⅓ cup quick cooking oats
1 teaspoon baking powder

¾ cup unsweetened applesauce
½ cup fat free sour cream
1 egg, lightly beaten
1 teaspoon vanilla extract
⅓ cup milk

Steps:

  • Heat a lightly oiled griddle over medium-low heat.
  • In a bowl, mix the flour, oats, baking powder, baking soda, and cinnamon. In a separate bowl, mix applesauce, sour cream, egg, and vanilla. Stir applesauce mixture and milk into the flour mixture until evenly moist and thick.
  • Scoop about 1/4 cup batter for each pancake onto the prepared griddle, and cook, turning once, until golden brown on both sides.

3 cups cake flour
3 tablespoons sugar
2 tablespoons baking powder
1 teaspoon salt
2 1/2 cups milk, plus more if needed
2 cups Applesauce, recipe follows
1 tablespoon vanilla
1/4 teaspoon cinnamon
2 eggs
Butter, for cooking and serving
Maple syrup, warmed, for serving
6 pounds mixed apple varieties (Gala, Honeycrisp, Golden Delicious), peeled, cored and cut into eighths
1 cup apple juice or water
Juice of 1/2 lemon
1/2 cup light brown sugar
1 teaspoon cinnamon

Steps:

  • In a large bowl, combine the cake flour, sugar, baking powder and salt. Stir together and set aside.
  • In a separate bowl, whisk together the milk, Applesauce, vanilla, cinnamon and eggs. Slowly drizzle the wet ingredients into the dry ingredients, stirring gently with a spoon as you go. Once combined, if the mixture needs more moisture, splash in a little more milk. The batter should be pourable.
  • Heat a large skillet or griddle over medium-low to low heat. Smear a little bit of butter over the surface and drop tablespoon-sized amounts of batter onto the pan (more if you want larger pancakes). Wait a minute or so, then flip to the other side. The pancakes should be light golden brown and set in the middle.
  • Top with butter and drizzle with warm maple syrup.
  • Throw the apples, apple juice and lemon juice into a pan and bring it to the boil over medium-high heat. Lower the heat and simmer until the apples are soft, about 15 minutes. Stir through the sugar and mix until melted. Add the cinnamon and stir through.
  • Puree the mixture in a food processor, blender or food mill. If not using right away, leave to cool and then refrigerate.

Fluffy apple pancakes that you can make in your blender! These healthy pancakes are gluten free, too (no flour required, just oats!). Recipe yields 6 medium pancakes about 4 inches in diameter. FAIR WARNING: For reasons that I have not been able to deduce, these pancakes haven't turned out well for everyone like they did for me (I've made them six times and they always turned out well!). Oat flour is always a little finicky but I don't know why these pancakes have been particularly problematic. These pancakes are the reason why my cookbook's pancakes aren't oat flour based.

1 cup apple sauce
1 cup old-fashioned oats (gluten free if necessary)
1 egg
2 tablespoons coconut oil or butter, melted
1 tablespoon baking powder
1 teaspoon maple syrup or honey
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup grated tart apple (1 large honeycrisp apple was more than plenty for me)

Steps:

  • Place all the ingredients except for the grated apple in your blender. Blend until the batter is completely smooth (as in, you shouldn't see any remaining bits of oats or hear oats hitting the blades), pausing to scrape down the sides as necessary. Stir in the grated apple but do NOT blend again.
  • Heat a heavy cast iron skillet/non-stick pan over medium-low heat, or heat an electric griddle to 350 degrees Fahrenheit. Lightly oil the surface of your pan with coconut oil, butter or cooking spray. If you're using a non-stick electric griddle like mine, you might not need any oil at all.
  • Once the surface of the pan is hot enough that a drop of water sizzles on it, pour about 1/3 cup of batter onto the pan. This batter is thick, but your pancakes won't cook through if they're thicker than 1/2-inch, so you might need to help spread the batter out with a spatula. Let the pancake cook for about 3 minutes, until bubbles are popping up and the edges are more matte than shiny. (Be patient, these pancakes need to cook a little lower and slower than most.)
  • Once the underside is lightly golden, flip it with a spatula and cook for another 90 seconds or so, until golden brown on both sides. You may need to adjust the heat up or down at this point to avoid burning the outsides before the insides are cooked. Repeat with remaining pancakes.
  • Serve the pancakes immediately or keep warm in a 200 degree Fahrenheit oven.

1 ¼ cups old-fashioned oats ((or oat flour))
2 TBS ground flaxseed
1 tsp baking powder
½ tsp baking soda
½ tsp sea salt
2 TBS coconut sugar
½ tsp ground cinnamon
¾ cup milk
¼ cup plain Greek yogurt
3 TBS unsweetened applesauce
1 cup spinach
1 teaspoon pure vanilla extract
1 large egg
1-2 TBS butter (or coconut oil) (for greasing the griddle)

Steps:

  • Preheat an electric griddle to 350 degrees F.
  • Place the old-fashioned oats in your Vitamix (or other high-powered blender) and blend starting on low speed and increasing to high.
  • Blend for 30-60 seconds or until oats have become a fine powder and look like flour.
  • Remove oats from blender and place into a large mixing bowl.
  • Add flaxseed, baking powder, baking soda, salt, coconut sugar and cinnamon to the oat flour and stir to combine. Set aside.
  • Add milk, Greek yogurt, applesauce and spinach to the container of your Vitamix.
  • Blend starting on low speed and increasing to high.
  • Blend on high speed for 30-60 seconds until mixture is smooth and homogenous.
  • Add vanilla extract and egg and pulse until just combined.
  • Pour wet ingredients into dry ingredients and mix until just combined.
  • Grease your preheated griddle with butter, coconut oil or cooking spray.
  • Carefully place ¼ cup portions of pancake batter onto the griddle about 1-2" apart.
  • Cook on the first side until the edges become firm and the batter begins to bubble slightly (3-5 minutes).
  • Flip and cook on the second side until golden brown (about 3-4 more minutes).
  • Repeat until all the batter has been used!
  • Serve warm with maple syrup!

  • Blend 1 cup of the oats in a food processor or high-speed blender until they resemble a flour. Transfer to a large mixing bowl and add the rest of the dry ingredients.
  • In a separate mixing bowl, beat together the wet ingredients until full incorporated. Add the wet ingredients to the dry and beat until smooth. Let sit for 5 - 10 minutes to let the oats soften a little.

  • Mash the bananas and add into a blender with other ingredients, blend for about a minute on high. Pour the batter in a bowl and let it sit there as you heat up the pan.
  • Lightly coat a non-stick frying pan or griddle with olive oil (or coconut oil) and set hob to medium heat. Scoop 1/3 cup of the pancake batter onto the pan. Cook for about 2-3mins until the bubbles start to pop up around the edges and on top.
  • Flip to the other side and cook until golden brown. It shouldn’t take long on the flipped side so watch the pancake doesn’t get burnt. If your pan starts smoking it means the heat is too much, I normally start on medium heat and turn it down lower so that the heat won’t be too high.

  • Heat a griddle pan over medium-low and grease with your desired ingredient (I used coconut oil which was lovely). Ladle the batter on the pan, whatever size you would like. Cook until small bubbles start to form about 3 - 5 minutes, or until browned. The bottom of the pancakes should be fully cooked and sturdy enough to slide the spatula under them. If it's not and the pancake starts to break, continue to cook.
  • Flip (carefully!) the pancakes over and cook for another 2 - 3 minutes until brown. Serve immediately with your choice of toppings.
