OH-SO-GOOD CHICKEN VEGETABLE SOUP
A bowl of this chicken vegetable soup is just what you need if you're under the weather, it's cold outside, or just because! It's hearty, healthy, and simply oh-so-good.

Steps:
- In a 2-quart pot, combine fresh chicken thighs and 4 cups water and bring to a boil. Reduce heat to a simmer and let cook for 30 minutes, skimming the broth every few minutes until most of the scum is gone.
- Heat stockpot over medium heat. Add oil and cook onions, carrots, and garlic. Add 1 1/2 tsp salt and cook until tender, about 5 minutes, stirring occasionally so garlic does not burn.
- Add chicken and stock to the onions and carrots in the stockpot.
- Add the 1L carton of organic chicken broth.
- Bring entire mixture to a boil, then reduce heat to low and let simmer for at least 1 - 1 1/2 hours. Cover with lid, leaving a small gap.
- Remove chicken pieces from the soup. Add tender vegetables (broccoli, cauliflower, zucchini, etc.) to the soup.
- Remove chicken meat from the bones, discarding the skin and cartilage. Shred the chicken meat and return to the soup.
- Heat through until vegetables are tender.
- Feel free to add 1/2-1 cup water if the soup has reduced too much after 3-4 hours of simmering.
- Season to taste with salt and fresh ground black pepper.

- Preheat a heavy soup pot or dutch oven over medium heat and add 2 Tbsp olive oil. Add chopped onions and carrots and saute for 6-8 minutes, stirring occasionally until golden.
- Add celery, canned tomatoes (with juice), broth, potatoes, green beans, bay leaves, salt, and pepper. Bring it to a boil then reduce heat to a simmer and cook for 25 minutes.
- Once the vegetables are tender, add corn, sweet peas, green onion, and parsley. Season with salt to taste and simmer for another 5-8 minutes. Remove from heat and serve warm.

- Place water and chicken thighs in a pot. Bring to a boil; reduce heat and simmer until chicken is tender, about 30 minutes. Occasionally skim off scum as it forms.
- Heat olive oil in a large pot over medium heat. Cook and stir carrots and onions until they begin to soften, 3 or 4 minutes. Stir in garlic and salt; cook for 1 minute.
- Transfer chicken and cooking water to large pot. Add chicken broth. Bring mixture to a boil; reduce heat to low. Cover, leaving lid slightly ajar, and simmer at least 1 hour or up to 4 hours. Remove from heat.
- Transfer chicken to a work surface. Remove skin, bones, and cartilage. Shred chicken meat using 2 forks. Return chicken to pot. Add broccoli, cauliflower, and zucchini. Bring back to a simmer over medium-high heat. Reduce heat so soup gently simmers. Cook until vegetables are tender, 20 to 30 minutes.

This is my daughers favorite soup I made it when she was a toddler and 18 years later she still asks me to make it . Its so easy and tastes so good. It's surprising sometimes to realize some of the more simpler dishes are some of the best..

- chop potatoes place in pot with mixed vegetables, tomatoes,and water cook over med heat til potatoes are cooked turn down to simmer
- add your garlic powder, garlic salt, onion powder, thyme, parsley flakes and salt and pepper to taste. Mix your brown gravy packets with approxamently 1 cup hot water til mixed add to soup
- in skillet cook your hamburger minced garlic and onions til done salt and pepper to taste.. Use slotted spoon to remove excess fat and add to soup..enjoy

REALLY EASY, MAKES YOU FEEL GOOD, VEGETABLE SOUP
My mother got this recipe at a Weight Watchers meeting about 15 years ago. I have never been able to find the recipe anywhere since. This recipe is fast, versatile, and my husband loves it. Add any frozen vegetables you like. It makes a large batch, so I always have leftovers to freeze. Please don't let the ranch scare you off, it give the stock a really nice flavor. Have fun playing with this recipe by varying the veggies, adding meats, or even grains like barley.

- Add V8 juice, Ro*tel Tomatoes, onions, and garlic to a large sauce pot. Heat on medium high heat.
- When soups is good and hot add the Ranch power, stirring to break up lumps.

- In a large saucepan, bring broth to a boil. Stir in pasta; return to a boil. Reduce heat; simmer, covered, 8-10 minutes or until pasta is tender, stirring occasionally., Meanwhile, in a large skillet, heat oil over medium-high heat. - Heat a deep pot over medium to medium high heat.
- Work next to the stove to slice onions.
- Add oil and butter to the pot.
- Add onions to the pot as you slice them.
- When all the onions are in the pot, season with salt and pepper and 1 teaspoon fresh thyme.
