1 cup quick-cooking oats
3 tablespoons packed light-brown sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon coarse salt
4 large eggs, separated, room temperature
2 cups buttermilk, room temperature
1 stick unsalted butter, melted and cooled
1 teaspoon pure vanilla extract
Vegetable-oil cooking spray
Spicy Maple Butter, for serving
Pure maple syrup, for serving

Steps:

  • Preheat oven to 200 degrees. Heat waffle iron. Whisk together flour, oats, brown sugar, baking powder, baking soda, and salt in a large bowl. In another bowl, whisk together yolks, buttermilk, butter, and vanilla; stir into flour mixture.
  • Beat egg whites in a separate bowl until peaks are stiff but not dry. Fold into batter.
  • Coat waffle iron with cooking spray. Pour in batter, spreading almost to edges. Close lid; cook until waffles are golden, 3 to 5 minutes (or as indicated on waffle iron). Transfer to a baking sheet; keep warm in oven while cooking remaining batches. Serve warm, with Spicy Maple Butter and syrup.

  • Beat egg whites and vanilla extract in a glass or metal bowl until soft peaks form. Fold half the egg whites into the buttermilk batter until egg whites are incorporated; repeat with remaining half.
  • Ladle batter into preheated waffle iron. Cook until waffles are golden and crisp, about 5 minutes. Transfer waffle to a paper towel-lined plate to prevent sogginess and repeat with remaining batter.

In creating this recipe, we tried out many different methods-folding in egg whites, milk versus buttermilk, a yeasted batter. But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. Finally, we kept the sugar to a minimum, making these the perfect foil for sweet toppings like maple syrup, berries or jam.

1 3/4 cup all-purpose flour (see Cook's Note)
2 tablespoons granulated sugar
1 3/4 teaspoon baking powder
1/4 teaspoon baking soda

1 3/4 cup well-shaken buttermilk
2 large eggs
2 teaspoons vanilla extract
1 stick unsalted butter, melted and slightly cooled
Nonstick cooking spray

Steps:

  • Preheat a waffle iron to medium-high.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
  • In a medium bowl, whisk together the buttermilk, eggs and vanilla. Whisk the buttermilk mixture into the flour mixture until a batter is formed. Whisk in the butter until incorporated, being careful not to overmix the batter.
  • Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. This recipe makes 4, 7" round Belgian style waffles. When I make a fresh batch of these hearty waffles my husband and I each eat 1 waffle. The remaining waffles go into the refrigerator, then the next morning I reheat them in the oven on a wire rack at 350 degrees for 11 minutes. So easy . . . so yummy!!

So we devised a waffle recipe that is improved by being started the night before. Use quick-cooking oats for a tender waffle, plain if you prefer a more substantial, chewy waffle. The light tang of orange juice and buttermilk add a wonderful flavor. Serve with butter and spiced apple butter or maple syrup. With the orange-and-oat flavors of the waffles, plus melting butter and maple syrup, what could be better than cold, fresh apple cider?   • The night before you plan to serve the waffles, in a medium bowl, combine the buttermilk, orange juice, and oats. Mix well, cover, and refrigerate overnight.
  • In a large bowl, whisk the egg. Add the sugar and mix. Add the flours, baking soda, salt, and the oat mixture and mix well. Stir in the melted butter. The batter may be slightly lumpy.
  • Preheat and lightly butter a waffle iron. Spoon a generous 1/2 cup of batter onto the hot iron and close the lid.   • Combine dry ingredients, oat flour, baking powder, and salt, in a large bowl and whisk to remove any lumps. In a second bowl, whisk wet ingredients: buttermilk, melted butter, eggs, honey, and vanilla.
  • Add wet ingredients to the dry ingredients and fold together until just mixed, but lumpy. Rest better for about 10 minutes while the oat flour soaks up some of that moisture. Preheat waffle iron.
  • Batter will rise, stir batter quickly, just once or twice to knock it down to a more liquid state. Spray waffle iron with non-stick spray. Ladle batter onto hot waffle iron, to fill the center cavity, but not overflow, then close the lid. (Gypsy Note: Every waffle iron is different, I know my waffles are done when they stop steaming. My waffle maker has a little green light indicator that tells me when it thinks they're done. It's not always right. I look for even golden colour and crisp, firm waffle divots.)
  • When done, transfer to a cooling rack or baking sheet. Repeat the process until you've used up all your batter.

  • Preheat oven to 250°F. Heat heavy large skillet over medium heat. Brush skillet with melted butter. Working in batches, ladle batter by 1/4 cupfuls into skillet. Cook pancakes until bottoms are golden brown and bubbles form on top, about 2 minutes. Turn pancakes over; cook until bottoms are golden brown, about 2 minutes. Transfer to baking sheet. Keep warm in oven. Repeat with remaining batter, brushing skillet with more butter as necessary. Serve with lingonberry preserves and fresh blueberries and whipped cream, if desired.
