EASY NUTELLA COOKIES

Easy Nutella Cookies image

These Nutella cookies come together in no time using minimal ingredients. Soft, chewy and delicious, they'll hit the spot every single time.

Provided by Amina Al-Saigh

Categories     Desserts

Number Of Ingredients 5

1 cup Nutella
1 cup flour
1 large egg
1/4 cup melted butter
1 tsp baking powder

Steps:

  • Start by preheating the oven to 350F
  • In a bowl, add the flour and baking powder and mix well
  • Next, add the Nutella, whisked eggs and melted butter
  • Mix well using a spoon or your hands until combined and no streaks of flour are visible
  • Place in the fridge for 10-15 minutes so the cookie dough can firm up (this prevents the cookies from spreading too much)
  • Form into balls and place a few inches apart on a parchment lined baking sheet (cookies will spread so leave some space)
  • Bake for 10-12 minutes on the middle rack. Ovens will vary so take them out when they are firm but still slightly soft. Overbaking these cookies will result in a harder/crunchier texture
  • Allow to cool for 10 minutes then enjoy! The texture should be soft with chewy edges

NUTELLA NO BAKE COOKIES

Nutella No Bake Cookies image

Nutella No Bake Cookies are just like traditional no bake cookies, but are made with Nutella instead of peanut butter. Made with butter, sugar, oats, cocoa powder and vanilla, these Nutella No Bake cookies only take a few minutes to make!

Provided by Jessica & Nellie

Categories     Cookies

Number Of Ingredients 8

2 cups sugar
¼ cup butter
½ cup milk
2 Tbsp cocoa powder
1/2 tsp salt
1 tsp vanilla
¾ cup Nutella
2 ½ cups quick oats

Steps:

  • In a medium saucepan, combine the sugar, butter and milk. Heat over medium heat, stirring occasionally until the mixture begins to boil.
  • As soon as the mixture begins to boil, set a timer for 1 minute and keep stirring. Remove the pan from heat as soon as it's been 1 minute. Make sure not to boil the mixture too long or your cookies will end up being hard and crumbly!
  • Stir in the cocoa, salt, vanilla and Nutella until mixture is smooth. Fold in the oats and then immediately use a cookie scoop to scoop out the cookies onto cookie sheets lined with wax paper. Let the cookies sit for about 30-60 minutes until completely set. No bake cookies can be stored at room temperature or in the refrigerator.

  • Preheat oven to 350°F. Prepare 2 baking sheets with parchment. Evenly spread hazelnut flour onto a baking sheet, then place into the oven to toast. Bake for about 15 minutes, ensuring that you stir the mixture every 5 minutes to promote even toasting. Remove the toasted hazelnut flour from the oven and allow to cool for about 30 minutes.
  • In a medium mixing bowl, whisk together the cooled hazelnut flour, all purpose flour, and salt. Set aside.
  • In a stand mixer fitted with the paddle attachment, beat together the butter, sugar, and cinnamon, until light and fluffy – about 3-5 minutes. Add egg yolk and vanilla, then beat again until well-combined. Add flour mixture to the stand mixer and beat until just combined and a crumbly looking dough has formed.
  • Remove dough from stand mixer and lightly form into a disk shape with your hands. Place dough-disk onto a heavily floured surface, and roll the dough out to about ⅛-¼” thick. Using a 2 ½” scalloped edge cookie cutter (flower shape cookie cutter), cut out cookies. Carefully place the cookies onto the baking sheet (I find it’s easiest to use a metal spatula to lift them off the counter)

  • Set the racks in the upper and lower thirds of the oven and preheat to 350 degrees. Line two baking sheets with parchment paper.
  • In the bowl of a stand mixer fitted with paddle attachment, beat together the butter and Confectioners' sugar until soft and light, 3-4 minutes. Beat in the vanilla. Lower the speed and beat in the flour mixture until just combined. Roll the dough into teaspoon-size balls (these are bite-sized cookies, so the balls will be very small), and place on the prepared baking sheets about 1-1/2 inches apart. Press each cookie with the back of a fork to flatten the cookies slightly (dip the fork in flour if it sticks to the dough). Bake the cookies, rotating the pans from top to bottom and front to back midway through, for about 15 minutes or until very lightly golden. Cool the cookies completely on a rack (if you add the filling while the cookies are warm, it will melt).
  • Spread a thin layer of Nutella on the flat side of half of the cookies, and then cover with the remaining cookies to make sandwiches. Store the finished cookies between sheets of parchment or wax paper in a cookie tin or container with a tight-fitting cover.
