2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 pinch ground cinnamon
4 tablespoons cold butter or 4 tablespoons margarine
3 large eggs, lightly beaten
6 ounces miniature semisweet chocolate chips (1 cup)
1 cup walnuts, toasted and coarsely chopped
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350ºF. In a large bowl, mix flour, sugar, baking powder, salt, and cinnamon. With a pastry blender or 2 knives used scissor-fashion, cut in the butter or margarine until mixture resembles fine crumbs.
  • Spoon 1 tablespoon beaten eggs into a cup; reserve. Add chocolate chips, walnuts, vanilla, and remaining beaten eggs to flour mixture; stir until evenly moistened. With hand, knead mixture a few times in bowl until dough forms.
  • On floured surface, with floured hands, divide dough into quarters. Shape each quarter into a 9" by 2" log. Place logs crosswise, 4 inches apart, on 2 large cookie sheets. With a pastry brush, brush tops and sides of logs with reserved egg. Bake logs 25 minutes. Cool logs on cookie sheets on wire rack 10 minutes.
  • Place 1 log on cutting board. With serrated knife, cut warm log crosswise into 1/2-inch-thick diagonal slices. Place slices upright, 1/4-inch apart, on cookie sheets. Repeat with remaining logs. Bake slices 15 minutes to allow biscotti to dry out. Cool completely on sheets on wire racks. (Biscotti will harden as they cool.) Store biscotti in tightly covered container.

1 cup sugar
1/2 cup butter or margarine, softened
1/2 cup mashed very ripe banana (1 medium)
1 teaspoon vanilla
2 eggs
3 cups Gold Medal™ flour
3 teaspoons baking powder
1/4 teaspoon salt
1/2 cup miniature semisweet chocolate chips

Steps:

  • Heat oven to 350°F. Grease large cookie sheet with shortening or cooking spray, or line with cooking parchment paper or silicone baking mat.
  • In large bowl, beat sugar and butter with electric mixer on medium speed, or mix with spoon. Beat in banana, vanilla and eggs until smooth. Stir in flour, baking powder and salt. Stir in chocolate chips.
  • Divide dough in half. On cookie sheet, shape each half into 10x3-inch rectangle with greased hands (dough will be sticky).
  • Bake about 25 minutes or until toothpick inserted in center comes out clean. Cool on cookie sheet 15 minutes; move to cutting board. Using sharp knife, cut crosswise into 1/2-inch slices.
  • Place slices, cut sides down, on cookie sheets. Bake 10 to 12 minutes or until golden brown and dry on top. Turn cookies. Bake about 10 minutes longer or until golden brown. Remove from cookie sheets to cooling rack.

¼ teaspoon salt
½ cup butter, softened
¾ cup white sugar
2 eggs

1 (4 ounce) package bittersweet chocolate bar with almond nougat, chopped
1 cup chopped hazelnuts

Steps:

  • Preheat oven to 350 degrees F (180 degrees C). Grease and lightly flour cookie sheet.
  • In a small bowl, mix flour, baking powder and salt.
  • Beat butter and sugar in large bowl until light and fluffy. Beat in eggs and vanilla. Gradually add flour mixture, beating well after each addition. Stir in chocolate and nuts.
  • Divide dough into two equal parts. On floured surface, shape dough into two logs, 14 inches long, 1-1/2 inches wide and 1 inch thick. Place two inches apart on prepared cookie sheet.
  • Bake for 25 minutes or until lightly browned. Remove to a cutting board. Let cool 5 minutes. Cut into 3/4 inch thick diagonal slices and return to cookie sheet, standing upright.
  • Bake 10 minutes more or until slightly dry. Cool completely on wire racks.

4 ¼ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup butter, softened
1 ½ cups white sugar
3 eggs
2 tablespoons rum
2 tablespoons pineapple juice
1 ½ teaspoons coconut extract
1 cup shelled pistachio nuts
½ cup chopped dried pineapple
½ cup sweetened flaked coconut

Steps:

  • In a large bowl, cream together the butter and 1 1/3 cups of sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each one. Stir in the rum, pineapple juice and coconut extract until well blended. Combine the flour, baking powder and salt; stir into the batter. Stir in the pistachio nuts, pineapple and coconut until evenly distributed. Cover and refrigerate for about 10 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease two cookie sheets.
  • Divide the dough into four equal parts. Form each piece of dough into a 12 inch long log shape on a lightly floured surface. Place two logs onto each cookie sheet, and pat down until they are about 3 inches wide. There should be at least 2 inches of space between each log.
  • Bake for 30 minutes in the preheated oven, until firm but not crisp. Remove from the oven, and allow to cool for at least 10 minutes.
  • Place the biscotti bars on a cutting board, and use a serrated knife to cut into 3/4 inch wide diagonal slices. Return the slices to the baking sheets cut side down. Return to the oven. Bake for 8 minutes, then turn the cookies over, and bake for an additional 8 minutes, or until lightly toasted. Cool completely, then store in an airtight container.

This is another biscotti recipe that was birthed from experimenting with a basic biscotti recipe from Vegan Planet. My version is a bit healthier and a little less sweet.

1/3 cup non-hydrogenated margarine, softened (Earth Balance)
1/2 cup organic sugar, plus
2 tablespoons organic sugar
2 egg substitute (Ener-G egg substitute)
1 teaspoon vanilla extract (I like vanilla paste)
1/4 teaspoon almond extract
1 1/2 cups unbleached all-purpose flour
1/2 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 cup semi-sweet chocolate chips
1/4 cup raw unsalted cashews, chopped
1/4 cup unsalted walnuts, chopped

Steps:

  • Preheat oven to 350 degrees F.
  • Cream margarine and sugar together until light and fluffy. Blend in the "eggs" and extracts. Mix in the flour and baking soda. Stir in the chocolate chips and nuts. Chill for 10 minutes.
  • Divide the chilled dough in half and shape into a 1 inch-thick rectangular slabs on an lined, oiled baking sheet. Flatten the slabs slightly by evenly patting them down. Bake until they are golden brown and a toothpick inserted in the center comes out clean, about 25 minutes. Remove from the oven and reduce the oven temperature to 275 degrees F.
  • Let slabs cool for 10 minutes, then cut each slab into 1/2 inch-wide slices. Place sliced biscottis on their sides on an ungreased baking sheet (just simply remove the lining from the one you just used) and bake for another 8-10 minutes until they are crisp and dry. Let cool completely before storing in an airtight container, where they will keep for a few days. Freezing makes them even tastier!

1 cup coarsely chopped lightly salted pistachio nut

8 -10 ounces white chocolate baking squares (for nut coating)
1 teaspoon finely shredded lemon peel (for nut coating)
1 tablespoon shortening, additional if needed (for nut coating)

Steps:

  • Preheat oven to 350 degree F.
  • Line cookie sheet with parchment paper.
  • Beat butter with mixer on medium to high speed 30 seconds.
  • Add sugar, soda, baking powder, and salt; beat until combined.
  • Add eggs, lemon peel and juice, and extract. Beat until combined.
  • Add flour; beat until combined. Stir in nuts.
  • Divide dough in half. Shape each into a 12-inch roll. Place at least 3 inches apart on baking sheet.
  • Bake 35 to 40 minutes or until beginning to brown (logs will spread).

Dip 1 end of biscotti into white chocolate; sprinkle with nuts. Dry completely.

Steps:

  • Preheat oven to 350°F. and butter and flour a large baking sheet.
  • In a bowl whisk together flour, cocoa powder, baking soda, and salt. In another bowl with an electric mixer beat together butter and granulated sugar until light and fluffy. Add eggs and beat until combined well. Stir in flour mixture to form a stiff dough. Stir in walnuts and chocolate chips.
  • On prepared baking sheet with floured hands form dough into two slightly flattened logs, each 12 inches long and 2 inches wide, and sprinkle with confectioners' sugar. Bake logs 35 minutes, or until slightly firm to the touch. Cool biscotti on baking sheet 5 minutes.
  • On a cutting board cut biscotti diagonally into 3/4-inch slices. Arrange biscotti, cut sides down, on baking sheet and bake until crisp, about 10 minutes. Cool biscotti on a rack. Biscotti keep in airtight containers 1 week and frozen, 1 month.

18 ounces roll refrigerated chocolate chip cookie dough
1 1/2 teaspoons vanilla extract
1/2 teaspoon rum extract
1 1/2 cups almonds, toasted, chopped
1 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F & grease & flour a large cookie sheet.
  • In large bowl, break up cookie dough.
  • Sprinkle vanilla & rum extract over dough & mix well.
  • Stir toasted almonds into dough.
  • Divide dough into 4 equal portions, shaping each into an 8"x1" log.
  • Place logs 3 inches apart on prepared cookie sheet, then flatten each to about 1 1/2 inches wide.
  • Bake 15-20 minutes or until golden brown, then cool for 15 minutes.
  • Reduce oven temperature to 200 degrees F.
  • With serrated knife, cut each log into 10 slices, then place slices, cut side down on the same cookie sheet.
  • Return to oven & bake another 45 minutes to 1 hour, depending on how crisp you want the biscotti to be.

2 large eggs
2 tablespoons instant coffee
1 teaspoon vanilla
2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter, softened
3/4 cup granulated sugar
1 cup almonds, sliced (or chopped)
4 ounces bittersweet chocolate, baking bar chopped (I have used unsweetened baking chocolate)

Steps:

  • Preheat oven to 325°F.
  • Lightly grease and flour large baking sheet (I sprayed with Pam).
  • In a small bowl,stir the eggs,instant coffee and vanilla until well blended; set aside.
  • In a medium bowl, mix flour, baking powder and salt; set aside.
  • In a large bowl, beat the butter and sugar with an electric mixer on medium speed until light and fluffy.
  • Beat in egg mixture.
  • Gradually add the flour mixture, beating well after addition.
  • Stir in chocolate and nuts.
  • Divide the dough into 2 equal portions.
  • On a lightly floured surface, shape the dough into 2 logs, each 14" long, 1-1/2" wide, and 1" thick.
  • Place the logs on baking sheet.
  • Bake for 25 minutes or until lightly browned.
  • Set the baking sheet on a wire rack to cool 10 minutes.
  • Remove the logs to cutting board (I usually just cut them on the cookie sheet). Cut with serrated knife, cut diagonally into 1/2 inch thick slices.
  • Place slices 1/2 inch apart upright (not on sides).
  • Bake 12 to 15 minutes or until slightly dry.
  • Remove to rack to cool.
  • I leave mine on cookie, let cool.
  • Then drizzle with melted chocolate (I melt chocolate in microwave).
  • The chocolate is just my addition - so good with a cup of coffee.
  • Store biscotti in air tight container.

1/2 cup mashed banana (about 1 large banana)

1/2 cup toasted chopped pecans
1/3 cup mini chocolate chip

Steps:

  • In a large bowl, whisk together flour, baking powder, sugar, and salt.
  • In a medium bowl, combine bananas, oil, egg and vanilla.
  • Pour banana mixture into dry mixture along with nuts and chocolate chips, stir together.
  • Flour a working area and turn dough out onto it. Flour hands as dough is sticky. Form two 7 inch loaves about 2 inches wide.
  • Put loaves on cookie sheet lined with parchment paper.
