Nuoc Cham is a tasty and versatile Vietnamese dipping sauce and dressing that pairs with many classic Vietnamese dishes!

1 1/2 tablespoons palm sugar ((or granulated sugar))
2 tablespoons hot water
1 tablespoon fish sauce
1 tablespoon rice vinegar
1 tablespoon lime juice ((freshly squeezed))
1 clove garlic ((minced))
1 tablespoon red holland chili pepper ((or Thai chili for more heat; sliced/chopped))

Steps:

  • In a small bowl, dissolve the sugar into the hot water. Once dissolved, stir in the fish sauce and rice vinegar.
  • When you are ready to serve the nuoc cham, add the freshly squeezed lime juice, minced garlic, and chopped chilies. These items are best added fresh.
  • If you like more heat, use fresh chopped Thai chili peppers instead of Holland chilies. They'll give the sauce a spicier kick!

4 tablespoons nuoc nam (fish sauce)
2 cloves garlic
2 1/2 tablespoons powdered sugar
3 dried red peppers (the tiny ones)
1/2 limes, juice of or 1/2 lemon, juice of
1/4 cup water, maybe a little less

Steps:

  • Using a mortar and pestle, mash garlic and cayenne peppers together with the powdered sugar.
  • Add fish sauce, water and lime (or lemon) and mix well.
  • This recipe can easily be doubled.
  • Add finely shredded carrot and thinly sliced cilantro and green onion for garnish.

2 garlic cloves, minced
2 tablespoons sugar
1/2 cup warm water
1/4 cup asian fish sauce
1/4 cup fresh lime juice

1 red Thai chile, thinly sliced (2-3 more if you like it hot)
1 green onion, chopped

Steps:

  • Peel carrot lengthwise with a vegetable peeler. Stack carrot slices and cut into very fine long julienne strips.
  • In a bowl, mash the garlic with the sugar. Add remaining ingredients and carrot slices and mix well.

Shrimp Summer Rolls with Nuoc Cham image

Traditional nuoc cham, a Vietnamese dipping sauce, is much sweeter than the version here, which amps up the lime juice for a tangy twist. If you prefer a sweeter sauce, add an extra tablespoon of sugar.

One 8.8-ounce package rice vermicelli (see Cook's Note)
12 large peeled and deveined shrimp (about 8 ounces)
1/3 cup freshly squeezed lime juice
3 tablespoons sugar
3 tablespoons fish sauce (see Cook's Note)
1 large clove garlic, finely grated
1 red Thai bird chile or 1/4 red jalapeno, finely chopped
Eight 8 1/2-inch round rice paper wrappers
2 scallions, cut into 1 1/2-inch matchsticks
1 medium carrot, cut into 1 1/2-inch matchsticks
1/3 English cucumber, cut into 1 1/2-inch matchsticks
1/2 cup mint leaves
1/2 cup cilantro leaves
1/2 cup Thai basil leaves or sweet basil leaves
1/4 cup roasted salted peanuts, chopped

Steps:

  • Prepare the rice vermicelli according to the package directions. Drain well and set aside.
  • Meanwhile, bring a large pot of water to a boil and prepare an ice bath by filling a large bowl with ice and cold water. Boil the shrimp until bright pink, opaque and just cooked, about 1 1/2 minutes. Drain and transfer to the ice bath. Once cool, slice each shrimp in half lengthwise, pat dry and refrigerate until ready to use.
  • Make the nuoc cham by whisking together the lime juice, 1/4 cup water, sugar, fish sauce, garlic and chile in a medium bowl. Set aside.
  • To assemble the summer rolls, line a baking sheet with parchment paper. Fill a large skillet with cold water.
  • Working one a time, soak a rice paper wrapper in the skillet until just pliable, 5 to 7 seconds. Transfer the wrapper to a clean cutting board. Line up 3 shrimp halves, pink-side down, in the bottom third of the wrapper. Layer with some scallions, carrots, cucumbers, mint, cilantro and basil. Top with a scant 1/4 cup vermicelli and sprinkle with about 1 teaspoon of the peanuts. Fold in the sides of the wrapper, then roll it up like a burrito. Place it on the prepared baking sheet seam-side down. Repeat with the remaining wrappers and filling ingredients, making sure the rolls are not touching on the baking sheet.
  • Cover the finished summer rolls with plastic wrap and refrigerate until ready to serve. Store any remaining vermicelli in an airtight container in the refrigerator.
  • Serve the summer rolls with the nuoc cham on the side for dipping.

¼ cup sugar
⅓ cup water
2 Tablespoons lime juice ( - freshly squeezed (about half a lime))
2 teaspoons rice wine vinegar ( - see Note 3)
1 clove garlic ( - finely diced)
1 small Thai chili pepper ( - finely diced)
1 Tablespoon shredded carrot
1 teaspoon chili garlic sauce ( - (optional))

Steps:

  • Set the carrots aside. Add the remaining ingredients in a bowl and mix it together until the sugar completely dissolves. Add the shredded carrots right before serving. Makes about 1 cup of sauce.

Nuoc Cham (Vietnamese Dipping Sauce) image

My personal take on a traditional dipping sauce. A little bit sweet, but mostly savory with a nice bit of heat. I make this a minimum of 24 hours before I use it to let the flavors mingle. Leftover sauce can be kept for three to four weeks in a sealed container in the refrigerator. If this isn't to your taste as written, experiment! Everyone's tastes are different! Some like their nuoc cham really sweet and mild, some like it tangy with heat. Mine tends to be more towards the tangy heat side. So, before you add the garlic, onion, and vinegar, sample it and adjust the ingredient amounts to suit your liking. Keep in mind that this recipe is LOUD when you first make it. The flavors mingle and mature a bit after the first 24 hours. I hope you enjoy!

This is a Nigel Slater recipe from The Observer Food Monthly magazine. I haven't made it myself yet, but posted it here for future use and safekeeping, as I thought it sounded great. The sauce is a vegetarian version of the Vietnamese classic. You can also add a little extra crunch by adding some shredded carrot. If you make it let me know what you think please! cooking time includes infusion time for the sauce. (The coriander in the recipe refers to cilantro.)

40 g rice noodles
5 spring onions, mainly the white parts, chopped finely
2 carrots, peeled and cut to matchstick size
1 1/4 cups bean sprouts (the recipe calls for 2 large handfuls)
2 garlic cloves, peeled and cut into fine slivers
18 mint leaves, torn into small pieces
6 large egg roll wraps
oil, for frying
2 small hot red chili peppers, chopped very finely
1 tablespoon dark soy sauce
6 tablespoons water
3 tablespoons rice vinegar
4 tablespoons caster sugar
1 large lime, juice of
1 bunch coriander leaves, chopped

Steps:

  • For the Spring Rolls.
  • In a bowl with warm water soak the rice noodles until soft, approximately five minutes.
  • Drain and mix with the carrot, spring onion, bean shoots.
  • garlic and mint.
  • On a flat surface lay out a spring roll wrapper and place 1/6 of the mix in the middle.
  • Roll the whole thing up, so that it looks like a fat sausage.
  • Using a little water, moisten the edges to seal, also folding over the ends.
  • Repeat.
  • Heat oil in a dep frying pan (make sure the is quite a bit of room between the oil and the top of the pan as it will bubble up when you put the spring rolls in).
  • Fry the spring rolls for 2-3 minutes, turning once, until crisp and golden brown.
  • Drain of excess fat on kitchen paper.
  • Serve hot with dipping sauce.
  • For the Dipping Sauce.
  • Put the Soy sauce, water, vinegar and sugar in a small pan and heat until it nearly comes to a boil.
  • The sugar should dissolve if you stir it well before the sauce boils.
  • Remove from heat and leave to cool.
  • Once cool add all the other ingredients and leave for at least an hour to infuse before serving.

1 cup rice wine vinegar
2 cups sugar
4 tablespoons fish sauce
1/2 teaspoon cayenne pepper
1 carrot, finely grated
1/4 cup mint leaf, chopped
chili pepper, chopped (optional)
peanuts, chopped (optional)

Steps:

  • Combine water, vinegar and sugar and cook for 3-5 minutes stirring to dissolve sugar.
  • Remove from heat and add fish sauce.
  • Add shredded carrots and mint.
  • Taste and add more fish sauce and cayenne to taste.
  • Cool before serving.
  • Chopped chili peppers and finely chopped peanuts may also be added to warm sauce and then allowed to cool.
