I'd lost my family recipe for lemon squares and spent a lot of time trying new ones that would measure up. None did, but thankfully I recently found the recipe again. Best lemon squares out there.

2 cups all-purpose flour
1 cup cold butter
½ cup confectioners' sugar
2 cups white sugar
4 eggs
¼ cup all-purpose flour
¼ cup lemon juice, or more to taste
1 teaspoon baking powder
1 teaspoon lemon zest, or to taste
confectioners' sugar for dusting

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Process 2 cups flour, butter, and 1/2 cup confectioners' sugar in a food processor until mixture resembles coarse crumbs; press into the prepared baking dish.
  • Bake in the preheated oven until the edges of the crust are golden brown, 18 to 22 minutes. Cool crust to room temperature.
  • Beat white sugar, eggs, 1/4 cup flour, lemon juice, baking powder, and lemon zest together in a bowl using an electric mixer until light and fluffy; pour onto the cooled crust.
  • Bake in the oven until custard is set, 25 to 28 minutes. Cool lemon squares completely; dust the top with more confectioners' sugar.

It's tough to top a classic lemon bar, but we've done it! We kept the tender, buttery crust and bright filling of the original, and made a few improvements. For our luscious lemon layer, we employed a unique double-cooking method. Simmering first on the stovetop like lemon curd allows us to add butter, which balances the tart and sweet elements and adds a richer, smoother texture.

Nonstick cooking spray
1 3/4 cup all-purpose flour (see Cook's Note)
1/4 cup cornstarch
1/4 cup confectioners' sugar
1/2 teaspoon kosher salt
2 sticks (1 cup) cold unsalted butter, cut into small pieces
4 large eggs
2 large egg yolks
1 3/4 cup sugar
1/3 cup all-purpose flour
1/4 teaspoon kosher salt
1 cup fresh lemon juice (from 6 to 8 lemons)
1 teaspoon finely grated lemon zest
1 stick (8 tablespoons) cold unsalted butter, cut into small pieces
1 tablespoon confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking pan with foil, leaving an overhang on 2 sides; spray lightly with nonstick cooking spray. Set aside.
  • For the crust: Add the flour, cornstarch, confectioners' sugar and salt to the bowl of a food processor and pulse 10 times until combined. Add the cold butter and pulse until the mixture looks like coarse sand, about 30 times. (The dough will not come together in one mass.) Sprinkle the mixture evenly in the prepared pan and lightly pat it down. Bake, rotating the pan halfway through, until golden brown around the edges, 20 to 25 minutes.
  • For the filling: Combine the eggs, yolks, sugar, flour, salt and lemon juice in a medium saucepan. Whisk continuously over medium heat, occasionally scraping down the sides and edges of the pan with a rubber spatula, until simmering and thickened, 4 to 5 minutes. Remove from the heat and whisk in the lemon zest and butter until combined.
  • Lower the oven temperature to 300 degrees F. Pour the filling over the crust and bake until just set, 12 to 15 minutes.
  • Place on a wire rack to cool to room temperature, then refrigerate until cold, about 2 hours.
  • Use the foil overhang to lift the bars from the pan. Remove the foil and slice into squares. Dust with confectioners' sugar just before serving.

There are many lemon square recipes, but I think this is one of the best. I sometimes combine fresh lime and lemon juice to give the squares a different twist.

1 cup butter (preferably) or 1 cup margarine, at room temperature
1/2 cup icing sugar, plus
1 tablespoon icing sugar
2 1/3 cups flour
4 eggs
1 3/4 cups sugar
1/3 cup fresh lemon juice
1/2 teaspoon baking powder

Steps:

  • Preheat oven to 350.
  • In medium bowl, cream butter and 1/2 cup icing sugar.
  • Add 2 cups flour and stir with wooden spoon until well combined.
  • Pat evenly into a 13 by 9 inch baking pan. Bake for 20 minutes.
  • Combine eggs, sugar, remaining 1/3 cup flour, lemon juice and baking powder in blender container; cover and blend for 5 seconds. Scrape down sides of blender and blend another 5 seconds.
  • Pour over partially baked crust and bake another 25 minutes or until light brown.
  • Cool completely on wire rack.
  • Sprinkle with remaining icing sugar.
  • Cut into 32 squares.

  • CRUST: Blend as for pie crust.

  • Will be very brown.
  • While warm frost.

2 cups flour
2 sticks unsalted butter, cut into quarters
1/2 cup granulated sugar
1/4 teaspoon salt
1 stick unsalted butter
3/4 cup plus 1 tablespoon granulated sugar
1/2 cup freshly squeezed lemon juice
2 large eggs, lightly beaten
Zest of 1 lemon

Steps:

  • Preheat oven to 350 degrees F. In a food processor combine flour, sugar and salt. Add butter and pulse until mixture resembles coarse meal. Turn mixture out onto a 9 by 13-inch baking pan and press into an even layer, covering the pan. Bake in the middle of the oven for 20 to 25 minutes or until layer is light golden brown. While the crust is baking, in a large bowl over simmering water whisk the butter, 3/4 cup sugar and lemon juice until the mixture feels warm, sugar is completely melted and incorporated, and is lighter, about 5 minutes. Remove bowl from heat. Beat eggs with 1 tablespoon sugar until light and frothy. Temper hot lemon mixture into eggs then add eggs back into lemon, whisking constantly. Pour lemon mixture over hot crust, return pan to the oven and bake another 15 to 20 minutes until curd is set and crust is golden brown. Allow to cool completely on a rack. Cut into 2-inch squares.

Steps:

  • For the crust: Preheat the oven to 350 degrees F. In a medium saucepan, melt the butter. Mix the flour and confectioners' sugar in a bowl and add the melted butter, mixing until a dough forms. Press the mixture firmly into a 9- by 13- by 2-inch pan. Bake the crust for 25 minutes.
  • For the filling: While the crust is baking, with an electric mixer, combine the eggs, lemon juice and zest until smooth. Add the granulated sugar, flour, baking powder and salt, and beat until smooth. Pour the mixture over the baked crust. Bake for 20 minutes more.
  • Remove the pan from the oven and let it cool completely. Sprinkle the top with confectioners' sugar. Cut into squares and serve.

Crust:
1 1/2 sticks (6 ounces) unsalted butter, at room temperature, plus more for greasing
3 tablespoons cornstarch
1/3 cup granulated sugar
1/4 teaspoon fine salt
Filling:
1/2 cup sweetened condensed milk
1/2 cup granulated sugar
1/3 cup all-purpose flour
Pinch fine salt
2 large eggs
2 large egg yolks
3/4 cup plus 2 tablespoons freshly squeezed lemon juice (about 7 lemons)
1 tablespoon fresh orange juice
Confectioners' sugar, for dusting

Steps:

  • For the crust: Lightly brush a 9- by 13-inch baking pan with butter. Beat the butter and granulated sugar with an electric mixer in a large bowl until light and fluffy, about 4 minutes. Whisk the flour, cornstarch and salt together in a medium bowl. Slowly add the dry ingredients to the butter and mix just until combined. Evenly press the dough into the prepared pan. Cover and refrigerate at least 1 hour.
  • Preheat the oven to 325 degrees F. Pierce the dough all over with a fork. Bake until golden, about 30 minutes. Cool.

2 1/2 cups sifted flour
2 teaspoons baking powder
2 eggs
1/2 teaspoon almond extract
3 apples, peeled & sliced very thin
1/2 teaspoon allspice
1 cup confectioners' sugar
3 tablespoons hot water
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 400°F.
  • Cream the butter and sugar together.
  • Mix the flour and baking powder together. Add to butter mixture.
  • Beat together eggs and almond extract. Mix into dough.
  • In a greased and floured 9x13 pan, press down one half of the dough with your fingers. It will be sticky, so you might want to oil them first.
  • Mix the apples with the allspice (or you can substitute cinnamon).
  • Spread the apples over the dough in the pan.
  • Drop the other half of the dough over the apples and press dough down slightly. It doesn't matter if all the apples aren't covered.
  • Bake for about 35 minutes, or until lightly browned. Let cool.
  • Mix confectioner's sugar, water & vanilla to make a thin icing.
  • Drizzle icing over cooled cake. Cut into squares to serve.

1/2 cup all-purpose flour
1/4 cup brown sugar, packed

2 tablespoons all-purpose flour

Steps:

I got this recipe originally from an Eagle Brand Dessert Cookbook that was published many years ago. This can be chilled or frozen. If you like lemon, you should give this a try.

1 1/4 cups crushed graham crackers (can use pre-made crumbs)
1/4 cup sugar
1/4 cup margarine, melted (I prefer butter)
3 egg yolks
1 (14 ounce) can sweetened condensed milk
1/2 cup ReaLemon juice, from concentrate
whipped topping or whipped cream

Steps:

  • Preheat oven to 350.
  • Combine crumbs, sugar and margarine; press firmly on bottom of 8 inch square pan.
  • I use the aluminum foil pans to freeze inches In small bowl combine egg yolks, sweetened condensed milk and lemon juice and beat well.
  • Pour over crumbs into pan and bake 8 minutes.
  • Cool completely.
  • Top with whipped topping and freeze 4 hours or until firm.
  • Let stand 10 minutes before serving.
  • Garnish with lemon score.
  • Keep leftovers in freezer.
