Another recipe for the ingredient of the month... "beer". I haven't tried this yet, so please let me know what you think! Makes one 1 1/2 lb. loaf

1/2 cup milk
1/2 cup beer
1 tablespoon butter or 1 tablespoon margarine
2 1/2 cups bread flour
1/2 cup rye flour
1 tablespoon gluten flour
3 tablespoons brown sugar, packed
3/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon pepper
1/8 teaspoon ground cloves
1 teaspoon active dry yeast or 1 teaspoon bread machine yeast
1/2 cup dark raisin

Steps:

  • Add the ingredients to the machine according to the manufacturer's directions.
  • Select the basic white bread cycle.

This is a traditional Christmas bread, but I make it for any holiday we get together. -Deborah Petersen, Princeton, New Jersey

Number Of Ingredients 10

1 package (1/4 ounce) active dry yeast
1 cup warm water (110° to 115°)
1/2 cup sugar
1 egg
1/4 cup butter, softened
1/2 teaspoon salt
1 teaspoon ground cardamom
3-3/4 to 4 cups all-purpose flour
1/2 cup raisins
1/2 cup diced citron or mixed candied fruit

Steps:

  • In a bowl, dissolve yeast in warm water. Add sugar, egg, butter, salt, cardamom and 2 cups flour; mix well. Stir in raisins, citron and enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to greased top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down; divide in half. Shape each portion into a flattened ball. Place in two greased 9-in. round baking pans. Cover and let rise in a warm place until doubled, about 1 hour., Bake at 350° for 30-35 minutes or until golden brown. Remove from pans to cool on wire racks.

They are served with both savory and sweet dishes, or all by themselves. You can also put a powder sugar glaze on them after cooled.

2 1/2 cups milk, warmed
1/2 cup butter, melted
1 cup granulated sugar
2 tablespoons active dry yeast
1 teaspoon salt
2 teaspoons cardamom, ground
5 1/2 cups all-purpose flour
1/2 cup raisins (optional)
1 egg white, for glazing

Steps:

  • Mix the warm milk (about 100F), melted butter, sugar and yeast together in a large bowl. Let it stand for 10 mins unntil the yeast is foamy. Add the salt and cardemon. Add the flour 1 cup at a time, stirring to mix after each addition. Stir in the raisins if you are using them. The dough will be pretty sticky at this point.
  • Cover and let the dough rise in a warm place for about an hour, or until doubled in size.
  • Punch down the dough and turn it out onto a floured surface. Sprinkle top with flour and knead briefly (for just a couple of minutes) Make sure you flour hands a lot to be able to do the next step. Break off pieces of dough about the size of a large golf ball and roll in your hands to make them round and smooth.
  • Place the balls of dough onto a greased cookie sheet and cover. Let them rise for about 30-40 minutes.
  • Brush the tops with beaten egg white and bake in a preheated 350 F oven for 20 minutes, or until they are golden brown. Cool about 15 minutes before eating and then enjoy with butter, or chese and meat, or just plain!

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1-1/2 cups warm whole milk (110° to 115°)
1-1/2 cups sugar
1/2 cup butter, softened
3 large eggs, room temperature
2 teaspoons ground cardamom
1/2 teaspoon salt
9 to 10 cups all-purpose flour
Additional sugar

Steps:

  • In a bowl, dissolve yeast in warm water. Add warm milk, sugar, butter, 2 eggs, cardamom, salt and 6 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/4 hours., Punch dough down; cover and let rest for 10 minutes. Divide into fourths. Divide each portion into thirds; shape each into a 12-in. rope. Place three ropes on a greased baking sheet and braid; pinch ends to seal and tuck under. Repeat with remaining dough. Cover and let rise in a warm place until nearly doubled, about 45 minutes., Preheat oven to 375°. Beat remaining egg; brush over loaves. Sprinkle with sugar. Bake until golden brown, 20-25 minutes. Remove from pans to wire racks.

I developed this recipe after visiting my ancestral homeland of Ireland. It's a great way to get Guinness into your bread! Serve warm with butter and honey.

1 cup regular rolled oats, plus additional
2 cups whole wheat flour
½ cup brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
½ teaspoon salt
¼ cup melted butter
2 teaspoons vanilla extract
1 cup buttermilk
1 (12 fluid ounce) can or bottle Guinness® beer

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease an 8x8 inch baking pan.
  • Mix together the oats, flour, sugar, baking soda, baking powder, and salt in a bowl. In a separate large bowl, stir together the butter, vanilla, buttermilk, and Guinness® beer. Pour the flour mixture into the beer mixture, and gently stir until well blended. Pour batter into the prepared baking pan, and sprinkle with additional oats if desired.
  • Bake in preheated oven for 30 minutes, then turn the temperature down to 400 degrees F (200 degrees C), and bake for an additional 30 minutes. Turn the oven off, open the door, and allow to cool for 30 minutes in the oven before turning out onto a wire rack.
