Recipe can be made ahead and stored in the refrigerator for up to 6 weeks. For an added treat melt one teaspoon butter and one tablespoon of brown sugar in each muffin tin before filling. Absolutley wonderful! 1 (15 ounce) box Raisin Bran cereal (Flakes , about 9 cups)
3 cups sugar
5 cups flour
5 teaspoons baking soda
2 teaspoons salt
4 eggs, beaten
1 cup vegetable oil
1 quart buttermilk
1 1/2 teaspoons cinnamon (optional)
12 teaspoons butter
12 tablespoons brown sugar

Steps:

  • Mix cereal with raisins, sugar, flour, soda and salt in a very large bowl. Add oil, eggs and milk. Allow to rest before use.
  • Store in a covered container and use as needed.
  • Fill muffin tins 2/3 full and bake at 400 degrees for 18-20 minutes.
  • For an added treat melt one teaspoon butter and one tablespoon of brown sugar in each muffin tin before filling.

Moist and super yummy Raisin Muffins. I made them from a basic muffin recipe then adding some ingredients of my own and tweaking the cooking time. Very easy to make! Chop the raisins finely--don't mash them! The banana makes the already moist muffins, well, more moist with just a hint of banana flavor. Not to mention that it gives a good look on the muffin top crust. It's important that you use an overripe banana. Enjoy!

2 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup sugar
1 large overripe banana, mashed
3/4 cup finely chopped raisins
1 cup milk
1 egg, beat well
1/4 cup canola oil (or any vegetable oil)
12 pieces raisins, for topping (optional)

Steps:

  • Heat oven at 400 Fahrenheit.
  • Mix the dry ingredients together: flour, baking powder, salt, and sugar.
  • In a separate bowl, mix milk, oil, egg, banana, and raisins together. Mix very well.
  • Pour mixture on dry ingredients. Mix only until the dry ingredients are moistened.
  • Put the batter on muffin pan (with muffin liners!) carefully. Top with one raisin per muffin, if desired.
  • Bake for 20 minutes or until light to medium brown.

Steps:

  • Preheat your oven to 350 degrees F (175 degrees C) and line a muffin tin with paper muffin liners or coat with non-stick cooking spray.
  • In a large mixing bowl, combine the dry ingredients including all-purpose flour, baking powder, salt, sugar, and cinnamon.
  • Make a well in the center of the dry ingredients and add the cooled, melted butter, milk, egg, and vanilla extract.

My husband is a diabetic so I made this recipe for RAISIN BRAN MUFFINS. I was pleased with how they turned out. Good source of fiber.

15 oz. box raisin bran cereal
5 med. eggs, well beaten
4 1/3 c buttermilk
2 1/2 c splenda for cooking
1 c unsweetened home made applesauce
5 tsp soda
5 tsp baking powder
3 c all purpose flour
1 1/2 c whole wheat flour
1/2 c bob's red mill natural raw wheat germ
1 tsp sea salt
1-2 tsp vanilla extract

Steps:

  • 1. Mix Raisin Bran, All purpose and whole wheat flour and also the wheat germ together in a large bowl, set aside.
  • 2. Beat eggs,add Buttermilk, salt, soda, baking powder, applesauce and the Splenda. Mix well and then pour over the cereal flour mixture, and be sure to mix it throughly.
  • 3. Fill mini muffin pans with liners or you can just spray the pans with a cooking spray and fill with the mixture about 3/4 full. Bake in preheated 400 degree oven for about 15 minutes. You may have to watch and test with toothpick to see if it comes out clean. cool on rack and place in covered container.
  • 4. You can bake them right away or you can keep the dough in refrigerator for several days and just bake as many as you wish.
