1 1/2 cups vegetable broth (can use chicken broth if not preparing as vegetarian)
3 tablespoons soy sauce
1 1/2 tablespoons rice wine or 1 1/2 tablespoons sake
1 tablespoon sugar
1 tablespoon cornstarch
1 teaspoon sesame oil
2 tablespoons sesame oil
3 dried red chili peppers
1/2 cup sliced green onion
1 tablespoon minced garlic
2 peeled carrots, thinly sliced into coins
2 cups small broccoli florets
1 red bell pepper, cut into thin strips
2 cups shredded napa cabbage
1 cup canned baby corn
8 ounces can sliced water chestnuts, drained
hot cooked rice (optional)

Steps:

  • Combine sauce ingredients in medium bowl and blend well. Set aside.
  • Heat wok or very large skillet. Add 2 tablespoons sesame oil and heat until very hot. Add chili peppers and stir-fry until darkened. Add green onions and garlic; stir-fry 1 minute. Add carrots; stir-fry 4 minutes. Add broccoli and bell pepper; stir-fry 1 minute. Add cabbage and stir-fry 1 minute. Add baby corn and water chestnuts; stir-fry 30 seconds.
  • Stir sauce; add to vegetables and mix well. Cover wok or very large skillet and cook until vegetables are crisp-tender. Remove chili peppers. Serve over rice, if desired.

This is quite strong with the smaller ratio of oil, so might want more oil. It is delicious though- on potatoes, salad, cooked vegetables, creamy pastas, and sandwiches! The nutritional yeast makes it so thick and adds a certain hint of almost-cheesiness. (My best friend, Kylie, invented this- that's why, personally, I call it Kylie dressing! :-)

2 tablespoons flax seed oil (or other oil but flax is healthiest)
2 tablespoons red wine vinegar or 2 tablespoons apple cider vinegar
2 tablespoons soy sauce or 2 tablespoons Braggs liquid aminos
2 -3 tablespoons nutritional yeast (I heap it in, I love it!)
1 garlic clove, minced
1 -2 tablespoon tahini (do not use nutritional yeast if you add the tahini)

Steps:

  • Combine the ingredients and either or both or neither options in a tightly-sealable jar. Shake well before serving, and refrigerate.
  • Use up within a few days.

1 lb chicken breast
1 lb penne pasta
4 cups fresh Baby Spinach
1 eggplant, cut in 1 ' dice
2 yellow squash, cut lengthwise in half and sliced
1 cup cherry tomatoes
4 ounces sun-dried tomatoes
1/2 cup extra virgin olive oil
2 garlic cloves, chopped
1/4 teaspoon dried oregano leaves, crumbled
1 teaspoon black pepper
1/2 cup parmesan cheese
salt

Steps:

  • Grill chicken and cut into 2" pieces and set aside.
  • Cook Pasta to a soft bite, toss with a little EVOO and set aside.
  • Heat the EVOO in a large sauté pan on a medium flame, add garlic, then add spinach and cook to soft and bright green I color, set aside.
  • Heat the EVOO in a large sauté pan on a medium flame and add eggplant, zucchini, sun dried tomatoes, and cherry tomatoes. Cook until all vegetables are tender.
  • In a large bowl toss the grilled chicken, pasta, and cooked vegetables, add salt & pepper to taste.
  • Garnish with parsley and grated Parmesan cheese.

300 g rice noodles
3 tablespoons vegetable oil
3 sprigs Thai basil
6 -8 cloves garlic, peeled,washed and chopped
125 g bean sprouts, washed,drained,straggly tails removed
1 small red onion, sliced
1/2 small red carrot, julienned
4 large shiitake mushrooms, shredded
50 g snap peas, julienned
2 -3 red chilies, seeded and julienned
1 spring onion, cut into 5 cms lengths
1 tablespoon paprika
1 tablespoon sugar
85 ml soy sauce
85 ml lime juice
3 tablespoons crushed peanuts
1 limes or 1 lemon, quartered
3 tablespoons coriander leaves, washed and chopped,to garnish

Steps:

  • Cook the noodles in boiling water until al dente (cooked but firm to bite).
  • Drain well in a colander.
  • Rinse immediately under cold running water.
  • Drain again.
  • Spread on a large plate and set aside.
  • If your not using them immediately, add a little oil, mix well and set aside.
  • This is to prevent the noodles from sticking to each other.
  • Now, heat oil in a wok or skillet.
  • Once hot, add basil leaves and stir-fry for a few seconds.
  • Remove with a slotted spoon.
  • Drain on a paper towel.
  • Set aside.
  • Add garlic and stir-fry over medium flame for a few seconds.
  • Add the remaining vegetables.
  • Stir-fry until cooked but crunchy (takes about 2 minutes).
  • Add the noodles, paprika, soy sauce, sugar and lime juice.
  • Stir-fry till the noodles are thoroughly mixed with all ingredients and heated through.
  • Transfer to a serving dish.
  • Garnish with fried basil leaves, corriander leaves, peanuts and lime wedges.
  • Serve immediately.
  • Enjoy.
  • Dont eat too much!
  • Always remember the GOLDEN RULE: Eat a little less to eat a little more!

2 cups milk
1/4 lb butter
6 tablespoons flour
1/2 cup grated cheddar cheese
1 (8 ounce) can chinese noodles
6 hard-boiled eggs, chopped
2 tablespoons chopped pimiento
1 (4 ounce) can mushrooms
1 small green pepper, finely chopped
salt

Steps:

  • Make cheese sauce by combining milk, butter, flour and cheese.
  • Simmer till blended well.
  • Do not boil.
  • Saute mushrooms and green pepper in a small amount of butter.
  • Toss all ingredients together and serve immediatly over warmed Chinese noodles.

1 fennel bulb, diced
1 small red bell pepper, diced
1 onion, diced
3 garlic cloves, minced
2 teaspoon lemons, zest of, grated
3 tablespoons chopped fresh mint leaves
3 tablespoons chopped fresh parsley
2 tablespoons chopped fresh rosemary
1/2 teaspoon ground coriander
1 1/2 cups uncooked arborio rice
1/2 cup dry white wine
3 1/2 cups vegetable broth
2 tablespoons fresh lemon juice
1/3 cup grated parmesan cheese
salt and pepper

Steps:

  • Heat oil and butter in heavy saucepan over med heat.
  • Sir in fennel, red pepper, onion and garlic.
  • In a small bowl, mix together lemon zest, mint, parsley and rosemary.
  • Stir half of this herb mixture into saucepan and set aside the rest.
  • Sauté vegetables until slightly softened, 3-4 minute.
  • Stir in coriander and rice.
  • Cook, stirring frequently until rice grains are thoroughly coated with oil and butter.
  • Stir in wine, reduce heat to low.
  • Stir in 1 cup of broth.
  • Continue to stir while ladling in more broth as needed; rice should have a thin veil of broth at all times.
  • Cook 20-25 minutes until all broth is used and absorbed and rice is tender.
  • Remove pan from heat and stir in remaining herb mixture, lemon juice and Parmesan cheese.
  • Season with salt and pepper and allow to stand 8-10 minute before serving.
