3/4 cup Almond Flour ((80g))
1 tbsp Coconut flour ((7g))
2 tbsp Low Carb Sugar Substitute ((24g))
1 tsp Baking Powder ((4g))
1/2 tsp Xanthan Gum ((Optional))
1/8 tsp Pink Himalayan Salt
2 tbsp Melted Butter ((28g))
2 tbsp Cream Cheese (at room temperature (28g))
2 Large Eggs
1 tsp Vanilla Extract ((5ml))

Steps:

  • Turn on your waffle machine and set it to around 350 F.
  • In a bowl, whisk together the wet ingredients well.
  • Using a different bowl, mix together all the dry ingredients. Now add the dry ingredients to the wet ingredients. Whisk together until combined.
  • Scoop ½ cup of mixture into each waffle mold. Cook until golden, around 3-4 minutes.
  • Enjoy them with your choice of toppings such as butter, whipped cream, berries, or keto syrup.

Gluten-Free Sugar-Free Waffles image

This recipe is a combination of the "Banana-Nut Waffles (Gluten-Free and Vegan" and "Gluten Free Waffles" recipes (from this site) with some small modifications of my own. Our family is both gluten and sugar free for a number of different reasons. My thanks to all chefs that help make eating fun with dietary restrictions. The kids loved these as it brought back many happy memories of eating waffles on a Sat. morning.

2 apples (pealed and diced)
2 eggs
1 cup milk
1/2 cup olive oil (extra light)
1 teaspoon vanilla
2 tablespoons xylitol sugar substitute
2 cups gluten-free flour (Bob's Red Mill Gluten-Free All-Purpose works well)
1 tablespoon baking powder
1/4 teaspoon salt
1/4 teaspoon xanthan gum

Steps:

  • Heat waffle iron.
  • Peal and dice apples.
  • Combine milk and diced apples in the blender (or food processor) and blend until smooth.
  • Separate eggs.
  • Put egg yolks, oil and vanilla in the blender and mix briefly.
  • Beat the egg whites until stiff and set aside.
  • Combine flour, xylitol, baking powder, salt and xanthan gum in a mixing bowl.
  • Add ingredients from the blender and stir to combine all ingredients. Don't over stir, a few lumps are ok.
  • Fold in egg whites.
  • Use around 3/4 cup of batter per waffle (at least that works best for our round Belgium waffle maker).
  • For sugar-free syrup we use 1 part xylitol combined with 2 parts water. Heat together on the stove and add maple flavoring to taste.

This is a modified version of Peter Reinhart and Denene Wallace's Waffle recipe. This sugar-free, gluten-free breakfast is tasty and filling. As written, it will yield three large waffles, each one easily serving two. Diabetic- and celiac-friendly.

2 cups walnut flour
2 cups almond flour
4 teaspoons baking powder
1 tablespoon vanilla extract
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon liquid stevia
¼ cup butter, melted
¼ cup unsweetened applesauce, or as needed
6 egg whites

Steps:

  • Preheat a waffle iron according to manufacturer's instructions.
  • Mix walnut flour, almond flour, baking powder, vanilla extract, cinnamon, nutmeg, and stevia together in a large bowl.
  • Mix melted butter and applesauce together in a measuring cup, adding only enough applesauce so mixture is 1/2 cup.
  • Beat egg whites in the bowl of a stand mixer until fluffy and stiff peaks form. Remove 2/3 of the beaten egg whites and set aside in a bowl.
  • Place flour mixture and butter-applesauce mixture in the bowl of the stand mixer with the remaining egg whites; beat on low using the stirring paddle until batter is thoroughly combined. The mixture will be dry. Fold reserved egg whites into batter until incorporated.
  • Ladle 1 to 2 scoops batter into the preheated waffle iron; cook according to manufacturer's instructions. Repeat with remaining batter.

Everybody loves these (not just people on special diets)! For a special treat, substitute blueberries or vegan chocolate chips for the nuts.

1 large banana, mashed
1 3/4 cups soymilk or 1 3/4 cups rice milk
1/2 cup vegetable oil
1 tablespoon honey or 1 tablespoon agave nectar
2 cups gluten-free flour (I use Bob's Red Mill Gluten-Free All-Purpose Baking Flour)
4 teaspoons baking powder
1/4 teaspoon salt
1/2 cup walnuts or 1/2 cup pecans

Steps:

  • Heat waffle iron.
  • Beat bananas, milk substitute, oil, and sweetener with a wire whisk or electric mixer.
  • Stir in flour, baking powder and salt until just mixed. Batter may be lumpy.
  • Fold in nuts or berries or chocolate chips.
  • Spray waffle iron with non-stick cooking spray. Pour about 2/3 cup of batter onto the center of the iron. Close lid.
  • Bake about 5 minutes or until steaming stops. Carefully remove waffle and serve with non-hydrogenated margarine (I like Earth Balance Natural Buttery Spread) and real maple syrup or honey. Other serving suggestions: spread with peanut butter or top with fresh berries and vegan whipped cream or vegan ice cream.
  • If you have extra batter, either store it in an airtight container in the fridge for a day or two OR go ahead and cook up some more waffles and freeze them in Ziploc bags. Then toast for a weekday morning treat!
