NORWEGIAN APPLE CAKE
Though quite straightforward, this recipe for Norwegian apple cake from Nevada Berg's cookbook "North Wild Kitchen" did raise a question. A whole tablespoon of cinnamon? Really? But it was not at all excessive, giving the cake autumnal fragrance and flavor along with a nicely burnished surface. What this recipe also offers is great flexibility. Though it calls for an 8-inch springform, it also worked in a 9-inch and a 10-inch, the latter providing a little less cake in proportion to topping (though no change in cooking time). Larger pans require more fruit. And on that score, in place of apples the recipe works well with fresh figs and peaches. Small purple plums, pears, apricots and even bananas are some other options to consider.

- Peel and core apples; slice 1/2-inch thick. Set aside. Use some of the butter to grease an 8-inch springform cake pan. Dust with a little flour. Heat oven to 350 degrees.
- Sift or whisk flour with baking powder. Set aside. In the bowl of a standing mixer, beat granulated sugar with 3/4 cup (1 1/2 sticks) of the butter for several minutes, until light and fluffy. Beat in eggs, one at a time, then beat mixture about 3 minutes until creamy. Gradually add flour mixture in three batches, alternating with milk, mixing well after each addition. Transfer batter to pan.
- Arrange the apple slices on top of batter in tight overlapping concentric circles, gently pressing them in a bit. Scatter almonds on top. Dust with brown sugar and cinnamon. Dot with remaining butter. Place in the oven and bake about 1 hour, until a cake tester comes out clean, the top has browned and feels fairly firm to the touch.
- Allow to cool in the pan until just warm. Remove sides of pan and serve with whipped cream or ice cream. If cake has cooled completely it can be warmed before serving.

Steps:
- Sprinkle 1 tbs flour over raisins in a bowl.
- Toss to coat.
- Sift remaining flour, baking soda, cloves and cinnamon.
- Beat eggs and sugar in a bowl until fluffy.
- Beat in sour cream and honey.
- Add flour mixture and minx until blended.
- Stir in raisins and orange rind.
- Pour into greased an floured 10inch angel food cake pan.
- Bake at 325 for 75 minutes until cake pulls away from sides and spring back when touched lightly.
- Cool in pan on rack for 5 minutes.
- Run knife around inner and outer edged of cake.
- Turn onto wire rack to cool completely.
- Store covered at room temperature overnight or for at least 8 hours before cutting.
- Sprinkle top with powdered sugar and serve.
- For a decorative touch place a large doily over top of cake then sprinkle the powdered sugar over that and then remove for a lacy effect.

LATVIAN HONEY CAKE
It's one of the most popular Latvian cakes - simple and delicious! It requires a little work but it's definitely worth it! I've made it several times and my preparation skills are improving with every time. Don't get scared away because of the sour cream, it matches perfectly with the sweet honey taste. The cake tastes the best after it's kept overnight in the refrigerator, the flavors will blend together nicely. I use a 9x13 inch baking pan, but another similar size will do.

- Preheat an oven to 350 degrees F (175 degrees C).
- Mix together eggs, honey, flour, and baking soda in a large bowl. Spoon 3 to 4 tablespoons of batter onto 5 9x13-inch sheets of parchment paper. Spread the mixture as thin as possible using a wide spatula. There is enough batter for 5 thin layers.
- Place one sheet of batter onto a baking pan and bake in the preheated oven until golden brown, about 2 to 3 minutes. Remove the baked cake layer from the baking sheet and prick with a fork to enhance filling absorbency. Repeat with the remaining 4 cake layers.
- Stir together the sour cream and sugar in a small bowl. Place one cake layer in 9x13-inch baking dish with the parchment paper side up. Carefully remove the parchment paper from the cake layer. Spread 1/5th of the sour cream mixture on the cake layer and then sprinkle 1/5th of the walnuts on the layer. Repeat the process with the remaining 4 layers. Cover and refrigerate overnight. Trim off any ragged edges before serving.

SWEDISH HONEY CAKE
I found lots of Honey Cake recipes on 'zaar, but this one was a bit different with the OJ and the Cardamom.. The ingredient list looks like, but really just a lot of yummy spices. I found this recipe online, and it didn't state what size pan to use, so I would just use your best judgement based on the batter produced :)

- Sift the following 7 ingredients : flour, baking soda, allspice, cinnamon, cardamom, ginger and baking powder; add to the bowl with the liquid ingredients. Mix well.
