OKRA AND TOMATOES
This is the BEST thing My Mother in law makes and I can't wait for the okra to grow in the summer so I can pair garden fresh okra with garden sweet tomatoes! Yum! A Texas 1015 onion is best here but any sweet onion will do. If you can't get your hands on a sweet onion, try adding just a pinch- LARGE pinch of granulated sugar to the dish. I love to douse this with black pepper but please salt and pepper to taste. Cooked this way you will not have the SLIME issue! Enjoy!

Steps:
- Place all ingredients in a dutch oven and cook over over medium heat until onion and okra is just crisp tender or done to your liking. (Note: USE the juice from the tomatoes as well.).
- Taste and add salt and pepper as desired.
- NOTE: Do not salt before the okra and onion are done to your liking. The salt seems to add to the slime. Also, stir only as much as you need The more you stir the slimier it can get.
- Serve with Hot Sauce if desired.
- OAMC NOTE: This freezes well in any quantity desired. Simply reheat when needed.

- In a heavy bottomed saute pan over medium-high heat, add the bacon. Render the bacon until crisp. Remove from pan and reserve. Add the onion and saute until tender, about 3 minutes.
- Add the okra and tomatoes, making sure to add the reserved juice from the tomatoes to the saute pan. Season with salt and pepper and simmer for 15 minutes.

MEDITERRANEAN-STYLE OKRA RECIPE
Okra and tomatoes prepared Mediterranean-style with onions, garlic, hot peppers, warm spices and a splash of lime juice. This quick-cooked vegan okra stew is the perfect combination of savory, tangy, and just a little bit spicy. You can use 1 or 2 jalapenos, depending on how spicy you like your food. And if you need it a little more tangy, add more lime juice!

- Heat the olive oil in a large skillet (or pan with a lid) over medium-high until shimmering but not smoking. Lower the heat to medium and add the onions, garlic and chopped jalapeno peppers. Cook for 4 to 5 minutes stirring regularly (do not let the garlic burn, if needed adjust heat).
- Add the okra and sautee for 5 to 7 minutes over medium-high heat.
- Season with kosher salt, black pepper and spices. Toss to coat.
- Add the crushed tomatoes and water. Stir to combine. Add the tomato slices on top. Bring to a boil, then turn the heat to low and cover most of the way (leave a little opening at the top). Let the okra simmer on low heat for 20 to 25 minutes or until the okra has softened. Uncover and add juice of ½ lime (more to your liking).
- Remove from heat and serve over rice or with warm pita bread.

SOUTHERN OKRA AND TOMATOES
This dish is a bit spicy, but oh so good. It's great to use that fresh summertime garden okra, tomatoes and fresh green onions. Serve the okra over rice; it makes a wonderful side dish.

- 1. Saute garlic, onions or leeks, and red pepper flakes in EVOO. Right before it begins to brown, add the tomatoes (with juice). Add broth, oregano, Old Bay and then the okra, add salt and black pepper to taste. Mix well, cover, and simmer over med. heat about 10 minutes. Serve over hot rice. NOTE: This recipe is a bit spicy, so add red pepper flakes to your taste or omit them altogether, if you prefer.

- Saute 4 smashed garlic cloves in 3 tablespoons olive oil over medium heat until golden. Add 4 cups okra (halved lengthwise) and 1 small onion (cut into wedges); season with salt and pepper and cook until the okra is tender and bright, 10 to 12 minutes. Add 1 pint halved cherry tomatoes; cook until just bursting, 3 minutes. Finish with a splash of cider vinegar.

- Preheat oven to 350 degrees.
- Season chicken thighs with salt and pepper.
- Heat the olive oil in a large skillet over medium high heat. Working in batches if needed, add the chicken skin side down to the pan. Sauté until the skin is browned, about 5 - 7 minutes. Remove chicken from pan and set aside.
- Add the okra to the pan and sauté about five minutes. Add garlic and sauté until fragrant, about 30 seconds to one minute.
- Add the chicken broth and the tomato paste to the pan. Stir tomato paste is completely dissolved. Add the tomatoes and herbs cook for 2 to 3 minutes. Season sauce with salt and pepper.
- Spread tomato sauce into the bottom of a 9 x 13 x 2-inch baking dish. Nestle the chicken thighs in the sauce. Bake for 40-45 minutes or until the meat's internal temperature reaches 170 degrees. Allow chicken to rest for 10-15 minutes before serving.
- Serve with tomato sauce drizzled over the top.

- Thaw the okra and slice the sausage into 1/2-inch slices.
- Cut chicken into bite-size pieces.
- Heat oil in a large Dutch oven.
- Add the sausage and cook over medium heat for 5 minutes.
- Add the chicken, sear both sides, and remove.
- Add the onion and the celery to the pan and cook until softened, about 5 minutes.
- Add the garlic and cook 1 minute.
- Drain the tomatoes, reserving the liquid, and add to the pan.

- Wash the tomatoes and okra under cool running water.
- Dice the onions.
- Place a skillet over Medium heat on your stove top.
- Add just enough oil to lightly coat the pan.
- Add bacon grease for seasoning if desired.
- When pan is hot, add the onions. Stir to coat with oil.
- Let the onions cook for several minutes while you prepare the tomatoes.
- Dice the tomatoes into larger sized pieces.
- Add the tomatoes to the skillet.
- Remove the ends from the okra and discard the pieces.
- Slice the okra pods into about ½ inch slices.
- Add the okra to the skillet.
- Add the black pepper, the salt and the sugar. Stir to combine.
- Reduce the heat slightly, and continue to stir and cook uncovered.
- Add a little warm water if needed to keep the vegetables moist.
- Cook until the okra is as tender as desired.
- Serve warm.

EASY OKRA AND TOMATOES (FRESH OR FROZEN)
Steps:
- Cook the bacon in a skillet on medium-high heat. Cook the bacon until crisp and remove the bacon and set aside.
- You can drain the fat from the bacon if you wish or leave it. I reserve at least a teaspoon of fat. Add the onions to the pan and saute for 3-4 minutes until fragrant.
- Add in the okra, diced tomatoes, and all of the seasonings. Stir.
- Reduce the heat to medium-low and cover the pot. Simmer for 15-20 minutes until the okra is soft.
- Open the pot and add the cooked bacon. Stir.
