SWEET AND SALTY CRUNCHY NUT BARS

- Be still my beating heart! Or perhaps this is not the best thing to say here, given the likelihood of this lusciously over-the-top piece of chocolate excess inducing just such an outcome. I wouldn't want to make this very often, so impossible is it to walk away from with any conviction. I fear it is the kitchen equivalent to crack cocaine.
- Still, as the French say "Everything in moderation, even moderation." This is gloriously intemperate, riotously vulgar. I love it.
- The key is the blaring balance between sweet and salty: it's like several klaxons going off in your head as you eat. And it's strange that while I would normally eschew an all-milk chocolate offering, I prefer it here to the bittersweet-and-milk mixed version. Not that either is bad, and since the jury is matched on this, I feel it only right to alert you to either option. For what it's worth, I like the darker version in the round pan and cut into panforte-type skinny wedges, and my preferred milk chocolate version set in a rectangular pan and cut into chunky, squat slabs (rather as I feel and look like after eating too many of them).
- Line your springform pan with aluminum foil or use a foil pan.
- Break up or chop the chocolate into pieces, and drop into a heavy-based saucepan. Add the butter and syrup, put on a low heat, and melt gently together.
- Tip the peanuts into a bowl, and crush the honeycomb candy with your hands, letting the golden-glinting rubble fall into the nuts.
- Take the melted chocolate mixture off the heat and stir in the peanuts and crushed honeycomb candy, then tip straight into the springform pan or foil pan. Smooth the top of the mixture as much as you can, pressing down with a silicon spatula or vinyl-disposable-gloved hand. Put into the refrigerator for about 4 hours, and once set, cut into slices as desired.
- Make Ahead Note: The bars can be made 1 day ahead. Transfer slices to airtight container, layered with parchment paper, and store in refrigerator. Keeps for 3 to 4 days.

- Heat oven to 350. In large bowl, beat brown sugar, butter, vanilla and egg yolk with mixer on medium speed. Stir in flour and salt.
- Press dough in ungreased 13 x 9 inch pan. Bake 25 minutes or until light brown.
- Immediately sprinkle white baking chips over baked layer. Let stand 5 minutes or until softened; spread evenly. Sprinkle with nuts; press gently into topping. Cool completely, about 1 hour.
FRUIT AND NUTTY BARS
These bar cookies are a lil fruity, a lil nutty and a lil crazy chocolatey yumminess all rolled into one! These were a big hit with my family and friends, and would be great at a potluck, a party or just to munch on. **Cooking time does not include chilling time**

- Melt the butter in a 9x13 inch pan by putting the pan in a 350 degree oven.
- Keep an eye on the butter, and when it's melted, take the pan out of the oven(but keep the oven at 350 degrees) and sprinkle the graham cracker crumbs over top.
- Mix this well and then press it evenly on the bottom of the pan to form your crust.
- Next, in a microwave safe bowl, mix together the marshmellow creme and the Nutella.
- Microwave this mixture for 30-60 seconds, just until it's smooth, easy to stir and a little warm.
- Drop spoonfuls of the Nutella mixture around the crust in little blobs.
- Now take your kiwi slices and evenly scatter them on top.
- Pour the can of sweetened condensed milk over everything evenly.
- Scatter the cranberries, cashews, milk chocolate chips and white chocolate chips next.
- Lightly press down the layers in the pan.
- Bake in your 350 degree pre-heated oven for 25-30 minutes; it should be browned slightly around the edges.
- Let cool completely, then slice into bars and put in the fridge for at least an hour to help them set up a bit.
- Store covered in the fridge, and enjoy!
NUT GOODY BARS
My mother passed this delicious recipe down to me-we both love to cook. One nice thing about it is that it makes so much you don't need to make a double batch!

- In a large saucepan, melt chocolate and butterscotch chips with peanut butter over low heat. Spread half in a greased 15x10x1-in. pan; chill until firm. Stir in peanuts into remaining melted mixture and set aside. Place sugar and vanilla or maple flavoring in a large bowl; set aside. In a small saucepan, combine butter, milk and pudding mix; bring to a boil and boil for 1 minute. Add to bowl and beat until smooth; spread over chilled layer in pan. Chill until firm. Cover with reserved peanut/chocolate mixture. Refrigerate until serving. Cut into bars.

Found this gem on a package of walnuts. It's become a favourite here at our house. I cut them into bite size pieces just so I can have a few to savour and not feel any pangs of guilt.

- Heat oven to 350 degrees.
- In a large bowl combine 2 Cups flour, oats, brown sugar, baking soda and salt Add butter, stir until moistened.
- Reserve 1 Cup of crumb mixture for topping.
- Press remaining mixture into the bottom of an ungreased 13 x 9 baking pan.
- Bake for 15 minutes or until lightly brown.
- Remove pan from oven, sprinkle with chocolate morsels and walnuts.
- In a small bowl combine remaining 1/3 Cup flour and caramel topping.
- Drizzle over crust.
- Sprinkle evenly with reserved crumb mixture.
- Bake for 20- 25 minutes or until lightly brown.
- Cool in pan.
- Cut into bars.

QUICK AND EASY NUTTY CHEESE BARS
This is a delicious butter pecan cheesecake in a bar. A friend of my mom's gave me this recipe when I was 12 years old. Very easy to make and everyone I've made them for over the years has raved. Note: This recipe is not supposed to taste like regular cheesecake, it is technically a butter pecan flavored cream cheese dessert bar.

- Preheat oven to 350 degrees.
- Grease and flour 9 x 13 inch baking pan.
- Stir together and mix well dry cake mix, 3/4 cup melted butter and 3/4 cup pecans. Press mixture evenly into prepared pan.

- Preheat oven to 350.
- Butter 13x9-inch baking pan; set aside.
- In large bowl, beat 1 cup (2 sticks) butter and granulated sugar until light and fluffy; beat in egg and vanilla.
- Stir in flour until well mixed; press evenly into prepared pan. Bake until edges are brown and center looks dry, about 15 minutes.
- Remove to wire rack while preparing topping.
- Maintain oven temperature.
