- In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, until water is absorbed, 12-15 minutes. , Meanwhile, in a large saucepan, heat oil over medium-high heat; saute onion until tender. Stir in peas and broth; bring to a boil. Reduce heat; simmer, uncovered, until peas are tender, about 5 minutes., Puree soup using an immersion blender. Or cool slightly and puree soup in a blender; return to pan. Stir in quinoa, salt and pepper; heat through. Serve with toppings as desired.

Low in fat and high in fiber! We added some diced ham leftover from Easter but even without it this has lots of protein and is quite filling for 2-3 people. Originally from Light & Tasty.

Steps:
- In a small saucepan, bring water and quinoa to a boil. Reduce heat; cover and simmer for approximately 12 minutes or until water is absorbed.
- Meanwhile, in a large saucepan, saute onion in oil until tender. Stir in broth and peas. Bring to a boil. Reduce heat; simmer, uncovered, for five minutes or until peas are tender.
- In a blender or food processor, puree soup until smooth. If you are doubling the recipe, you may need to do this in batches.
- Return all to the pan. Stir in the salt, pepper and quinoa (and diced ham if adding); heat through.
- Garnish each serving with 1 teaspoon yogurt or sour cream if desired.
- For Vegetarian use the vegetable broth and for vegan omit the yogurt/sour cream.

Steps:
- Put the peas in a large heatproof bowl, pour over just-boiled water, then set aside.
- Pour the lemon juice into a small bowl and whisk in some seasoning. Keep whisking as you slowly add the olive oil, followed by the mint and chives.
- Drain the peas and tip into a large serving dish. Stir in the quinoa, breaking up any clumps. Pour over the dressing, then fold in the avocado and pea shoots. Serve immediately.

- First, add the Onion and Garlic to a large nonstick pot with a splash of Vegetable Broth or Oil. Sauté over Medium heat until translucent.
- Reduce the heat to Medium-Low, then add in the Thyme, Smoked Paprika, and Carrot. Sauté for an additional 2-3 minutes, until fragrant.
- Then, add the Diced Tomatoes, Black-Eyed Peas, Vegetable Broth, and dry Quinoa to the Pot; bring the mixture to a boil over high heat, then reduce the heat and simmer uncovered for 11 minutes.
- Add the Collard Greens to the pot, then simmer for an additional 5-7 minutes, until the Quinoa is cooked. Add Salt and Black Pepper to taste, if necessary.

- Add water to a small saucepan and bring to a boil over high heat. Add the quinoa, cover the pot, and reduce heat to a simmer until water absorbed and quinoa is cooked, about 15 minutes.
- While the quinoa is cooking, heat the oil in a large saucepan over medium-high heat. Saute the onion until translucent and tender.
- Add the peas and and chicken broth to the onion and bring to a boil. Reduce heat and allow to simmer, uncovered, until peas are heated through, about 5 minutes.
- Using an immersion blender, or regular blender, puree the soup to desired consistency. Return pureed soup to pan; stir in the quinoa, salt and pepper and cook until heated through.
