SLOW COOKER PORK LOIN

Steps:
- First, prepare pork loin roast. Pat it dry with a paper towel and then season all sides of the pork loin roast with the pork dry rub.
- Heat 3 tablespoons of butter in a cast-iron skillet over medium/high heat. Then, sear all 4 sides for around 1-2 minutes each to brown it. Remove from heat and set aside.
- the cast iron skillet with 1/4 cup of beef broth. Then, over medium/high heat saute garlic and onion for 1-2 minutes until fragrant. Set aside.
- Dice potatoes into 1.5 to 2-inch chunks and place them on the bottom of your slow cooker. Pour the garlic, onion, and broth on top of the potatoes.
- Then, place the pork loin on top of the potatoes and pour the remaining broth and Worcestershire sauce on top of the pork.
- Cover slow cooker and then turn heat to low. Set timer for 4 hours. Check the temperature of the pork at 4 hours and if the internal temperature at the thickest part has reached 145ºF, then you know it's done. If it's not quite there, continue cooking for up to 1 more hour. The potatoes should also be tender to the touch
- Remove pork loin from slow cooker and set aside. Then, transfer potatoes into a large bowl and transfer the leftover broth/liquid into a small saucepan.
- by adding butter, Greek yogurt, milk, salt, and pepper to the bowl with the hot potatoes. Either use a handheld masher or a hand mixer to mash potatoes.
- by turning the heat to medium/high. Bring the gravy to a simmer and then remove about 1/3 cup of liquid and create a cornstarch slurry by whisking it with 1 tablespoon of cornstarch. Pour the cornstarch slurry back into the saucepan and continue to simmer for a few more minutes until thickened. Once thickened, remove from heat.
- Slice pork loin roast and serve on top of mashed potatoes with gravy on top.

- Preheat oven to 375°F.
- In a small bowl whisk together the olive oil with the thyme, rosemary, garlic, red pepper flakes, parsley, salt and pepper.
- Spray a skillet that's oven safe with cooking spray. Place the pork loin in the skillet and rub the pork with the rosemary garlic rub thoroughly.
- Sear the pork over high heat on all sides until nicely browned. Top with more garlic cloves if preferred and add garlic bulbs to the skillet.
- Roast the pork covered with aluminum foil for the first 50 minutes, then remove the foil and roast for another 20 to 30 minutes or until the internal temperature of the pork is at least 145°F/62.8°C to 160°F/71.1°C.
- Remove the skillet from the oven and place the pork on a cutting board. Cover the meat completely with aluminum foil and let it rest for 15 minutes before cutting it and serving it.

DAD'S BASIC MOIST PORK ROAST
This is the best and most basic way to ensure a juicy, perfectly-cooked pork roast every time. This recipe really requires a good thermometer -- either a $10 instant-read type or, even better, the type that pierces the meat and stays in place while connected to an outside-the-oven monitor. If you can swing that, then try your favorite marinade or rub on this recipe. Use your imagination on the rubs and marinades, but ensure you bring your roast directly from the fridge to the roasting pan -- Dad's recipe works best that way.

- Combine oil, pepper, and salt in a bowl; rub oil mixture over pork and refrigerate while oven preheats.
- Preheat an oven to 475 degrees F (245 degrees C).
- Place a roasting rack in a large roasting pan; arrange pork on the roasting rack.
- Roast in preheated oven until pork with browned, about 30 minutes. Remove pork from oven and reduce oven heat to 325 degrees F (165 degrees C). Allow pork to rest uncovered at room temperature for 30 minutes. An instant-read thermometer inserted into the center should read between 115 degrees F (46 degrees C) and 140 degrees F (60 degrees C).
- Return to oven and continue to cook until pork is slightly pink in the center, 15 to 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
- Let the roast stand uncovered at room temperature for 15 to 20 minutes before slicing and serving.
