OATMEAL COOKIES WITH PEANUTS, RAISINS AND CHOCOLATE CHIPS



Oatmeal Cookies with Peanuts, Raisins and Chocolate Chips image

This oatmeal cookie delivers the highlights of trail mix: peanuts, raisins, chocolate chips and coconut flakes.

Number Of Ingredients 16

1 cup unsweetened coconut flakes
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon fine salt
1/4 teaspoon ground nutmeg
2 sticks (1 cup) unsalted butter, at room temperature
1 1/2 cups packed light brown sugar
1/2 cup granulated sugar
2 large eggs
2 tablespoons milk
2 teaspoons pure vanilla extract
2 1/2 cups old-fashioned rolled oats
1 cup salted peanuts, coarsely chopped
3/4 cup raisins
3/4 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F.
  • Spread the coconut on a rimmed baking sheet and toast, stirring occasionally, until golden brown, about 5 minutes; set aside to cool.
  • Meanwhile, whisk together the flour, baking soda, cinnamon, salt and nutmeg in a medium bowl.
  • Beat the butter, brown sugar and granulated sugar in a large bowl using an electric mixer on medium speed until creamy. Beat in the eggs, one at a time, until incorporated. Beat in the milk and vanilla until blended. Reduce the speed to low and gradually beat in the flour mixture. Beat in the oats, peanuts, raisins, chocolate chips and toasted coconut.
  • Drop the dough by heaping tablespoons onto ungreased baking sheets. Bake, rotating the baking sheets halfway through, until golden brown, about 12 minutes. Cool the cookies on the baking sheets for 3 to 5 minutes and then transfer to wire racks to cool completely.

1 cup light brown sugar
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 ½ cups rolled oats
2 cups white chocolate chips
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
  • In a medium bowl, cream together the butter, brown sugar and white sugar until smooth. Stir in the eggs, one at a time, and then the vanilla. Sift together the flour, baking powder, baking soda and salt, stir into the creamed mixture. Finally, stir in the rolled oats, white chocolate chips and pecans. Drop by tablespoons onto the prepared cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven. Remove from baking sheets to cool on wire racks.

1 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
3 teaspoons vanilla extract
1 teaspoon coconut extract
1-1/2 cups quick-cooking oats
1-1/4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 cup sweetened shredded coconut, toasted
6 ounces white baking chocolate, coarsely chopped
Additional sugar

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg. Add extracts. Combine the oats, flour, salt and baking soda; gradually add to creamed mixture until blended. Stir in the coconut and chocolate., Drop by tablespoonfuls 3 in. apart onto ungreased baking sheets. Flatten with a glass dipped in sugar. Bake at 350° for 8-9 minutes or until golden brown. Cool for 1 minute before removing to wire racks.

1 cup light brown sugar, firmly packed
2 eggs
1 teaspoon vanilla extract
2 1/2 cups oats, uncooked
2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
5 1/2 ounces werther's original chocolate covered caramels, chilled and chopped
8 ounces white chocolate, chopped
1 1/2 cups unsalted peanuts, chopped

Steps:

  • Beat butter and medium speed until creamy.
  • Add sugars and beat well.
  • Add eggs and vanilla, beating until well blended and creamy.
  • Process oats in a blender or food processor until finely ground.
  • Combine oats, flour, baking powder, soda and salt and add to butter mixture, beating well.
  • Stir in chopped candies, white chocolate and peanuts.
  • Shape dough into 1-1/2 inch balls and place on parchment paper lined baking sheets.
  • Bake at 375 degrees for about 10 minutes or lightly browned.
  • Cool 1 minute on sheets.
  • Remove to wire racks to further cool.

Steps:

  • In a medium-sized microwave safe bowl, melt the butter and peanut butter together. Power on for 30 seconds, take out, stir. Repeat. Should take no more than about 90 seconds.
  • Add the brown & white sugar to the melted butter & peanut butter mixture and stir. Set this is the freezer for a couple minutes.
  • Remove from the freezer (or just wait for the mixture to come to room temp on it’s own) and add the egg + yolk (you just don’t want to add eggs to that hot mixture. We don’t want scrambled eggs here), add the vanilla extract, and stir.
  • Then add the flour, oats, baking soda and stir. You should have cookie dough consistency dough and if you don’t, either add a touch more flour if it’s too wet or a touch more peanut butter if it’s too dry.
