MARSHMALLOW CREAM CHEESE BUTTERCREAM FROSTING

Marshmallow Cream Cheese Buttercream Frosting image

I was trying to simplify a Meringue Buttercream/Cream Cheese frosting recipe for a Carrot Cake that I make for my son's restaurant and decided to try a jar of Marshmallow Creme in place of the tedious job of making the meringue. It is wonderful and cuts the time in half. Like other Buttercreams, it doesn't hold up real well in hot weather, so you can refrigerate it.

Time 15m

Yield 12 serving(s)

Number Of Ingredients 3

1 (13 ounce) jar marshmallow creme (any brand)
1 lb butter

  • Place over a bowl of ice water if you need to chill it while starting to add the butter in pieces; beat until just blended and smooth.
  • Gently stir in the jar of marshmallow creme.
  • Frost your cake.
  • You can successfully refrigerate this frosting until ready to use and after you've frosted the cake.

BUTTERCREAM CREAM CHEESE DECORATOR FROSTING

Buttercream Cream Cheese Decorator Frosting image

This is a recipe that I created because I decorate a-lot of cakes and cupcakes. This works well for decorating, and it has lots of flavor. I let whatever I decorate set uncovered for several hours for the frosting to firm up and then I cover it loosely until time to transport or eat. The only problem I seem to have with this frosting is making sure I get enough for my cakes or cupcakes before the kids or my husband hits the bowl!

Provided by Mommy of Five

Categories     Dessert

Time 5m

Yield 6 cups approximately, 1 serving(s)

Number Of Ingredients 10

1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
1/2 cup Crisco shortening (preferably butter flavored)
1/2 teaspoon coconut flavoring
1/2 teaspoon lemon extract
1/2 teaspoon butter flavoring
1 teaspoon almond extract
1 teaspoon vanilla extract
3 -4 tablespoons milk
2 lbs powdered sugar

Steps:

  • Beat the cream cheese, butter and crisco on medium or high speed for 1 minute or until light and fluffy. Add extracts and flavorings and 3 tablespoons of milk, beat on medium speed until combined. Gradually add the powdered sugar in about six different intervals and beat until well combined between intervals, using a rubber scraper to make sure all ingredients are incorporated. Beat on high speed for approximately 1 minute to increase the volume. Frosting will be light and fluffy, you may need to add up to 1 tablespoons of milk for desired consistency. I usually add up to 1 teaspoons extra of one of the extracts if I am going to use the frosting for use in a decorating bag. I just prefer the flavoring instead of the extra milk.
  • If you are going to use this as a colored decorator frosting I've found that adding the gel colors when you add the extracts and milk seems to work the best.

CREAM CHEESE FROSTING

Cream Cheese Frosting image

Made with much less confectioners' sugar than the usual cream cheese frosting, it's sturdy, dependable and not too sweet - just right for a child's birthday party or to ice three-dozen cupcakes for a bake sale. While it's not quite as silky as a buttercream based on beaten eggs and sugar syrup, it's much, much less persnickety to make and it holds up well without refrigeration for several hours before it starts getting soft. Plus, the cream cheese makes it incredibly creamy while adding a tangy bite that helps tone down the sweetness of the confectioners' sugar. To make lemon cream cheese buttercream (which tastes a little like a cheesecake), substitute one tablespoon lemon juice for the vanilla and add a teaspoon of grated lemon zest to the frosting.

Number Of Ingredients 5

2 sticks (1 cup, 8 ounces) unsalted butter, at room temperature

2 cups confectioners' sugar
2 tablespoons milk, more as needed
2 teaspoons vanilla extract

Steps:

  • Using an electric mixer, whip the butter and cream cheese together until light and fluffy. Beat in sugar, milk and vanilla. If the frosting seems too thick to spread, add a little more milk.

  • Add the cream cheese and work it in - don't beat it in, just slowly mix with a wooden spoon. Depending on how soft the mixture is, you may want to put it in the fridge for 10 mins at this point. If it's runny, it will firm up again. It should be spreadable and not run off the cake.

WHITE CHOCOLATE CREAM CHEESE BUTTERCREAM FROSTING

White Chocolate Cream Cheese Buttercream Frosting image

Tips: Use unsalted sweet butter. Unsalted sweet butter has a higher melting point than salted butter and this prevents your frosting from becoming too soft. Also, adding 1-2 tablespoons of Meringue Powder to frosting recipes acts as a stabilizer, keeping shortening and other liquids from separating, especially in hot weather.
