Categories     appetizer

Time 1h5m

Yield 6 to 8 servings

Number Of Ingredients 16

1 pound jumbo shrimp (21/25 count), peeled and deveined
1 ear corn, husked
1 small jalapeno pepper
2 scallions
1/2 red onion, cut into 4 wedges, root intact
Canola oil
Kosher salt
1 Persian cucumber, finely chopped
1 teaspoon lime zest (1 lime)
1/4 cup lime juice (4 to 5 limes), plus more to taste
1/4 teaspoon smoked paprika
1/4 teaspoon ground coriander
1/8 teaspoon ground cumin
1/4 cup fresh cilantro leaves, roughly chopped
1 small avocado, cut into 1/4-inch pieces
Tortilla chips, for serving

Steps:

  • Preheat a grill pan over medium-high heat.
  • Lightly brush the shrimp, corn, jalapeno, scallions and onion wedges with canola oil, sprinkle with salt and place on the grill. Cook the scallions and shrimp until charred and the shrimp are cooked through, about 2 minutes per side. Cook the jalapeno and red onion until charred and softened, 3 to 4 minutes. Cook the corn, rotating every 2 minutes, until charred and the kernels have turned bright yellow, 6 to 8 minutes. Remove the vegetables and shrimp to a baking sheet and let cool.
  • Cut the grilled shrimp into 1/4-inch pieces and place in a medium bowl. Seed and finely chop the jalapeno; add to the bowl. Finely shop the scallions and red onion and cut the kernels from the corn; add all three to the bowl. Stir in the cucumber, lime zest and juice, paprika, coriander and cumin. Refrigerate for 30 minutes to allow the flavors to meld.
  • Before serving, fold in the cilantro and avocado. Serve with tortilla chips.

GRILLED CARIBBEAN COCONUT SHRIMP WITH RUM MARINADE

Grilled Caribbean Coconut Shrimp With Rum Marinade image

Taken from chilicheesefries.net; posted for ZWT 5. "This recipe is fantastic for any time you want to cook out with Caribbean inspired flavors such as rum, allspice, citrus, cinnamon, Scotch bonnet peppers and cilantro. While not quite jerk, the influence is definitely there. I love to serve these freakishly good tasting grilled shrimp over a bed of mashed sweet potatoes topped with fresh grilled pineapple slices that have been marinated in dark brown sugar. Serve all this up with a few pitchers of mojitos and you may think you are on vacation or at least just wished you were. Pass the rum please."

Provided by Jess Smith via Inquiring Chef

Categories     Gluten-Free     Seafood

Time 25m

Number Of Ingredients 8

10 Skewers ((for grilling))
8 oz Pineapple, finely diced
1/2 Red Bell Pepper, finely diced
2 tsp Rice Vinegar
2 tsp Cilantro, chopped
1/2 Lime Zest, divided
1 lb Shrimp, peeled and deveined ((use medium to large sized shrimp))
1/2 cup Thai Sweet Chili Sauce

Steps:

  • If using wooden / bamboo skewers, soak them in water for about 10 minutes before grilling. This will prevent them from burning on the hot grill.
  • Prep your grill. It's a good idea to use high heat (400 F or higher). The shrimp will be most tender and juicy if cooked very fast over very high heat.
  • Make salsa: Combine pineapple, bell peppers, rice vinegar, cilantro and 1/4 tsp lime zest. Season the salsa with a pinch of salt and refrigerate until ready to serve.
  • Thread shrimp through skewers.
  • Divide sweet chili sauce, placing 1/4 cup of sauce in each of two small bowls. Whisk in 1/8 tsp lime zest into each bowl. Set one bowl aside.
  • Just before grilling, pat shrimp dry with paper towels. Season on both sides with salt and pepper. Place shrimp skewers over the hottest part of the grill, turning them to get grill marks on both sides, until pink and cooked through, 2 to 4 minutes total. In the last minute of cooking, use one bowl of sweet chili sauce to liberally brush both sides of the shrimp skewers. (The sauce should start to caramelize and blacken in spots on the hot grill, so watch closely to prevent burning.)
  • When shrimp are cooked through, transfer to a serving platter and brush with the remaining bowl of sweet chili sauce.
  • Serve shrimp and pineapple salsa over rice, other grains, or to top salads.

GRILLED COCONUT SHRIMP

Grilled Coconut Shrimp image

A shrimp cocktail that is Asian in flavour. You can roast the shrimps in a 500ºF (260ºC) oven for 5 minutes or grill them on the barbecue or under the broiler. Prep time includes marinating time. Another winner from my current favourite Chef, Lucy Waverman.

Categories     Lunch/Snacks

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 12

13 ounces coconut milk
2 teaspoons green curry paste
1 tablespoon chopped gingerroot
1 tablespoon grated lime rind
2 tablespoons fish sauce
1 tablespoon granulated sugar
2 tablespoons chopped of fresh mint
2 tablespoons chopped fresh coriander
2 tablespoons lime juice
1 lb large shrimp
salt
1/4 cup unsweetened coconut

Steps:

  • Place coconut milk in a skillet and bring to boil. Reduce heat to low and simmer for 10 minutes until reduced by a quarter - it should be the consistency of heavy cream. Stir in the green curry paste, ginger, lime leaves, fish sauce and sugar. Cook another 5 to 6 minutes or until sauce is thickened and fragrant.
  • Stir in 1 tbsp each of mint and coriander and all of lime juice. Cool.
  • Divide sauce in half in 2 bowls. Season shrimp with salt and stir into half of sauce.
  • Marinate shrimp in sauce for 30 minutes. Reserve other half of sauce for dipping sauce.
  • Remove shrimps from marinade and discard marinade.
  • Preheat grill on high and grill shrimps about 1½ minutes per side or until pink and slightly curled. Cool. Stir in coconut and remaining mint and coriander to dipping sauce. Serve with shrimps.
  • Place shrimps on bamboo skewers, if desired.

Cover with plastic wrap and place in the fridge to marinate 30 minutes-1 hour, while preparing the other parts of the dish. If using a regular gas or charcoal grill, shrimp will have to be skewered. If using wooden skewers, start soaking in water now.
  • In a large bowl, combine together diced mango, avocado, pineapple, red pepper, onion, cilantro, jalapeño (If you’re adding it. Will make it very spicy) and garlic. Sprinkle with the juice of 1 lime, a pinch of salt and then gently toss together. Depending on the size of your lime/amount of juice, an additional lime may be needed. Cover and refrigerate until needed. Can also be made a few hours in advance.

  • Using a small knife, cut around the inside of the pineapple at an angle. Using a spoon, gently loosen the middle part of the pineapple away from the bottom until it's completely free. • You can work on all three components at once since the quinoa needs soaking and rinsing, the salsa is chilled, and the shrimp marinates for 20 min.
  • Start with soaking the quinoa, then rinse the water until it runs clear and then keep soaking while you prepare the salsa. This should take about 10 minutes.
  • For the salsa, prep all the ingredients as stated in the list, mix in together in a large bowl and keep chilled until ready to use. If you want it milder use only one Fresno chile, if you want it spicier add more. Taste and season with salt and pepper how you like it. If you make this salsa a day ahead of time, add in the avocado right before serving.
  • For the shrimp whisk together all the marinade ingredients in a bowl and pour over the shrimp. Mix well and let it marinade for 20 minutes.
