Looking for an alternative for the traditiona pie crust? This oatmeal pie crust is flavorful and healthy and a perfect base for your favorite pie fillings.

Number Of Ingredients 7

1 ½ cup rolled oats ((see note on using instant oats))
⅓ cup all-purpose flour ((or use gluten-free baking flour))
½ teaspoon ground cinnamon
3 tablespoons coconut sugar
¼ teaspoon salt
5 tablespoons vegan butter (, cold)
3 tablespoons cold water

Steps:

  • Generously grease the bottom and sides of a 9-inch pie pan with vegan butter or coconut oil. Preheat oven to 375°F.
  • Place oats, flour, cinnamon, sugar, and salt together in a food processor or blender. Pulse until the oats resemble a course flour consistency.
  • Cut the cold vegan butter into cubes and add that to the food processor with the course oat flour mixture. Pulse in short bursts until the fat is distributed throughout.
  • Add the water, one tablespoon at a time, and pulse until the dough is moist. You should be able to pinch it between your fingers and it holds its shape. If not, add another tablespoon of cold water and pulse again. I find 3 tablespoons works best.
  • Press the dough into a pie pan, pressing it up against the sides of the pan. Place the pie pan in the fridge for about 10-15 minutes, to allow the crust to chill.
  • After the pie has chilled. Preheat the oven to 375°F. Bake the crust for 10-15 minutes, until the edges are golden brown. Remove from the oven and cool completey. Then fill with your favorite pie filling.

1 ½ cups gluten free oat flour
½ tsp. salt
¼ cup virgin coconut oil ((or any coconut oil that is solid at room temp))
¼ cup cold water

Steps:

  • Add the oat flour, salt and coconut oil to a large mixing bowl.
  • Add in the water and knead.
  • If your dough is still too crumbly, add more water, 1 tbsp. at a time, kneading well between each addition of water.
  • When done, the dough will be somewhat smooth and soft to the touch but have a firm density.
  • Place the dough on a piece of parchment paper.
  • Add another piece of parchment over the dough and roll flat.
  • Remove the top layer of parchment, and turn the dough over into your pie pan. Then carefully peel off the second piece of parchment.
  • Press the dough into the pie pan, working it with your fingers until you have nice, even coverage over your pie pan.
  • Use raw for pre-baked or no-bake pies, or bake in the oven at 350 F. for about 15 minutes just to get a light toast, for pies you'll bake. Do not over-bake this if you'll be baking it again with filling.

1 cup old fashioned oats (gluten free as needed)
1/2 cup egg whites from a carton
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon Italian seasoning
1 1/2 teaspoon baking powder

Steps:

  • Preheat oven to 400ºF and heat a large skillet (on the stove) over medium heat that has been sprayed with nonstick cooking spray.
  • Add all crust ingredients to the bowl of a food processor or the pitcher of a blender. Blend until smooth.
  • Pour mixture onto heated skillet; shape with the back of a spoon into a circle and spread for desired thickness. Cook for about 5 minutes and until edges start to brown and mixture is pretty set.
  • Crust should be lifting some when it is ready to flip. Use a spatula to flip crust over in the pan and cook the other side for about 2-3 minutes.
  • Spray a baking pan with nonstick cooking spray and transfer crust from skillet onto the pan.
  • Add sauce and all desired toppings. Bake 10 minutes until cheese is melted and edges of the crust are slightly browned.
  • Serve up and enjoy!

1/2 cup almonds, whole
1/2 cup walnuts or 1/2 cup pecans, whole
1 cup rolled oats
1/2 cup unbleached flour
1 pinch sea salt
3 tablespoons canola oil or 3 tablespoons butter, melted
3 tablespoons maple syrup
1 tablespoon water
1 tablespoon vanilla extract

Steps:

  • 1. Preheat the oven to 350°F.
  • 2. Bake the almonds and walnuts or pecans on separate baking sheets until they are fragrant and toasted: about 8 minutes for pecans or walnuts, 10 minutes for almonds. Remove from the oven and set aside to cool. Raise the oven temperature to 375°F.
  • 3. Grind the oats in a blender or food processor until they become a coarse meal. Empty into a large mixing bowl.
  • 4. Grind the almonds and walnuts or pecans into a coarse meal and add to the oats, along with the flour and salt.
  • 5. In a small bowl, whip together the oil or butter, maple syrup, vanilla and water. Add to the oat-nut mixture and mix well. Allow the mixture to sit for 10 minutes in the refrigerator.
  • 6. With cold, wet hands, press the crust mixture into a well- oiled tart or pie pan. Bake for 8 to 10 minutes or until barely golden brown.
  • 7. Set aside to cool. Then add pie filling and bake for additional 30 to 35 minutes.

40 grams arrowroot starch
1/8 tsp finely ground sea salt
115 grams vegan butter, cubed + chilled

  • Measure out all ingredients. Lightly grease or oil a 9″ pie dish (about 1″ deep) and set aside.
  • In a food processor, blitz the oat flour, arrowroot, and sea salt together to combine. Then add in the cold cubed vegan butter, and pulse again until you reach a sand texture. Then begin to process the mixture while simultaneously adding in the maple syrup 1 tbsp at a time, followed by the water, 1 tbsp at a time until you reach a consistent dough.

1 teaspoon salt
1/2 cup all-purpose flour
8 ounces butter, softened
1 cup packed light brown sugar
3 tablespoons melted butter

Steps:

  • Preheat the oven to 350° F. Combine rolled oats, salt, and flour in the bowl of a food processor. Grind the mixture until the oats are broken into small pieces, about 20 seconds. Set aside.
  • Cream 8 ounces butter and brown sugar in a stand mixer with a paddle attachment or with an electric beater until light and fluffy, about 4 minutes. Add the dry ingredients and mix on low until blended.
  • Spread the mixture in an even layer over a parchment lined sheet tray, stopping 1 inch before the edges. Bake for 10 minutes, rotating halfway through.

  • Allow the pan to cool. Break up the crust into pieces and place them in the bowl of a food processor and process until homogeneous and mealy. Slowly pour 3 tablespoons of melted butter into the food processor through the top feeder tube as it's running. The mixture will feel slightly damp.
  • Pour the mixture into a pie plate and press the crust into shape on the edges and bottom. Chill for 20 minutes before filling.

  • Remove the dough from the food processor. Place on a sheet of parchment paper. Form the dough into a ball with your hands.
  • In smooth long strokes using a rolling pin, roll the dough into a circle about 10-12 inches in diameter and 1/4 of an inch thick.
