Vegan flapjacks image

Choose your favourite nuts and dried fruits in this versatile dairy-free flapjack recipe, or change it up each time you make them - be adventurous!

Number Of Ingredients 6

140g dairy-free spread
140g soft light brown sugar
2 tbsp golden syrup
175g rolled oats
75g chopped nuts of your choice
75g dried fruit (such as raisins, dried cranberries, chopped apricots)

Steps:

  • Heat the oven to 160C/140C fan/gas 4 and line a 20cm square baking tin with baking parchment.
  • Melt the dairy-free spread, sugar and syrup in a saucepan over a medium heat. Remove from the heat and tip in the oats, chopped nuts and dried fruit. Transfer to the tin, packing the mix in with the back of a spoon.
  • Bake for 30 - 35 mins until lightly golden and crisp around the edges. Leave to cool in the tin before slicing into squares. Keep in an airtight container for up to three days.

150g ready-to-eat stoned dates
100g low-fat spread
3 generous tbsp agave syrup
50g ready-to-eat stoned dried apricots, finely chopped
50g chopped toasted hazelnuts
3 tbsp mixed seeds
50g raisins
150g porridge oats

Steps:

  • Heat the oven to 190C/170C fan/gas 5. Line an 18cm square tin with baking parchment. Put the dates into a food processor and blitz until they are finely chopped and sticking together in clumps.
  • Put the low-fat spread, agave syrup and dates into a saucepan and heat gently. Stir until the low-fat spread has melted and the dates are blended in. Add all the remaining ingredients to the pan and stir until well mixed. Spoon the mixture into the tin and spread level.
  • Bake in the oven for 15-20 mins until golden brown. Remove and cut into 12 pieces. Leave in the tin until cold. Store in an airtight container.

1 tablespoon golden syrup
4 ounces sugar
2 ounces oats
2 ounces self-rising flour
3 ounces crushed corn flakes

Steps:

  • Mix margarine and syrup together very gently.
  • Mix the dry ingredients pour on the margarine mixture and mix well.
  • Spread evenly in a greased Swiss roll tin and press down firmly.
  • Bake in a moderately hot oven 190c for about 20 minutes.
  • Cut into fingers while warm.

110 g rapeseed oil
5 tablespoons honey
25 g butter
200 g rolled oats
25 g pumpkin seeds
110 g roasted hazelnuts, roughly chopped
50 g sliced almonds
110 g figs or 110 g dates

Steps:

  • Pre heat oven to 180 degrees C / fan forced 160 degrees C / gas mark 4.
  • Oil and line 23cm square tin.
  • Warm oil and honey together in pan until honey has melted.
  • Remove oil and honey mixture from heat and add all other ingredients.
  • Combine well, then tip mixture into baking tin. Press mixture firmly into tin with the back of a spoon.
  • Bake until golden brown on edges.
  • Score into 12 bars while still warm and leave in the tin to cool.

Oat Cuisine! Savoury Cheese, Nut and Oat Flapjacks image

Not really Oat Cuisine - Haute Cuisine - but I could not resist the title! These cheesy and nutty oat flapjacks are very tasty and easy to make; a savoury take on the usual sweet flapjack recipe which normally contains syrup, honey, sugar and fruit. Great for lunch box snacks as well as picnics or as an accompaniment to soups, stews and chili. Try to use a good quality mature Cheddar cheese for that essential "cheesy" zing! I have stated porridge oats, however these flapjacks are also wonderful when made with jumbo oats - which are a bit more expensive. To achieve a "full" flavour, it is essential to use both type of nuts; the peanuts give the flapjacks the savoury and almost salty flavour, whilst the pecans or walnuts give a subtle taste, texture and nutty "bite" to these little cheese, nut and oat bars! If you like your food with a bit of a kick, you can add some cayenne pepper, as I often do!

2 ounces butter
2 ounces peanuts, roughly chopped
2 ounces pecans or 2 ounces walnuts, roughly chopped
1 large carrot, peeled and grated
6 ounces mature cheddar cheese, grated
5 ounces porridge oats or 5 ounces jumbo rolled oats
1/2 teaspoon dried herbs, OR
2 teaspoons freshly chopped mixed herbs
1 egg, beaten
salt and black pepper, to taste
cayenne pepper, to taste (optional)

Steps:

  • Melt the butter and stir in the mixed nuts, grated carrot, grated cheese, oats, herbs and beaten egg - mix well.
  • Season with salt and pepper to taste and mix well. (Season with Cayenne pepper if using).
  • Spoon in to a greased and lined 11" x 7" cake or baking tray.
  • Press down to smooth and bake in a pre-heated oven 180C/350F/Gas Mark 4 for 25-30 minutes, or until golden brown.
  • Allow to cool in the tin and then mark into bars or squares.
  • Store in an airtight tin or container for up to 1 week.
