flour (half whole wheat is especially good!)
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice
1/4 teaspoon finely ground black pepper
1/4 teaspoon salt

Steps:

  • Cream together butter and sugars. Add egg, vanilla and molasses and continue beating until incorporated.
  • Stir dry ingredients together in a separate bowl; then add to creamed mixture. Mix together. The dough will be soft; add a little extra flour if you like. Watch the video for tips on this: https://www.youtube.com/watch?v=rM21ykIsqUA.
  • Roll the cookie dough into one inch balls. Roll the balls in additional sugar and place on baking sheet. Bake at 375 degrees for 8-10 minutes.
  • Let cool on the baking sheet for a couple minutes and remove to wire rack to continue cooling.

2 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
3/4-1 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/4 teaspoon cayenne pepper or 1/4 teaspoon dried chipotle powder
1/2 teaspoon salt
1/2 cup vegetable shortening, at room temperature
1/4 cup unsalted butter, softened
1 cup packed dark brown sugar
1 large egg
1/2 cup grandma's molasses
granulated sugar

Steps:

  • Whisk together flour, baking soda, cinnamon, ginger, allspice, cloves, pepper, and salt in a bowl until combined.
  • Beat together shortening, butter, and brown sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes in a stand mixer (preferably fitted with paddle attachment) or 6 minutes with a handheld. Add egg and molasses, beating until combined. Reduce speed to low, then mix in flour mixture until combined.
  • Put oven racks in upper and lower thirds of oven and preheat to 375°F.
  • Roll 1 heaping teaspoon of dough into a 1-inch ball with wet hands, then dip 1 end of ball in sanding sugar. Make more cookies in same manner, arranging them, sugared side up, 2 inches apart on two ungreased baking sheets.
  • Bake cookies, switching position of sheets halfway through baking, until undersides are golden brown, 10 to 12 minutes total, then cool on sheets 1 minute. Transfer to racks to cool completely.

2 1/2 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 teaspoon ground white pepper
1 cup vegetable shortening
1 cup firmly packed dark or light brown sugar
1 egg, at room temperature
1/4 cup dark or light molasses
1 teaspoon vanilla extract
1/3 cup granulated sugar
water for sprinkling

Steps:

  • 1. Into a medium bowl, sift the flour, baking soda, salt, ginger, cinnamon, cloves, and white pepper, if desired, then lightly whisk and set aside.2. In a stand mixer or with a hand mixer set on low speed, beat the shortening until creamy, about 30 seconds. On medium speed, beat in the brown sugar until smooth and lump free. Beat in the egg until well blended, scraping down the sides and bottom of the bowl as necessary. Beat in the molasses and vanilla until blended. Turn off the mixer, add half the flour mixture, and beat on low speed until blended. Add the remaining flour, and beat until blended. Scrape down the dough, cover the bowl with plastic wrap, and chill for at least 1 hour.3. Preheat the oven to 375ºF. Line a baking sheet with parchment paper or leave ungreased. Remove the dough from the refrigerator and, if needed, soften slightly for easier handling. Place the granulated sugar in a small bowl.4. Using a tablespoon measure, scoop out some dough and roll it between your hands to form a 11/2-inch ball (if the dough sticks to your hands, keep a bowl of cold water nearby and occasionally dip your hands in, shaking off the excess). Drop the ball into the sugar, roll to coat, and place on the baking sheet. Repeat with the remaining batter, placing the cookies 2 inches apart. Sprinkle or mist each cookie with water.5. Bake until the tops are firm when lightly touched, about 10 minutes. For a crunchier cookie, bake for about 12 minutes. Let the cookies firm and cool slightly on the baking sheet before transferring to a rack to cool completely.Variation For Grandmother'sGrown-Up Glaze, while the cookies cool slightly but are still warm on the baking sheet, whisk together 1 cup powdered sugar with 3 to 4 tablespoons Grand Marnier or another orange-flavored liqueur. The zing of ginger and the sweetness of molasses combine in perfect proportions in this cookie, sent to us by Jane Booth Vollers of Chester, Connecticut. Her grandmother, Helen Dougherty, made batches and batches of them every holiday season.

2 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup vegetable shortening at room temperature
1/2 stick (1/4 cup) unsalted butter, softened
1 cup packed dark brown sugar
1 large egg
1/2 cup molasses (not robust or blackstrap)
About 1/3 cup sanding or granulated sugar* for tops of cookies

Steps:

  • Whisk together flour, baking soda, cinnamon, ginger, allspice, cloves, and salt in a bowl until combined.
  • Beat together shortening, butter, and brown sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 3 minutes in a stand mixer (preferably fitted with paddle attachment) or 6 minutes with a handheld. This is another one of my Grandma's cookie recipes. She'd serve these along with an assortment of other cookies at Christmas.

3/4 cup shortening (she always used Crisco)
1 cup brown sugar (packed)
1 egg
1/4 cup molasses
2 cups flour (sifted)
2 teaspoons baking soda
1/4 teaspoon salt
1/2 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 cup granulated sugar (approximately)

Steps:

  • Thoroughly mix wet ingredients together - - shortening, sugar, egg and molasses.
  • Blend all dry ingredients together and then stir into the wet ingredients.
  • Chill cookie dough for 1 hour.
  • Heat oven to 350 degrees.
  • Roll dough into balls the size of large walnuts.
  • Dip tips of balls into sugar.
  • Place, sugared side up, 3" apart on a greased baking sheet.
  • Bake 10 to 12 minutes.
