Creamy Jalapeno Deviled Eggs image

These are creamy deviled eggs with an edge that go well with BBQ chicken on the grill and macaroni salad. You can use piping tips to create a beautiful filling design.

10 large hard-boiled eggs, peeled and halved lengthwise
½ (8 ounce) package cream cheese, softened
2 tablespoons mayonnaise
½ teaspoon garlic powder
4 slices cooked bacon, crumbled, divided
1 small jalapeno pepper, seeded and diced
1 pinch salt and ground black pepper to taste
1 pinch paprika

Steps:

  • Spoon egg yolks into a bowl. Add cream cheese, mayonnaise, and garlic powder; mix well. Fold 3 crumbled slices of bacon and jalapeno pepper into egg yolk mixture; season with salt and pepper.
  • Fill each egg white half with egg yolk filling. Sprinkle remaining crumbled bacon over filling and top with paprika. Chill in refrigerator for about 1 hour before serving.

12 eggs, hard boiled
1/2 cup mayonnaise
1 tablespoon creole mustard, plus
2 teaspoons creole mustard
1 tablespoon minced pickled jalapeno pepper, plus
1 teaspoon minced pickled jalapeno pepper
2 teaspoons Emeril's Original Essence or 2 teaspoons creole seasoning
1/2 teaspoon cayenne seasoning
1/2 teaspoon red pepper sauce
1/4 teaspoon paprika

Steps:

  • Peel eggs and slice in half lengthwise. Carefully remove the yolks from the eggs. Push the yolks through a fine sieve or cut up and combine in a bowl with mayonnaise,, Creole mustard, jalapenos, Creole seasoning or Essence, cayenne pepper, and red pepper sauce. Mix together. Spoon into the egg white halves.
  • Refrigerate for at least 1 hour. Before serving, sprinkle with paprika.

1 tablespoon mayonnaise
1/2 teaspoon Worcestershire sauce
1/2 tablespoon prepared mustard
2 teaspoons apple cider vinegar
1 dash salt
paprika

Steps:

  • Cut eggs in half lengthwise, remove yolks, and reserve whites.
  • Mash yolks until about the texture of cornmeal.
  • Combine yolks, mayo, Worcestershire sauce, mustard, and 1 teaspoon of the vinegar mix until smooth.
  • Slowly add more vinegar until tart and moist enough (about 1 to 2 teaspoons). If it gets tart enough but is not moist enough add a bit more mayonnaise.
  • Add a dash of salt and mix in .
  • Spoon mixture into center of egg whites.
  • Sprinkle tops with paprika. Chill and serve cold.

1 dozen medium eggs
1/4 cup mayonnaise
1/4 cup Dijon mustard
4 tablespoons butter, at room temperature
1 teaspoon fresh lemon juice
1/4 teaspoon cayenne pepper
Salt and freshly ground white pepper
Finely snipped chives for garnish

Steps:

  • Place the eggs in a pan large enough to hold them in a single layer and cover with cold water. Bring to a boil, cover, turn off the heat and let eggs sit 15 minutes. Drain and run under cold water until eggs are completely cool.
  • Peel eggs and cut in half lengthwise. Remove the yolks and rub through a fine-mesh strainer into a bowl. Add the mayonnaise, mustard and butter; mix until smooth. Stir in the lemon juice, cayenne, salt and white pepper to taste. Place in a pastry bag or Ziploc bag with a cut-off corner.
  • Fill the egg whites neatly by pressing bag. Sprinkle with chives.

6 eggs
1 -2 jalapeno, depending on heat preference, plus one for garnish*
1/8 teaspoon olive oil
5 tablespoons canola oil mayonnaise
1 teaspoon yellow mustard
1/2 teaspoon white wine vinegar
1/4 teaspoon onion powder
salt and pepper

Steps:

  • Preheat broiler on high. Rub olive oil on the outside of the jalapeño(s) and place under the broiler on a baking sheet. Broil for about 15 minutes (turning occasionally), or until very charred and dark brown on the outside. Transfer to a bowl and cover with plastic wrap for 15 minutes. Next, remove skins from the outside and remove ribs and seeds from the inside for a milder heat; chop, and set aside.
  • Place eggs in a medium pot, cover with water. Bring to a boil and boil for 10 minutes. Drain water and place eggs in an ice water bath for 15 minutes. Crack and peel off the shells, cut eggs in half lengthwise, and pop the yolk out into a small mixing bowl. Set egg whites aside for now.
  • To the yolk bowl, add jalapeño, mayonnaise, mustard, vinegar, onion powder, salt, and pepper. Smooth with the back of a spoon and mix well.
  • To make a piping bag: Place egg mixture in a Ziploc bag, let all the air out, and seal. Snip off a small piece at one corner, making sure the hole will be big enough to squeeze the filling out. Pipe the yolk filling evenly among each egg. Chill well before serving.
  • *The additional jalapeño can be thinly sliced and placed on top of each egg for garnish. Or, finely chopped and sprinkled over eggs.

  • Cut the hard boiled eggs in half, wiping the knife with a towel in-between each slice to keep the whites clean. Scoop the yolks into a medium bowl.
