Especially good on apple or peach pies. My original recipe says it make enough for 2 8-inch pies but a lot of times I use the whole thing on one 10-inch.

Steps:
- In a large mixing bowl combine all the ingredients except the butter.
- Cut butter into mixture with a pastry blender until mixture resembles coarse bread crumbs.
- Spread crumbs over prepared fruit mixture of your favorite fruit pie.
- Do NOT add top crust.
- Bake as directed in your fruit pie recipe.
- If crumbs become too dark while baking, cover loosely with foil, but remove foil the last few minutes of bakings so the topping will crisp.
- Note: when using this topping there is no need to dot the fruit with butter, if your recipe calls for that.

- Preheat oven to 350 degrees F. Coat an 11-by-7-inch baking dish with cooking spray. Place sweet potatoes in a large saucepan and add water to cover; bring to a boil over high heat. Reduce heat to medium to maintain a simmer; cook until the sweet potatoes are tender, about 16 minutes. Drain well. Place the sweet potatoes in a large bowl.
- Meanwhile, combine oats, pecans, 5 tablespoons brown sugar and 1/4 teaspoon salt in a bowl. Stir in butter. Set aside.
- Add milk, eggs, cinnamon and the remaining 3 tablespoons brown sugar and 3/4 teaspoon salt to the drained sweet potatoes. Beat with an electric mixer fitted with a whisk attachment on medium speed until smooth, about 2 minutes.
- Spoon the sweet potato mixture into the prepared baking dish; sprinkle evenly with the oat mixture. Bake until golden and bubbly around the edges, 30 to 40 minutes.

- Preheat oven to 350°F Coat a 9-inch springform pan or a 13 x 9-inch baking dish with cooking spray.
- To prepare cake, beat butter until fluffy. Add sugar and beat well. Add eggs, one at a time, and vanilla; beat well. Add flour, cinnamon and salt; beat until just combined. Stir in banana and cooked oatmeal.
- Spread batter in pan. Bake about 35 minutes. Remove cake from oven. Heat broiler.
- To prepare topping, melt butter in saucepan. Add milk and brown sugar; stir until sugar dissolves. Add oats, coconut and walnuts; stir well. Spread over warm cake. Place under broiler and broil until browned and bubbly, about 4 minutes.
HEALTHY SWEET POTATO CASSEROLE

- Preheat the oven to 375 degrees. Lightly grease a 9x13-inch casserole dish or other 3-quart casserole dish and set aside.
- Prick the sweet potatoes all over with a fork, then place them on a baking sheet lined with foil or a silpat mat. Bake until the potatoes are fork tender, about 1 hour or so, depending upon the size of your potatoes. Remove from the oven and let sit until cool enough to handle, about 5 minutes. Peel and discard the skins (they should come off easily with your fingers), break the potatoes in large chunks with a fork, then place the chunks into the bowl of a standing mixer fitted with the paddle attachment or a large mixing bowl.
- While the potatoes bake, pour the almond milk in a small saucepan. Split the vanilla beans, scrape the seeds into the pan, then add the empty pods to the pan too. Bring to a very gentle simmer over medium heat for 5 minutes, stirring occasionally. Do not let the almond milk boil. Remove from heat and let the vanilla steep while the potatoes continue baking.
- Remove the vanilla bean pods from the saucepan, then pour the almond milk and vanilla bean specs into the bowl with the sweet potato chunks. Add the melted coconut oil, cinnamon, salt, nutmeg, and white pepper.
- Mash the potatoes together with the milk and spices (or beat gently with a mixer or your paddle attachment or run though a food mill) until fairly smooth with some texture remaining. Taste and add additional salt/pepper as desired. Transfer to the prepared baking dish. With the back of a rubber spatula, press and smooth into a single layer.
- In a separate bowl, combine the topping ingredients-oats, pecans, almond meal, cinnamon, salt, coconut oil, and maple syrup-until moist and evenly mixed. Sprinkle over the sweet potatoes.
- Bake until the topping is toasted and fragrant and casserole is warmed through, about 20 minutes. Serve warm.

- Heat oven to 400 degrees.
- Spray four 5-oz souffle molds, custard cups or ovenproof bowls with nonstick cooking spray; place in 15x10x1 inch baking pan.
- In a small saucepan bring the milk and butter just to a boil.
- Gradually add oats while stirring constantly.
- Reduce the heat to medium-low; cook 1 to 2 minutes or until oats thickened, stirring often.
- Remove from heat; pour the oat mixture into a large bowl.
- Add sugar, salt, cinnamon, sour cream and 1 egg yolk; stir until smooth.
- Add dried fruit and set aside.
- In a medium bowl beat all 3 egg whites until stiff but not dry.
- Gently fold egg whites into oat mixture using a rubber scraper.
- Do not overmix; small lumps of egg white will remain.
- Gently spoon the mixture into molds.
- Sprinkle the tops with brown sugar.
- Place in preheated oven and bake for 15 to 20 minutes or until souffles are puffy and a knife inserted in center comes out with a few moist crumbs.
- Serve immediately.

- Preheat oven to 325 degrees.
- Butter and sugar a 1 1/2 quart souffle dish or 4 small ramekins.
- Pour milk and butter into a small saucepan and heat until barely boiling. Slowly add oatmeal, stirring constantly. Cook until thick.
- Remove from heat and add cream cheese, brown sugar, salt, nutmeg and cinnamon. Stir briskly to blend and smooth.
- Beat 3 egg yolks slightly and add to oatmeal mixture.
- Stir in raisins and nuts.
- Beat egg whites until just stiff. Gently fold egg whites into the mixture ensuring even distribution.
- Spoon mixture into the dish or ramekins.

- Roast and mash sweet potatoes. (I dump them into my kitchen aid and mix them up good)
- Mix 1/2 c. raw sugar, 1/2 c. melted butter, salt, eggs, bourbon and whipping cream together with sweet potatoes.

- Mix rest of ingredients and sprinkle over top of potato mixture.

- Preheat oven to 400 degrees F (200 degrees C).
- Roast the squash cut side up on a baking sheet in preheated oven until the flesh is soft, about 50 minutes. Remove squash from oven and cool, then scoop out the flesh into a mixing bowl, or bowl of a food processor.
