Oatmeal Almond Butter Bites image

Super healthy and deliciously soft high-fiber snack made with chia seeds, ground flax, unsweetened coconut, and oatmeal. Almond butter adds protein. I use raw honey in these.

2 ½ cups rolled oats
1 cup almond butter
1 cup semisweet chocolate chips
½ cup honey
¼ cup chia seeds
¼ cup ground flax seeds
¼ cup finely shredded unsweetened coconut

Steps:

  • Combine oats, almond butter, chocolate chips, honey, chia seeds, ground flax seeds, and coconut in a stand mixer fitted with the paddle attachment. Beat together, gradually increasing speed, until mixture no longer sticks to the center of the paddle.
  • Shape mixture into 1-inch balls with your hands. Place on a baking sheet lined with parchment paper.
  • Freeze balls until firm, about 30 minutes. Transfer to an airtight container and store in the refrigerator.

I am a vegetarian and love to eat these before I go to the gym. I like to add extra whole peanuts sometimes. Substitute 1/4 cup dark chocolate chips for the raisins if desired. If you want to eat them on the go, wrap them in wax paper and tie with a bread tie. Enjoy!

¾ cup natural peanut butter

2 tablespoons honey

Steps:

  • Mix oats, peanut butter, raisins, and honey together with a fork in a bowl. Knead mixture by hand until fully incorporated; roll into 1-inch balls. Refrigerate for at least 1 hour.

Here's what you need: almond butter, maple syrup, almond milk, vanilla, rolled oats, brown rice cereal, slivered almond, dried cranberry, dark chocolate, dark chocolate

1 cup almond butter
½ cup maple syrup
½ cup almond milk
1 teaspoon vanilla
2 ½ cups rolled oats
1 cup brown rice cereal
½ cup slivered almond
½ cup dried cranberry
½ cup dark chocolate
¼ cup dark chocolate, melted

Steps:

  • Preheat oven to 325˚F (160˚C).
  • Combine wet ingredients together in a large bowl.
  • Then add in all the remaining dry ingredients.
  • Add mixture into a 8x8 inch (20x20 cm) baking pan lined with greased parchment paper. Firmly press down mixture until it is one smooth layer. (If you grease the spatula as well it will prevent the mixture from sticking to it!)
  • Bake 15-20 minutes, or until golden brown. Let cool 10 minutes.
  • Drizzle top with melted dark chocolate. Chill for 30 minutes, or until dark chocolate is solid.
  • Cut into 8 equal pieces.
  • Wrap each bar in parchment paper or foil.
  • Store in the freezer for up to 3 months or in the refrigerator up to 1 week.
  • Enjoy!
