Cheap and delicious, this soupy vegetarian curry goes wonderful with cooked rice. Anti-veggie eaters love this enough to go for seconds, and are surprised that 'okra tastes good!' Serve with rice.

2 tablespoons olive oil, divided
1 ½ cups frozen cut okra, thawed
¼ teaspoon black mustard seeds
3 curry leaves, or more to taste
1 medium onion, sliced
3 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes
2 teaspoons ground cumin
2 teaspoons salt, or to taste
1 teaspoon ground coriander
1 teaspoon ground turmeric
½ teaspoon ground black pepper
½ teaspoon red-pepper flakes, or to taste
2 ½ cups water
¼ cup chopped fresh cilantro
½ tablespoon tamarind concentrate

Steps:

  • Heat 1 tablespoon olive oil over medium heat in a large, deep skillet. Add okra and cook until the 'stickiness' of the okra is no longer visible and they begin to brown, about 10 minutes. Remove from heat and set cooked okra aside in a bowl.
  • Heat remaining tablespoon of olive oil over medium heat in the same skillet. Add mustard seeds and cook until the seeds pop and are fragrant, about 5 minutes; add curry leaves and cook until fragrant, about 30 seconds.
  • Stir in onions and garlic and cook until softened and brown, about 5 minutes. Mix in cooked okra and tomatoes; cook until they begin to stew, 3 to 5 minutes. Add cumin, salt, coriander, turmeric, and black pepper; mix well.
  • Pour in water and bring mixture to a boil. Reduce to a simmer and cook until thickened, 3 to 5 minutes. Remove from heat and stir in cilantro and tamarind concentrate. Serve.

I love okra but I don't like the slipperiness of it in several recipes. In this recipe, I pan-fry the okra first to seal the surface before adding it to liquids, which is when it seems to release its sliminess.

1/2 cup coconut milk
1 tablespoon tamarind paste (can omit)
1 1/2 lbs okra, rinsed and dried
2 garlic cloves
1 inch gingerroot
2 green chilies
1 large tomatoes, chopped
2 teaspoons coriander powder
1 teaspoon cumin powder
2 tablespoons vegetable oil
1/4 teaspoon turmeric powder
salt
1/2 teaspoon garam masala
cilantro, to garnish

Steps:

  • Slice okra into 1/2-inch pieces and brown in skillet for 8-10 minutes (you may need to add a dab of oil if it sticks to your skillet).
  • In a blender, process the ginger, garlic chilies, tomato, coconut milk, tamarind, coriander and cumin until they form a smooth paste.
  • Heat the oil, add the this processed paste, and cook until golden brown, about 6-8mins.
  • Add the turmeric and salt to taste.
  • Add 1/4cup water, bring to a boil and simmer until the gracy thickens to your liking.
  • Mix in the okra and simmer another 5min or so to infuse flavors.
  • Sprinkle with garam masala, some cilantro and serve.

½ pound fresh okra
3 tablespoons vegetable oil, divided
½ pound potatoes, peeled and diced, or more to taste
1 teaspoon cumin seeds
1 teaspoon black mustard seeds
8 fresh curry leaves
1 onion, diced, or to taste
1 green chile pepper, chopped, or to taste
2 cloves garlic, minced, or more to taste
½ teaspoon salt

Steps:

  • Rinse okra and let dry completely before cutting into 1/4-inch thick wheel-shaped rounds, at least 10 minutes.
  • While okra is drying, heat 1 tablespoon oil in a skillet over medium-high heat in a skillet. Fry potatoes in the hot oil until nearly browned, 5 to 7 minutes. Set aside.
  • Heat remaining oil in a large skillet or wok over medium-high heat. Add cumin seeds and cook until beginning to brown, about 30 seconds. Add mustard seeds; cook until they start to pop, 15 to 30 seconds. Add curry leaves, followed by okra rounds. Stir-fry until okra is brown and crispy, 5 to 7 minutes. Add onion, chile pepper, garlic, and salt; fry until onions begin to brown, about 5 minutes. Add turmeric and fenugreek; stir to coat evenly. Stir in cilantro. Serve.

2 medium onions, chopped
3 -5 curry leaves
2 -3 tablespoons ginger-garlic paste (pls see my recipe for this)
cayenne pepper, to taste
1 teaspoon turmeric
2 -3 teaspoons coriander powder
dry coconut powder or coconut paste
salt
3 medium tomatoes, chopped
1 -2 lb beef or 1 -2 lb mutton
1 bunch green coriander, chopped (cilantro)
1 little tamarind juice (or paste mixed with a bit of water)
1 package frozen okra or 1 package fresh okra

Steps:

  • Heat oil (it should be a little bit more than what you would normally use).
  • Fry onions.
  • When slightly brown add curry leaves.
  • Add ginger-garlic paste.
  • Fry until you see the oil coming to the top.
  • add spices, coconut powder and salt and keep frying adding a little water.
  • Then add tomatoes and green coriander.
  • When the tomatoes are cooked, add your beef or mutton.
  • When the meat is tender, add the tamarind juice and okra and cook until the okra is done.
