I ran across a similar brownie recipe on another forum to use as a guide - I then reduced the fat and sugar content so I wouldn't feel so guilty, but you would never know it by the taste! The cherries add a delicious surprise inside the fudgy brownies. Moreover, they are very simple to make. What's not to love? I use 60% Cocoa Ghirardelli baking chips for this recipe

4 tablespoons butter
1 cup bittersweet chocolate chips
1/4 cup Splenda granular
1/2 cup sugar
1 teaspoon vanilla extract
4 egg whites
1/4 cup flour
3/4 cup nuts, toasted and chopped
1/3 cup dried cherries, chopped
1/3 cup bittersweet chocolate chips

Steps:

  • Preheat over to 350 degrees. Butter a 8 or 9-inch square cake pan or line the bottom with parchment paper.
  • Melt butter in a medium sized sauceplan. Add baking chips, stirring over low heat until melted.
  • Remove from heat, stirring in splenda, sugar and vanilla. Beat in egg whites, two at a time.
  • Add the flour and stir for one minute, until batter loses its graininess and becomes smooth and glossy.
  • Stir in the chopped nuts, cherries and baking chips. Spread into prepared cake pan and back for 30 minutes. Cool completely before cutting.

1/2 cup semi-sweet chocolate chips (3 ounces)
4 ounces bittersweet chocolate, coarsely chopped
3 tablespoons hershey's special dark cocoa
4 tablespoons butter
1 cup unbleached white flour
1 cup dark brown sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped walnuts
1 cup dried tart cherry
1 cup wet okara (this is referring to the okara straight from your machine)
2 teaspoons vanilla

Steps:

  • Preheat oven to 350 degrees.
  • In a microwaveable bowl melt together the chocolate chips, bittersweet chocolate, cocoa, and butter. Microwave for one minute, stir and set aside to finish melting.
  • In a large mixing bowl sift the flour, brown sugar, baking powder, salt. Add the walnuts and cherries and mix well.
  • In a small mixing bowl stir together the okara (or tofu) and vanilla. Add the melted chocolate mixture. Add this mixture to the dry ingredients, mixing well.
  • Spread into a greased 8" x 8" square baking pan. (To make it easier to cut, line your pan with a sheet of foil that overhangs the edges an inch or two. Spray the foil with cooking spray, then spread your batter. When it is finished baking, just lift out the foil and you can cut perfect squares with no waste -- and that is important when you are serving something chocolate!)
  • Bake for approximately 35 - 45 minutes. Do not overbake.

2 (8 ounce) packages cream cheese, softened
1/2 cup sugar
1/2 cup drained chopped red maraschino cherry
1 tablespoon red maraschino cherry juice
1 egg
4 ounces unsweetened baking chocolate
1 cup butter
2 cups sugar
2 teaspoons vanilla
4 eggs
1 1/2 cups flour
1/2 teaspoon salt
1 cup coarsely chopped nuts

Steps:

  • Heat oven to 350. Grease bottom and sides of 13 x 9 inch pan with shortening or spray with cooking spray.
  • In medium bowl, beat all filling ingredients with spoon until smooth; set aside.
  • In 2 quart saucepan, melted chocolate and butter over low heat, stirring frequently, until smooth; remove from heat. Cool 5 minutes.
  • In large bowl, beat chocolate mixture, 2 cups sugar, the vanilla and 4 eggs with mixer on medium speed 1 minute, scraping bowl occasionally. Beat in flour and salt on low speed 30 seconds, scraping bowl occasionally. Beat on medium speed 1 minute. Stir in nuts.
  • Spread half of batter in pan. Spread filling over batter. Carefully spread remaining batter over filling. Gently swirl through batters with knife for marbled design.
  • Bake 45-50 minutes or until toothpick comes out clean. Cool completely, about 1 hour. FOr brownies, cut into 8 rows by 6 rows. Store covered in refrigerator.

1/4 cup bob's whole wheat pastry flour
2/3 cup unsweetened cocoa powder
1 teaspoon baking powder
1/8 teaspoon salt
3/4 cup granulated sugar, plus
1 tablespoon granulated sugar
1/4 cup packed brown sugar
1/4 cup land o' lakes whipped light butter, melted and cooled
extra large egg
2 teaspoons vanilla extract
1/2 teaspoon almond extract
10 -15 maraschino cherries, chopped into little pieces
1 teaspoon maraschino cherry juice
1 tablespoon almond milk or 1 tablespoon low-fat milk, more if needed. One tablespoon at a time
1/4 cup mini chocolate chip

Steps:

  • Preheat oven to 350 degrees, spray an 8 inch non-stick square pan with cooking spray and set aside.
  • In a large mixing bowl, combine the flours, cocoa and mix well with a wire whisk to break up any clumps.
  • Add all the other ingredients and mix well until all is combined and with a rubber spatula, dig deep to the bottom of the bowl to make sure all the dry ingredients are well incorporated.
  • Pour batter into prepared pan and bake for about 22-28 minutes. Do not over bake. Test with a wooden skewer or toothpick. Should come out with moist crumbs.
  • Let cool on a wire rack and then cut when cooled but still a little warm and enjoy! Makes 16 brownies.

1 cup oat flour
1/4 cup all-purpose flour
2/3 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/8 teaspoon salt
6 tablespoons unsalted butter, at room temperature
1 cup sugar
2 teaspoons finely ground coffee
2 eggs
2 tablespoons half-and-half
2 teaspoons vanilla extract
1/2 cup bittersweet chocolate chips
1/2 cup fresh or frozen cherries, chopped

Steps:

  • Heat oven to 350°F. Coat an 8" x 8" baking dish with cooking spray. In a bowl, whisk together flours, cocoa, baking powder and salt; set aside. In another bowl, beat butter, sugar and coffee with an electric mixer on high until crumbly, about 30 seconds. Add eggs one at a time; beat on medium until a thick mocha-colored mixture forms. Add half-and-half, vanilla and chocolate chips; beat on low until just combined. Add flour mixture; beat on low until a thick batter forms. Pour into baking dish and top with cherries. Bake until edges are slightly firm but center is soft, 25 to 30 minutes. Cool 30 minutes; cut into 12 pieces.

Steps:

  • Prepare Cherry Cream Filling; set aside.
  • Cherry Cream Filling: Beat cream cheese and sugar in small bowl on medium speed of electric mixer until blended.
  • Add egg, vanilla and almond extract; beat well. (Mixture will be thin.)
  • Stir in cherries.
  • Heat oven to 350°F Grease 9-inch square baking pan.
  • For Brownies: Stir butter and cocoa in small bowl until well blended; cool slightly.
  • Beat eggs in medium bowl until foamy. Gradually add sugar and vanilla, beating until well blended.
  • Stir together flour, baking powder and salt; add to egg mixture.
  • Add cocoa mixture; stir until well blended. Spread half of chocolate batter into prepared pan; cover with cherry filling.
  • Drop spoonfuls of remaining chocolate batter over filling. With knife or spatula, gently swirl chocolate batter into filling for marbled effect.
  • Bake 35 to 40 minutes or until brownies begin to pull away from sides of pan.
  • Cool; cut into squares.
  • Cover and refrigerate leftover brownies. Bring to room temperature to serve.

1/4 cup honey
1 teaspoon vanilla extract
0.5 (15 1/2 ounce) can pitted tart red cherries, drained and halved (3/4 cup plus 2 tablespoons)

Steps:

  • Preheat oven to 350 degrees. Grease 11" X 7" baking dish.
  • Stir flour, Splenda, cocoa and baking soda together in bowl.
