BUTTERMILK OAT BREAD

Unique, delicious flavor.. a soft and dense dinner bread, with a hint of buttermilk tang and sweetness. Makes excellent toast. Half the rolled oats end up blended/ground into an oat flour. Prep time is a generous estimate, and does include up to 2-1/2 hours rising.

2 1/2 teaspoons instant yeast
2 tablespoons water, lukewarm
2 cups rolled oats, separated (not instant)
1 cup buttermilk, warmed
2 tablespoons butter
1/2 teaspoon kosher salt
1/4 cup brown sugar
1 tablespoon honey
2 cups all-purpose flour

Steps:

  • Stir yeast into warm water, set aside to bubble up.
  • Lightly grease a large bowl (for rising), set aside. Lightly grease a loaf pan (preferably pale aluminum), set aside.
  • Boil a kettle of water (for rising), then keep on simmer.
  • Blend/grind half of the rolled oats into a fine oat flour (easy in a Nutri-Bullet.) Reserve the balance intact.
  • Warm the buttermilk and melt the butter, then combine with salt, sugar, honey and the unground oats. (See OPTIONAL below. you may want to reserve 1 rounded Tbsp of rolled oats for the loaf's crust.).
  • Add yeast, ground oats and flour; knead until smooth. (For me, that's about 8 minutes with the Kitchen Aid, or 12 minutes by hand.).
  • Place dough in greased bowl to rise. Set (uncovered) in closed oven with an open kettle of boiled water. Don't turn on oven. Leave to rise for 1 hour.
  • After the hour, reboil kettle of water.
  • Form a loaf, place in greased pan. Again, set to rise (uncovered) in closed oven with an open kettle of boiled water. Don't turn on oven. Leave to rise for 1 to 1-1/2 hours.
  • Remove dough and kettle from oven. Preheat oven to 350°.
  • Bake in preheated oven for approximately 55 minutes total (+/- 5 min), lightly tenting with aluminum foil after 30-40 minutes to keep top from over-browning. The bread is done when its top is golden-brown and its center temperature is 190°.
  • OPTIONAL: Just before baking, brush the top of the loaves with an egg white beaten with 1 Tbsp cold water. Sprinkle with 1 rounded Tbsp rolled oats (unground).
  • NOTE: If you can't grind/blend the rolled oats, substitute 1 cup oat flour (or any flour) for the 1 cup of ground rolled oats in step #6.
  • NOTE: This is my adaptation of a recipe from King Arthur Flour: KAF "Vermont Whole Wheat Oatmeal Honey Bread." The main difference being that I replaced water and whole wheat flour with buttermilk and oat flour. Both recipes use whole rolled oats, but I've doubled it's proportion.

1 1/3 cups water
3 tablespoons canola oil
1/3 cup molasses
2 teaspoons salt
2/3 cup oatmeal
1 1/3 cups whole wheat flour
2 2/3 cups bread flour
1 tablespoon active dry yeast
1 cup walnut pieces
1 egg
1 tablespoon water
1 -2 teaspoon oatmeal

Steps:

  • Place room temperature ingredients in pan of bread machine in order listed; Set on dough setting; add walnuts in the last five minutes of last kneading.
  • Turn dough onto lightly floured surface; punch down to remove air bubbles; shape into a round loaf and place on greased baking sheet, cover; let rise until indentation remains after touching.
  • Make glaze, combine 1 egg and 1 tablespoon water, brush top of loaf, sprinkle with oatmeal; Bake in preheated 375°F oven 35 to 40 minutes; remove from oven, cool on rack.

2 cups old-fashioned oatmeal, uncooked
2 1/2 cups buttermilk
2 eggs, lightly beaten
1/4 cup melted butter
1/2 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons granulated sugar
1/2 firmly packed brown sugar
1/2 cup butter
2 teaspoons granulated sugar
1 tablespoon firmly packed brown sugar
1/4 cup toasted walnuts

Steps:

  • To make pancakes: Combine the oatmeal and buttermilk in a medium bowl.
  • Cover and refrigerate overnight.
  • While griddle is preheating to medium, add eggs and butter to oatmeal mixture and stir to combine.
  • Sift together the flour, baking soda, baking powder and salt.
  • Stir the sugars into the flour mixture.
  • Add to the oatmeal mixture and mix to combine, but do not overmix.
  • Make sure griddle is not too hot as it takes time for the oatmeal to cook.
  • Lightly spray the griddle with non-stick cooking spray.
  • Pour batter onto the griddle and cook until golden brown on the bottom.
  • Turn pancakes and cook until done.
  • Repeat with remaining batter.
  • Serve with walnut butter.
  • Excellent with blackbery compote or syrup.
  • This batter keeps well for several days in the refrigerator.
  • After storing, you may need to thin it out with a little more buttermilk.
  • To make walnut butter: The night before, combine the butter, sugars, and walnuts.
  • Refrigerate overnight to allow flavors to combine.
  • Any leftover walnut butter may be frozen.

1 1/4 cups lukewarm water
3 1/2 cups bread flour
1/4 cup rolled oats

1 teaspoon salt
2 tablespoons unsalted butter, melted
1/2 cup buttermilk

Steps:

  • Sprinkle the yeast over the water in a small bowl; do not stir; set aside for at least 5 minutes to proof to a foamy consistency.
  • Stir together the flour, oats, sugar and salt in a large bowl; add the butter, buttermilk and yeast mixture and beat with an electric mixer until the ingredients are well blended.
  • Turn out the dough onto a floured surface and knead for about 5 minutes or until the dough is smooth and elastic.
  • Lightly oil a large bowl and transfer the dough to the bowl; cover with a tea towel and let the dough rise in a warm place until it is doubled in size, about 1 hour.
  • Pun the dough down and let it rise again, covered with a tea towel, for 45 minutes.
  • Preheat oven to 350° and oil a 9x5x3-inch loaf pan.
  • Punch the dough down again and place it in the loaf pan; bake for 35-40 minutes or till the loaf pulls away from the side of the pan and loaf sounds hollow when you thump it.

1 cup walnut halves
1 egg
1 cup buttermilk
2 tablespoons unsalted butter, melted
1 1/2 cups all-purpose flour
1 cup light brown sugar, packed
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Coarsely chop 1/2 cup walnuts. Reserve remaining walnut halves.
  • Preheat oven to 350°F
  • Lightly coat a 5-by-9-inch loaf pan with non-stick cooking spray.
  • In a large bowl, with mixer on medium-high speed, beat to blend egg, buttermilk, and butter. Add chopped walnuts, flour, brown sugar, baking soda and powder, salt and vanilla; stir just until evenly moistened.

This is a tasty bread with very little fat-virtually none if you use the nonfat buttermilk and leave out the nuts. I've only made it with raisins, but I'll bet it would be really good with the dried cranberries also.

3/4 cup quick-cooking oats
1 1/4 cups fat-free buttermilk (or you can use 1% milk soured with 1 tsp. vinegar per cup of milk. I wouldn't recommend nonfat milk,)
1 3/4 cups flour
1/2 cup brown sugar (I prefer dark brown)
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons vanilla
1/2 cup raisins or 1/2 cup dried cranberries
1/2 cup chopped nuts (can use more raisins instead) (optional)

Steps:

  • Combine oats and buttermilk; mix well and set aside for a few minutes.
  • Combine dry ingredients, except for the sugar, and mix well.
  • Add brown sugar to oat mixture and mix well, pressing out any lumps.
  • Add buttermilk mixture and vanilla to dry ingredients and stir just until dry ingredients are moistened.
  • Stir in fruit and nuts (if using).
  • Put batter into 2 1-lb loaf pans that have been sprayed with nonstick spray.
  • Bake at 325 for 25-30 minutes.
  • Cool in pan for 5-10 minutes, then remove from pans to cool on wire rack.

1 envelope dry yeast
2 cups buttermilk
4 1/3 cups (about) bread flour

1 cup chopped walnuts
1 egg

Steps:

  • Stir warm water and honey in large bowl to blend. Sprinkle yeast over. Let stand until foamy, about 8 minutes. Heat buttermilk in small saucepan to lukewarm (about 100°F.). Stir into yeast mixture. Add 2 cups bread flour, 2 cups oats, wheat flour, oil and salt and stir until smooth. Gradually mix in enough remaining bread flour to form dough. Cover and let dough rest 15 minutes.
  • Turn out dough onto floured surface. Knead until smooth and elastic, Adding more bread flour if sticky, about 10 minutes. Knead in nuts. Oil large bowl. Add dough; turn to coat. Cover bowl with clean towel; let rise in warm area until doubled, about 50 minutes.
  • Oil large baking sheet. Punch down dough. Turn out onto oiled surface; knead briefly. Divide dough into 3 pieces. Roll each piece into 16-inch-long rope. Braid ropes together; tuck ends under and pinch to seal. Transfer to prepared sheet. Cover with clean towel. Let rise in warm area until almost doubled, about 45 minutes.
  • Preheat oven to 375°F. Whisk egg and milk in bowl. Brush loaf generously with some of egg mixture. Sprinkle with additional oats. Bake until golden and tester inserted into center comes out clean, about 50 minutes. Transfer to rack; cool. (Can be made 1 day ahead. Wrap tightly; store at room temperature.)
