CARROT CAKE BAKED OATMEAL

Carrot Cake Baked Oatmeal image

This carrot cake baked oatmeal is fancy enough to serve for a special brunch but easy and healthy enough to make for your weekly meal prep.

Provided by Brittany Mullins

Categories     Breakfast

Time 1h5m

Number Of Ingredients 15

2 cups rolled old fashioned oats
½ cup grated carrots
½ cup canned crushed pineapple in juice (strained)
¼ cup chopped walnuts (plus more for topping)
¼ cup raisins
½ teaspoon cinnamon
1 teaspoon vanilla
1 Tablespoon ground flaxseed
2 cups unsweetened almond milk (or any milk of choice)
¼ cup maple syrup
pinch of sea salt
¼ cup whipped cream cheese
1 Tablespoon maple syrup
1 Tablespoon almond milk
1 teaspoon vanilla

Steps:

  • Preheat oven to 375°F and line a 8x8 baking dish with parchment paper or spray with non-stick cooking spray.
  • Add all ingredients for the baked oatmeal in a large bowl and stir until combined.
  • Pour into prepared baking dish and bake for 50-60 minutes. Check it around 45 minutes and if the top is getting too brown, cover with foil for the remaining time. The baked oatmeal will still be a little soft to the touch but should be cooked through and not jiggly in the middle.
  • While the oatmeal is baking, prepare the glaze by whisking together the whipped cream cheese, maple syrup, almond milk and vanilla in a small bowl.
  • Remove baked oatmeal from the oven and let sit for 5 minutes to cool before serving. Drizzle some of the glaze over each portion when serving.
  • Store in the refrigerator in an airtight container for up to 5 days.
  • To reheat the whole baked oatmeal, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set oven (or toaster oven) to 350°F and bake for 5-10 minutes or reheat in the microwave for 1 minute.

HEALTHY OATMEAL COOKIES WITH APPLES AND CARROTS

Healthy Oatmeal Cookies with Apples and Carrots image

Make a batch of these healthy oatmeal cookies for dessert, snack time, or a special breakfast. You can make these half the size using 1-tablespoon batter for each cookie and reducing the baking time to about 16-18 minutes, or until the edges are lightly golden brown.

Provided by Amy Palanjian

Categories     Dessert

Time 28m

Number Of Ingredients 10

1 cup quick oats ((or rolled oats ground finely in a blender or food processor))
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon cinnamon
1 cup grated carrot ((about 1 large))
1/2 cup grated apple ((about 1 medium))
1 cup raisins
1/2 cup sunflower seeds, chopped walnuts, or chopped pecans ((optional))
1/2 cup coconut oil ((or unsalted butter, melted and slightly cooled))
1/3 cup honey ((or maple syrup))

Steps:

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
  • Mix together all ingredients in a large bowl using a wooden spoon to start and then using (clean) hands to bring the batter completely together if needed.
  • Portion out 2-tablespoon sized balls of dough, place onto the prepared baking sheet, and press down until 1/4-1/2 inch thick. Space them about an inch apart-they won't spread, so close is okay.
  • Bake for 18-20 minutes or until lightly golden around the edges. Let cool on the baking sheet and serve.
  • These are best eaten on the day they are made, but can be stored in an airtight container at room temperature or in the fridge for 3-5 days.

THE BEST OATMEAL RAISIN COOKIES

The Best Oatmeal Raisin Cookies image

Do you like chewy cookies? Or do you prefer cakey ones? Our oatmeal-raisin cookies can be both! For a chewy cookie, bake them right away. For a cakey cookie, let the dough rest in the refrigerator for at least 3 hours (or overnight works even better) to allow the oatmeal to hydrate. Then bake for a puffy cookie. We used dark brown sugar for added flavor and moisture but our secret ingredient is honey. When baked right away, the honey causes the cookie to spread, keeping it soft and moist. When you let the dough rest, the oatmeal and flour absorb the honey for that classic cakey texture.

Provided by Food Network Kitchen

Categories     dessert

Time 1h30m

Yield 24 cookies

Number Of Ingredients 11

1 cup all-purpose flour (see Cook's Note)
1 1/4 teaspoons kosher salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 cup packed dark brown sugar
1 stick (8 tablespoons) unsalted butter, at room temperature
1/4 cup honey
1 tablespoon pure vanilla extract
1 large egg, at room temperature
2 1/2 cups old-fashioned rolled oats
1 cup raisins

Steps:

  • Arrange an oven rack in the center of the oven and preheat to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Whisk together the flour, salt, baking soda and cinnamon in a small bowl until combined. Beat the brown sugar and butter in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the honey, vanilla, egg and 1 tablespoon warm water and beat on high speed until creamy, scraping the sides and bottom of the bowl, about 3 minutes more. Add the dry ingredients and mix on low speed, scraping the bowl as needed, until completely combined. Add the oats and beat on low speed until combined. Fold in the raisins until evenly distributed. Arrange twelve 1-ounce scoops (2-tablespoon portions) of cookie dough on the prepared baking sheet, leaving about 2 inches between each. Bake until the cookies are lightly golden around the edges, 15 to 20 minutes. Cool on the sheet for 10 minutes, and then transfer to a wire rack to cool completely. Let the baking sheet cool, and then repeat with the remaining cookie dough.
