Canned beans and puree help make this recipe quick and easy.

5 tablespoons olive oil
2 medium onions, finely diced
4 cloves garlic, minced
2 green bell peppers, finely diced
4 cans black beans with juice (15 1/2 ounces each )
1 1/2 cups canned black-bean puree
5 dried bay leaves
2 teaspoons ground cumin
2 teaspoons dried oregano
Salt and freshly ground black pepper
1 tablespoon white vinegar
3 tablespoons chopped fresh cilantro, plus more for garnish
2 tablespoons finely diced red pepper, for garnish (optional)

Steps:

  • Heat olive oil in a medium stockpot set over medium-low heat. Add onions, garlic, and bell peppers; cook until onions are soft but still translucent, about 25 minutes.
  • Add black beans, black-bean puree, bay leaves, cumin, and oregano. Season with salt and black pepper; stir.
  • Cook mixture until thickened, about 10 minutes. Stir in vinegar and cilantro. Garnish with more cilantro and the red pepper, if desired.

1 1/2 lbs lean boneless pork, chunked
1/4 cup flour
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon salt
1/8 teaspoon ground cinnamon
1 onion, chopped
1 jalapeno chile, seeded and chopped
1 green bell pepper, chopped
2 cups beef broth
1 garnet yam, peeled and chunked
1 plantain, ripe, chunked
1 (15 ounce) can black beans, drained

Steps:

  • Combine flour and spices in plastic bag.
  • Half at a time, shake meat in flour mixture to coat then brown in oil in hot skillet.
  • Remove meat from pan, then saute onion and peppers until tender.
  • Return meat to pan along with vegetables, add remaining flour, broth and sweet potato; stir to blend flour.
  • Bring to a boil, reduce heat to simmer and cook for 30 - 45 minutes, until pork is tender. Stir in plantain and black beans and heat through.
  • Serve over cooked white rice.

1 onion, chopped

1 red bell pepper, chopped
1 ½ pounds sirloin tips, cubed
2 bay leaves
½ teaspoon ground cumin
1 teaspoon dried oregano
½ cup dry sherry
1 (8 ounce) can tomato sauce
2 tablespoons red wine vinegar
¼ cup pimento-stuffed green olives
¼ cup raisins
2 tablespoons capers
4 potatoes, peeled and quartered
salt and pepper to taste

Steps:

  • In a large saute pan, heat oil over medium heat. Cook onion and garlic in oil, stirring frequently, until transparent. Stir in cubed meat, and cook until browned. Stir in red bell pepper, bay leaf, cumin, and oregano; cook for 2 to 3 minutes.
  • Stir in sherry, tomato sauce, vinegar, olives, raisins, and capers. Pour in enough water to just cover meat. Bring to boil, reduce heat to low, and cover. Simmer until fork tender, about 1 1/2 hours. Add more water if the stew becomes too thick.
  • Stir potatoes into the stew. Season with salt and pepper to taste. Cook, covered, until potatoes are almost tender. Uncover, and cook until done.

1 tablespoon olive oil
1 medium red onion, chopped

2 cans (19 ounces each) black beans, rinsed and drained
1 can (14.5 ounces) vegetable broth
1 tablespoon cider vinegar
1/2 teaspoon dried oregano
Coarse salt and ground pepper
Garnishes (optional): lime wedges, fresh cilantro, and sliced radishes

Steps:

  • Prepare rice according to package instructions. Meanwhile, heat oil in a large saucepan over medium. Add onion, garlic, and bell pepper. Cook, stirring occasionally, until onion is softened, 8 to 10 minutes.
  • Add beans, broth, vinegar, and oregano. Cook, mashing some beans with the back of a spoon, until slightly thickened, 6 to 8 minutes. Season with salt and pepper. Fluff rice with a fork. Serve beans over rice, with garnishes, if desired.

  • SAUTE: Heat the oil in a 4 quart (or larger) dutch oven or soup pot (or on the saute setting in your instant pot) over medium-high heat. When warm, add the onions, peppers, garlic, and bay leaves and saute for 5-6 minutes or until the veggie soften and the onions are translucent.
  • STOVE TOP: Add the black beans, 6 cups of stock, oregano, and cumin and bring to a boil, then reduce the heat too low, cover, and simmer for 1 ½ -2 hours or until the beans are cooked through. Remove the bay leaves.INSTANT POT: Add the black beans, 5 cups of stock, oregano, and cumin. Cover, make sure the vent is sealed. Cook on manual high pressure for 30 minutes. If using organic or older beans, they may require additional time. Once the timer goes off, allow a natural pressure release for 10 minutes. Then do a quick release to let out any remaining pressure. Stir the soup and test the beans for doneness; remove the bay leaves.
  • FINISH (STOVE AND IP): You can puree ½ the soup in the blender if you want it to be thicker. I usually just smash using a wooden spoon on the walls of the pot until it reaches my desired consistency. Season with 2 tablespoons of red wine vinegar, sugar, and ½ teaspoon of salt. Stir and adjust with additional vinegar, sugar, and salt as needed. Allow the soup to cool for 15 minutes. It should thicken a bit as it sits. Top with chopped avocados, and serve with cooked rice!

  • Add the dry black beans, onion, garlic, bell pepper, oregano, bay leaf, and vegetable broth in the inner pot of your instant pot, stir.
  • Place the lid on the pot, and lock it in place. Turn the steam release knob to the Sealing position (or DON'T press the release knob for the newest model). Press the manual/pressure cook button (or dial) and the + or - button (or dial) to choose 35 minutes. The pot will take a few minutes to build up the pressure before the timer starts.

Shred pork and stir into bean mixture along with remaining 2 tsp. zest. Serve with rice, sour cream and lime wedges, if desired.
